Poured gently at 49°F from a 500ml bottle (blend 2 - 07Dec15) into a snifter. Allowed to warm up to 55°F before reviewing. Consumed on 05Jun16.
LOOK: A trace of an off-white foam head is formed after pouring. Dark brown in color, almost black. There are no visible rising bubbles. Lacing is thin and nearly nonexistent. This is quite a physically unattractive beer.
SMELL: Strong aromas of sweet coffee and aged gouda cheese interestingly intertwine with mild oak, honey, plums, molasses, and raisins. Subtle sour green apple and spicy red wine aromas bring just the right amount of tartness and funkiness to the brew.
TASTE: Strong sweet coffee and mild spicy red wine flavors initially explode on to the palate. Mild flavors of plums, raisins, and aged gouda flow in right after to create a balancing sweet funkiness as coffee flavors grow slightly stronger. Mild oak flavors enter next as gouda flavors grow significantly stronger. The sweetness is amplified as mild molasses and subtle honey flavors flow in. A mild earthy yeast and subtle sour green apple finish off this symphony of flavor as all previous flavors maintain.
FEEL: Full-bodied with hints of carbonation. Goes down ridiculously smooth and creamy while also clinging to the back of the throat like syrup. Finishes with a strong, yet somewhat pleasant dryness. A strong and welcoming alcoholic warmth reminds me that I'm drinking a 12% alcoholic brew.
NOTE: This not only was one of the most complex brews that I have ever had, but it was also one of the best. Those funky, aged gouda flavors are what set it off for me. I'm not sure what OEC did to create these flavors, but it made the beer dank, funky, and scrumptious.

On the mead game, this is spot on.

A wonderful sweet brew. Lots of sweet honey, dessert wine/port, red grape, a slight coffee bitterness, a huge oak tannic structure of red wine, dry on the back end. The sweetness really hides the alcohol.

A complex winner from OEC.
