Open-fermentation with house mixed culture of brettanomyces and lactobacillus. Aged in solera style in oloroso sherry casks.

Looks great, smells even better. And then...it tastes like a barleywine. I asked the bartender what kind of beer this is supposed to be (the beer list says "sherry ask vin de cereale," whatever that is) and he said basically an imperial oud bruin. Sounds more of less correct, but it drinks like a barleywine more than anything else. I got much more of the leather, oak, and sherry flavors than the brett and lacto.

Chestnut brown body with a quarter inch of beige cap. Aromas of dark fruits, malt, Belgian yeast. Bready with a hint of chocolate. Chocolate covered raisin, plums, brett, red wine, port. Mild sweetness. Lactic with moderate sourness. Delicious.
