Poured into an E&J Cask & Cream glass on 6/5/11

Pours a medium brown, settling dark though a glean or ruby can be seen. One thumb cap of tan foam thins to an even layer. A few trails and clumps of lace.
Roasted, dry aroma all the way. Bitter, unsweetened cocoa borders on burnt at times. Light earthiness with a hint of roasted coffee. Simple, fully effective aromas throughout.
One sip tells me this beer plans to take the aforementioned simple/effective approach throughout. I can work with that. Doesn't seem quite as roasty as the nose but there's a good bit regardless. Bittersweet dark chocolate and ground coffee beans. Quite tasty and plenty dry.
Unencumbered, medium-full feel. Carbonation started off higher than I prefer but it tamed significantly without having to swirl it out. Surprisingly clean finish for having roasted residuals lingering.
Cadillac Mountain exhibits choice simplicity. Well-crafted and flavorful example of an American Stout. An easy recommendation.
