One man's trash is another man's treasure. We can't wait for tiny yellow flowers to consume the farm. Our first true harvest of the year, the BEEs agree there is nothing like their bitter sweet nectar. Thus, it only makes sense for honey to reunite with its origin in this subtle summer saison. A perfect liaison, indeed.

Thanks, @mikexw. Pours golden with a fluffy white head. Large carbonation bubbles. Nice clean saison flavors. Subtle sweetness underneath. Slightly bitter. Dry finish.

Hazy apricot with a minimal white film, this one's wildly funky with hay, grass, spicy seeds, peanut and a brie cheese character, all via a crisp, bubbly body that finishes perfectly semi-dry with hints of lemon-lime.

Notes via stream of consciousness: I've always wanted to brew a dandelion beer but have just never had the chance. I was told that all the dandelions would do was to add some color, which is fine, and as I was pouring this it did look a dandelion yellow. Interesting. It didn't bring up much head, which is common for sour beers, and there's nothing left now beyond an average collar. The beer's a little hazy as well, which I also expected, and it looks like there is some minor lacing left behind. The aroma suggests tartness, has a bit of apple and pear-like fruitiness, some wet wood from the oak, and a floral and grassy note that I'm led to believe is coming from the dandelions. It's interesting. The flavor follows and it's pretty tart, there's a lot of acidity there, but also some residual malt. The dandelion found in the aroma is present as well, but different. The aroma actually smells like what you'd find while you're pulling weeds but in the flavor it's more earthy. There's a little bit of mineral character there, not too much, and certainly not much bitterness as hardly any is needed but there's some. It finishes dry, earthy, oaky, grassy, and even slightly spicy. In the mouth it's light bodied and gently crisp. I could certainly use a little more bite but I'm guessing they don't want to accentuate the acidic bite with any more carbonic bite. Overall I find it quite interesting, and enjoyable. It certainly earns some points for originality; and I'm pleased to note that the dandelions do add to the flavor and aroma, and not just the color. Worth trying.

Sour and sweet with honey notes. Assuming the dandelions give the herbaceous bitterness.
