Ornithology is our grisette aged in ginavit barrels from New Columbia Distillers. This beer spent a year developing and coalescing within the barrels with a melange of lactobacillus and brettanomyces. Coming in at 3.9% with flavors of Asian pear, barnyard funk, and Nordic spice, this is not a beer to be missed.

Hazy golden straw with a foamy white head. Pillowy lacing. Aromas of lemongrass, black pepper, hay, and white bread. Taste is very similar with a lemony tartness and subtle funk in addition to the above. Light and dry. Wonderful beer.

Poured from a growler to a snifter.
L: pours extremely pale straw with stellar clarity. Bright white head rises and deflates quickly. Exciting carbonation.
S: smells of white peach, pear, and under ripe plumb. Hint of funk with a light citrus character. Pear stands out more as it warms.
T: green apple skin and pear mostly hint of cellar must. Fruity up front and dry and crisp on the finish.
F: champagne level of carbonation , light body and clean dryness.
O: a vibrant and drinkable sour with layers of complexity that begs to be sipped repeatedly. An all around amazing beer.
