Looks like it was bottled 01/2011. But it's smudged.
A: pours a dark Graham brown with excellent clarity. Single finger caramel head falls over a few minutes to a sheet of the same. No lace.
S: Green apple, caramel, allspice, brown sugar. Banana yeast. Sweet smells.
T: bitter but sweet and buttery. Cool eggy tones and some alcohol punch. Nice flavors. Some wheat sweetness.
M: thin with moderate carb. Dry finish.
O: okay. Above average.

I am a bit surprised to find that this beer only has like 18 reviews so far. I picked this beer up at the Downtown Spec's in Houston. Let's see what only 18 other people know about.
Appearance: Pours a very dark color that looks like it would probably be a dark garnet when held to the light. There was a small cap of light tan foam on top that was about 1/4" at its height, and fell to a solid layer across the top that stay there. There is some solid lacing left on the glass after drinking.
Aroma: The aroma is really nice, though it is mixed enough to make it hard to pin down. There is a mild wheat and sweetness with a subtle chocolate. I am anxious for this beer to warm up so that I can get more aroma from it.
Taste: The flavor is really balanced toward the sweet with lots of body and chocolate. This beer has a lot going on. Especially with the chocolate notes make this beer come across like some kind of exotic candy or something. The alcohol is well masked and is only come across as warming about half the bottle down. The body is medium with plenty of carbonation so that it goes down smooth and full.
Opinion: I have been really impressed with this beer. Between this one and Dogfish's new one Namaste, I have been really happy with where the witte style is going. I am not a big fan of spicy beers, and the newer versions are depending more on well blended malt and the other characteristics of the beer instead of dumping a bunch of spice and orange peels in there. This is a good beer, and I would definitely recommend it.

Appearance: Black glass holds almost a finger of dark tan tight head that drops to a thick collar and laces a bit.
Smell: Wheat, dark malt extract, and a mild peppery note. Smells a lot like a German Weizenbock with the black bread aroma.
Taste: Roasted grain is on the edge of burnt, the black bread taste is pretty strong, alcohol comes through a bit. Something just keeps saying "German" to me, having a hard time describing it.
Mouthfeel: Prickly carbonation is almost painful to hold, soaks the chops a bit and leaves a coat.
Overall: Saw this was listed as a Witbier, and am disappointed that this has almost nothing Wit about it. Nothing seriously wrong with the beer beyond a misleading label.

Pours a nice dark amber, with a good but somewhat rocky head.
Smells of alcohol to me, just really bites the nose.
Taste is interesting, has a good amount of almost mocha and raisins. The alcohol bite is there in the taste too... not sure if maybe I got a bad bottle? Either way it tastes okay.
I probably would not buy this again, but it was enjoyable.

750ml corked and caged, poured into a chalice. It's (no surprise here) noire with a thin tan head that quickly leaves the beer looking like a stout in the wrong glass. Smells of cocoa, raisins, and crusty bread. The taste is coffee, bread, and a hint of cinnamon and nutmeg. There is a vague wheat-ness (it's close enough to a word) about the mouthfeel, which is soft and substantial without being heavy. Drinkability is fantastic for a dark beer like this. The flavor is actually very mellow, not too challenging but not too roasted either. I have no idea what this beer is besides good.

750mL bottle to wine glass, caged synthetic cork reads 'WN0109' after uncorking. $17. Indicated on the bottle as an Amber Wheat Ale, Special Reserve from the Brewmaster's Collection.
A: Witte Noire pours with a 1 and a half finger, medium brown creamy head that is fairly fast to diminish. Lasting film. The body is a very dark shade of amber-brown with transparency only along the edges. Lightly particulate. Good lacing initially, but stickiness is lacking, resulting in a glass scantily clad with erratic strings of lace.
S: Malt head, featuring aromas of grains (wheat) plus light chocolate. Between toasted and roasted. There is a piney/woodsy scent that nearly goes by unnoticed. Pleasant yeast aromas start with leather and ease into dough. Refined nose.
T: Light dark fruit flavors of plum and cherry that are more than likely derived from yeast esters. Maybe a hint of strawberry. At just 7.5% ABV, the alcohol is perhaps a touch too noticeable, which starts at the belly and works its way up.
M: The mouthfeel extends the flavor duration. The wheat component of the grain bill has a profound impact on the mouthfeel. The body is extra full, creamy, and extremely smooth and supple. Effervesence is gentle yet ample enough not to be disappointing, even though I was looking for more crispness at the end, not the astringent finish I experienced.
D: Overall, a very quality brew. But what was intriguing to me at first, ultimately became tiresome towards the end of the bottle. Perfect to share casually among friends.

