It pours a hazy and frantically carbonated deep amber. Three fingers of persistent pinkish tan head fill the upper stories. Commas of lacing stop and go along the inside of the glass.
In the aroma, sweet caramel malt and light molasses prop up a surprisingly understated citrus hop presence that's further trod upon by clove, banana, and crisp apple esters, but in an interesting fashion.
Upon sipping, The malt is toasted and softly sweet with caramel and a hint of berries. The hops press to impress with grapefruit and pine drizzled with lemon. Esters assert with curls of clove, green apple, and a mellow spice melange. Residual grain returns with a twist of molasses. A finale of dry hop bitterness drives a crisp, lingering finish. The Brett subdues the Devil, delivering a funky new identity.
Medium bodied, the smooth grain creaminess, spicy hops, and crisp esters caress and glow nicely.
It seems the ballsy yeast works a transformation on the Hop Devil, creating a new and brassy character. It's an intriguing take on a Belgian IPA, but with more oily muscle, and it's clean, fun, and quite drinkable. There's nothing wrong with what it was, and nothing wrong with what it's become here.
