ls & Hills is a collaboration between Fyne Ales and Brouwerij De Molen from The Netherlands. For this beer we pushed our new brew kit as far as we could on ABV and IBU. The result is a 9.5% imperial stout that is a modern take on a classic style, with bold new world hops such as Sorachi Ace and Calypso adding a unique dimension to the rich malty body of the beer.

Poured from a bottle. Near-black body with a small khaki head. Smells like dark, ripe fruit. Flavor has plenty of dark fruit, dark toasted bread, and a bit of cocoa. A bit of floral hops. fairly light-bodied, finishes dry, light carbonation.

L: Poured from a bottle to a snifter glass. Had a dark, mahogany brown color and a thick, opaque consistency. There was a thin, tan-colored, foamy head that quickly dissipated. Not a whole lot of lacing here.
S: A solid aroma of coffee, chocolate, dark fruit, toffee, hops, and malt.
T: Tasted of a good amount of dark fruit (plums, raisins), a little bit of toffee (quite sweet), light hops (mostly in the finish), a good shot of malt (present throughout), a decent amount of coffee (subtle), and some dark chocolate (always welcome). An interesting and well-crafted flavor. It's not as boozy as some RIS flavors, but rather it has a nice subtlety.
F: A fair amount of carbonation with a smooth finish. Medium-bodied.
O: A well made Russian Imperial Stout. Drinkable.

Appearance: The body is black and it has a very large brown body with very good retention.
Aroma: There is an aroma of pine needles, burnt caramel, and sugar.
Taste: Burnt caramel, toffee, toast, pine, charcoal, wood, and burnt marshmallow all slam into the palate at once. By the time a single flavor is focused on, another one comes in to replace it.
Mouthfeel: The beer is exceptionally smooth and creamy. Perfect carbonation. There is a light bitterness to the beer. It is very enjoyable to drink.
Overall: The beer is unearthly enjoyable. It is decadent and simply oozing with flavor. It doesn't taste like a s'mores but the mixture of sweetness, toastiness, and earthiness of the beer really delivers an experience that approximates eating a s'mores at a campfire. I highly recommend this beer and I would love to drink it again.

11.2 oz bottle. Had a few of these--one of them in a tasting with other stouts, and although it was solid, there really wasn't anything that stood out about it.

Smells strong, loaded with roasted malt, coffee, dark chocolate, anise is there but mild. Dark fruit rounds it out.
Roasted malt and dark fruit dominate the taste. Coffee sneaks up on me and becomes a major player. Bits of toffee and a mild sweetness that I possibly attribute to milk chocolate? Not sure on that.
Mouthfeel sure feels.. full. Kinda creamy, alcohol isn't hidden well; in the taste and after the swallow.
All in all, it's a very good sipper.

Poured into a Fremont small snifter. Pours pitch black with a thin khaki head that dissipates to large patches and a healthy ring around the glass with wispy lacing. Aroma of dark toasted malt, molasses, coffee and hints of cocoa; nice. Flavor is dark toasted malt with light char, aged hops, coffee, licorice and bitter chocolate. Finishes with coffee and aged hop bitterness with light cocoa. Medium bodied with light creaminess. A nice mixture of chocolate and coffee flavors in the malt in this one, it could almost pass for a coffee stout. It's still within its best by period, but there is clear tiredness to the hops and a little thinning of the coffee and cocoa flavors. Although it left me wishing I had tried this one fresh, it has still held up well and is quite enjoyable. The ABV is well covered. My first beer from this brewery and it leaves me wanting to try more.

Pours black with two fingers of caramel colored head. Head foams up quite nice for a imperial stout with a little age on it. Fantastic start. Lacing is dotted here and there with a good foamy ring left behind. Rich malty aroma is bolstered by a little sprinkling of peat, roasted malts, and caramel notes. Flavor profile is built off of a roasted and toasted malt skeleton. Additional notes of peat, caramel, toffee, pine hops with a little bit of resin hop and smokiness to finish it up. Resin hops linger for a while with roasted malts. Mouth feel is smooth with a very filling and thick consistency. There is a little bit of graininess as the beer warms. Overall, a sublime imperial stout. The peat notes are a little different, but well done and far from over powering.
Served in a 12oz snifter.

A: The beer is very close to being jet black in color - only traces of dark red are visible near the bottom of the glass when it is held up to a bright light. It poured with a quarter finger high tan head that has very good retention properties and never completely faded away.
S: Light to moderate aromas of licorice are present in the nose.
T: The taste is a stronger version of the smell, having lots of flavors of black licorice along with hints of roasted malts.
M: It feels full-bodied on the palate and has a moderate amount of carbonation. There is a touch of warming from the alcohol in the finish.
O: This is a nice Russian Imperial Stout if you like aromas and flavors of licorice. Despite its strength, the beer is rather drinkable because it did a good job masking the alcohol from the taste.