750 mL bottle without a freshness date. Pours an opaque brown color with a frothy tan foam. Retention is average, but leaves sheets of lace on the glass while descending.
Nose is fruity with a zesty aspect that is reminiscent of lemon peel or maybe grains of paradise. Dark malts smell of cocoa powder and even get a little nutty. Interesting...and smells pretty good.
Light and airy on the palate with lots of roast and chocolate malts. Yeast provides plenty of fruity esters and some bread dough. Hops are plenty notable, especially for a wheat beer...adds another layer of flavor. Wheat tang softens the mouthfeel, but it comes across as a little thin. ABV is well hidden, never would have guessed 7.5%. A lighter brew than one would think, but I am ok with that in this instance. Kinda like an amped up weizenbock with plentiful spicing.

Nose is softly zesty wheaty with a citric flair, smells powdery dry. Smells pretty good.
Pours translucent walnut brown with yellow highlights and a massive head. Looks good.
Deep rich malt, bright sour/tartness and citric fruit, spicy wheatiness and mild spicy alcohol. Soft nutty mouthcoating. Mild sweetness up front with moderate dryness in finish. Tastes good. Feels good. Pretty good drinkability.
Malty and rich, delicately wheaty, pleasantly spicy.

The beer pours a hazy brown-red color with a white head. The aroma is caramel and dark fruit. For the flavor I get some caramel, toffee, chocolate, dark fruit, wheat and alcohol. Medium mouthfeel and medium carbonation.

smell is of malt, some wheat, a touch of caramel, a little cocoa, and a little dark fruit.

A - Murky amber and brown body with an off white head which is fluffy with poor retention.
S - Hugely Aromatic with dark fruits, especially grape. Rich malts, no hops.
T - Just like it smells, dark fruits like grapes and plum. Seems like a Dubbel but not as spicy but rather clean. Confusing.
M/D - Very average body, easy to drink but kind of one dimensional for me.

Poured from 750 mL bottle into shaker pint glass.
A: Pours a very dark brownish-red (more red with backlighting) with 1-2 inch bubbly darker tan head.
S: Carbonated caramel malt and soft wheat at the forefront.
T: Soft melon (must be the yeast The Prof uses since I find this note in several of his beers), caramel, light roast coffee, and in the background I find the wheat.
M: Light-medium body. Mild carbonated fizz with a creamy feel. Briefly lingers on the palate.
D: Certainly an interested brew and not your typical wit...pretty sure I haven't had an imperial amber wheat ale before. A solid beer with good drinkability. Not sure I'd go too far out of my way to seek it out though.

S - Toasted wheat bread, dark fruits, spice and yeasty notes.
T - Toasted wheat bread mixed with other roasted malts, some clove spice, belgian candy sugar and yeast.
M - On the lighter side and creamy with a good amount of carbonation.
D - Missing some of the spices of a traditional wit and I am not sure those would go very well with the roast flavors but otherwise an interesting beer.

corked/caged 750ml bottle
Pours a dark murky brown color, with a small head. Big nose of burnt grain, charred wheat, spice, dark fruit notes and a unique yeast character. Very roasty and lighter in body than expected, well hidden ABV and very drinkable, another unique creation from Dirk at De Proef. Definitely more like a stout than a wit or even double wit. A must try for fans of something different.

According to the bottle: "Imperial Amber Wheat Ale."
Looks more like an RIS than like a Wit. Taste is the middle between the two, with the heavy, roasted malts driving the spice to the background, but the spices are still there. Unlike an RIS, this seems like it would be wonderful with a nice garlicky Caesar salad. Lots of beers, especially thicker beers, are described as "creamy," but with all the wheat, this beer has a texture very much like slightly frothed cream; going down it is much easier, though. I paid 11$ for a 750ml bottle of this, I'm not sure how soon I'll be searching for another bottle. The RIS roast flavors and the heavy body make this a fairly slow drinker, but it was actually much easier drinking than a real RIS.
It's hard to review this "to type," since this seems like it might be the only beer of its type. It was good, though. Clearly made for a goal, not for a gimmick.
