Brian O’Reilly of Sly Fox Brewing Company joins Dirk Naudts to create the fifth brew in the De Proef Brewmaster’s Collaboration series. This year’s collaboration celebrates the great brewing cultures of both Philadelphia and Gent.

Broederlijke Liefde (Brotherly Love) is a slightly higher gravity interpretation of the saison style. It is fermented with two yeasts – a classic saison yeast as well as brettanomyces from an original gravity of 1066 (16.5 plato). These yeasts yield a dry and slightly spicy ale with a strong hint of farmhouse character that will continue to develop with age. The use of Target and Styrian Golding hops at 37 IBUs add floral aromatics and a balancing bitterness.

750mL corked and caged bottle, no date from Best Damn Beer Shop for $16.49. Pretty clear medium light golden with a one finger white head, fair retention at best. Big fruity brett notes in the nose--grapefruit and pineapple with some leather--there is some spicy white pepper and biscuity malts behind and floral hops in the form of rose petals. Flavor follows suit, florals a little stronger and adding some yeasty pear/apple notes, as well as pulling back a bit on the leathery funk. Still has some white pepper spice, following through to a dry finish, alcohol warming the throat. Bitterness peaked at a 4. Medium full body with light prickly carbonation. Started out great, and then kinda sputtered to mediocre, and then I realized I paid $16.49 + tax. Glad I got to try it, I suppose. 8-4-7-3-14--3.6

The beer pours a golden yellow color with a white head. The aroma has a lot of brett notes, as well as some dry citrus notes - mainly orange and lemons. The flavor is a little more complex. There is a lot of brett in the flavor, which comes across as leather and a bit of funk. There is also a good bit of juicy orange and lemon notes, as well as some biscuit malt. The beer is not sour, but the funk and leather notes definitely come through strongly. The alcohol is definitely present, but it is not overpowering. Medium mouthfeel and medium carbonation.

From tasting notes. 750 ml bottle poured into a tulip glass.
A: Hazy gold under a stiff meringue like off white foam collar. Produces thick lace.
S: Sour, pepper, spicy, almost a little pumpkin, touch clove, coriander, pumpkin spices – maybe a little nutmeg on the nose with a hint of barnyard and wet horse blanket.
T: Spicy, over ripe fruit, peach, biscuit malt, slightly sweet up front, drying out on the finish with a light earthy hop accent.
M: Creamy above average carbonation gives the beer a moussey texture. Medium body.
O: Texture, nose and palate offer a definite Brett character in a well made saison.

Poured into a St. bernardus chalice golden yellow, second glass hazy, with a one finger white head. No retention or lacing. The scent is obviously Brett, brett, brett. The taste had the punch of sour brett that warmed into the farmhouse spices with lemon mixed in all the way. Mouthfeel was highly carbonated and thin bodied.

Pour a hazy golden-copper color with a white head that leaves decent lacing.

Smells of light malts with good amounts of funk and slight hints of pears and green apples. Also present are mild amounts of grassy hops and breadiness.

Tastes similar to how it smells, though not as complex. Light malts up front are joined quickly by bready flavors that thicken things up. Midway through slight funk comes into play before being pushed aside by soft pear flavors that carry through to a crisp ending. Mouthfeel is very good, with grainy carbonation.

Overall I thought this was a tasty beer but there wasn’t enough going on to make it anything more than that. I bet this will get better with time, it’s likely worth sitting on a bottle.

A- This beer pours a yellowish-orange body with a very slight hazy to it. Each additional pour grows hazier. There is a gentle carbonation supporting a cobweb thick bubble mass of snow white head. A lovely Belgian lace forms after each sip.

S- The full saison yeasty character has fresh dandelion flowers and floral hops blending with a wet stones and fresh rain aroma in the finish.

T- The classic fruity sasion yeasty esters have some bright herbal pungent hops to follow with a nice cheese rind brett character grown in the dry finish. There is a nice pungent dandelion flowers and fresh cut alfalfa taste that lingers into a great brett grapefruit pith aftertaste.

M- The medium-light mouthfeel has a nice spicy fizz in the finish that really enhances the flavors in the finish.

