These are some base notes after complete notes were lost to cyberspace...
Served from a 750ml bottle as best I can tell bottled in 2003 with a best by date of 2013.
Light froth, no head retention and some lacing. A haze perfectly suspended in place - by perfect, I mean to say that there is no movement, no currents, it's just there.
The smell is fresh and intense. Grapefruit, spring--floral hops.
Little alchohol present until it warms your core. Grapefruit baked with sugar. Hop/grapefruit prevent me from picking up much else, but it's good none-the-less.
Very dry with hardly any carbonation present, but with a carbonation-like bite.
Smooth with a spicy aftertaste.
If grapefruit could be a malt, it would have made this beer.

Very slightly hazed light golden yellow in color with a relatively small near-white head that leaves the glass dotted with lace. The foaming head wasn't nearly as large or quickly building as I've come to expect with most high quality Belgian tripels.
The aroma is a soft, delicate combination of banana, a bit of black pepper, bright hop character, and distinctive, appropriate Belgian yeast.
Delicate though complete flavor of banana, Belgian yeast, pepper, bright hops, earth, and a touch of dried grass.
The signature aspect of this beer is its mouthfeel. I don't remember drinking another tripel with such a nice one. It's smooth, soft, ethereal, airy, disappearing, though coating. Velvety. I can't find enough superlatives to go on about the way this beer feels in the mouth.
A delightful tripel with perhaps the best mouthfeel in the style.
