Assignment by John Vanloo of San Francisco-based Waterloo Beverages LLC to develop & manufacture the Westoek Ale – 6% ABV at & by the Deca Brewery. As this was a very complex recipe to deal with, Deca asked Urbain Coutteau, brew master at Struise to collaborate on this project. 4 grain Blond dry triple ale married to a soft English bitter. Urbain’s Magnum hops for bittering, Styrian Goldings for different aroma hop gifts in the boil, late boil & flame out, Hallertauer Mittelfrueh for dry hopping.

Bottled 2011, enjoyed on 04/01/2017. Unfortunately, I have a feeling this was sitting on the shelf at room temperature for five years prior to my purchase, which did it no favors.

My sample was 1.5 years out of date! This beer has a thin, cream-colored head, a murky (which gets murkier, once the bottom caked sediment is swished loose and poured in), tan appearance, some tiny, ascending bubbles, and minimal lacing left behind. The aroma is of sharp, somewhat lemony, spiced holiday bread, dates, raisin, and dough. Taste is of all that, with nougat, caramel candy, and oldness. There is also a noticeable tea-like quality. Mouthfeel is low medium, and Westhoek X finished a bit on the dry side. It's an odd tripel, but it's also hard to put down.

Poured from a 330 into a tulip. Huge white head over a hazy orange brew. Some spicy, mildly yeasty, muted fruits in the aroma. Seemed to be orchard and citrus together. There was a sense that this was going to have a sour profile in the aroma. However, this did not come to pass in the taste (which is fine as I was expecting a spicy tripel, not a flemish sour). The spicy notes and grassy-less-than-straw came first. Yeasty orchard fruit in the middle, with some subtle hop bitter in the finish. Dry and bubbly. A non-typical tripel, but worth a drink.

(LOT 08/07/2011 - best before 4/2014 - uh oh!, ohhh boy...)

A: started foaming in the bottle neck after I popped the cap, prior to pouring... huge rise of foam on the pour, receded to rough sud in a couple minutes... dark amber (copper) colored liquid, mild-moderate haze... keeps a thin frothy cap, but practically no lace

S: sort of like musty, lightly-spiced apple cider - started smelling it immediately after cap came off... mild sort of lemony wood polish overtone... yeah, it's got age on it - signs of oxidized malts

T: vaguely woody and glossy-leaf greenness up front... like a malty champagne in the middle... delicate (wild) acidic tingle and a hint of nutty, sweetish bread crust in the aftertaste... nothing foul here, it's just dead or dying

M: not quite as dried out and thin/sharp as I had expected... still, pretty dry - could be fine if the flavors were more alive

O: eh... this bottle has likely not been cared for exceedingly well... by no means terrible, but surely past its prime... this is not a 6% tripel, btw - most comparable to a slightly stronger Palm