O- This beer has a full pungent hops blended with great saison yeast character and nice aged brett flavors. This reminds me of summer in a glass. It is a beer you could just sniff and sniff and the flavor is even more delicious.

This beauty is a medium yellow with slightly amber hues in in its depths. Everything about the white head is as close to perfect as can be; starting off at 2-3 fingers but thick with no give, it retains itself the entire way. When it recedes, the thick, impenetrable foam that remains is itself one finger tall and never less. This crown drops lacing that clings to the glass like I've rarely seen before.
The nose is interesting, though distinctly Belgian as I pick up the light bubble gum/banana immediately, but there's also just a touch of funk. There's a gentle white flesh fruits aspect as well and a bit of peppery spice. Hops are gentle, adding a light grassy bitterness at a very low level. I do just get the slightest taint of something almost plastic.
The same is all in the flavor, and the spiciness comes in a bit more strongly. Hops also make a statement, coming in on the back of the tongue through the middle into the finish. This is a very nice beer, and the fact that the brett is so gently used simply lets all of the depth and complexity come out that much better. The Belgian character is never lost, the funk is here, and it's simply a great beer all around. Alcohol does kick if you're not paying attention. The only off flavor is the ghost of that same plastic-like note that makes the aroma good instead of great; it similarly affects the taste, particularly going into the finish.
There's a nice, creamy start to this beer with a lightly crisp edge from a moderate carbonation that never fades. The body is medium and a bit fuller than expected and it really goes silky.
This is a great beer and the use of brettanomyces makes it all the more interesting. I have to thank Matt at the Beer and Wine Cave in Toledo for recommending it.

On tap at Armsby Abbey in Worcester, MA.

A - Yellow/orange body with a nice white head. Strangely clear body for a saison.

S - Belgian yeast and some breadiness. It has a bit of a spicy aroma as well. If it weren't for the funk, I would say it smelled like a Belgian pale ale.

T - A hint of hops up front and some grassy flavors. Finishes with a spicy kick. Interesting, but still a lot like a pale ale. I even get a little bready wheat and malt.

M - Wow it's a hefty saison. I didn't think it was light and refreshing at all. Medium bodied, which I think is a lot for a saison.

O - Not what I was expecting at all. I maintain that it blurs the line between saison and pale ale.

On draft, served in a footed tulip glass.

Bright orange gold, soapy and sticky foam that leaves a good deal of lacing around the edges. Dimpled, pitted surface that has a meringue sheen to it. Looks the part of a bretty Belgian saison.

Dry brett yeast aromas of leather, wet hay and horsehair, also some dried pineapple sweetness.

Flavors are similarly dry, horsey, vaguely leathery and dry. Fruity elements offset the dry funk of the initial smell, dry saltine cracker and mellow apricot and pineapple from the brett again. Effervescent and quenching, though bone dry in the finish. Signature De Proef brett character, reminded me of a more restrained iteration of the Flemish Primitive series.

750 ml caged and corked bottle. Served in a tulip glass, the beer pours a hazy golden orange color with about an inch off-white head. Head retention and lacing are both pretty good. Aroma is very nice and fruity, it smells like lemon, pear, barnyard funk, peppery spice and some apple. The brew tastes like bready malt, funk, pears, apples, peppery spice and some grassy hops. There's a little more bitterness in the taste than I expected, but that's not really a bad thing in this case. Mouthfeel/body is medium, it's a bit creamy and dry with moderate carbonation. I think it's a good overall brew, I liked it. $14.99 a bottle.

Poured from a 750ml corked and caged bottle into a Duvel tulip. Just hit the Dallas market and is fresh. Was a slightly hazy golden yellow color with lots of carbonation. It had a huge, foamy white head that took awhile to settle into a constant 1 finger cap. Thick sheeting with some sticking.

The aroma was excellent. Lots of funky brett leading the way with classic saison of spicy yeast and peppery overtones right behind it. Good amount of citrus as well. I love a good brett and this one nailed it. The taste was also excellent and again was lead by the farmhouse funk of brett at the start and then the peppery yeast mix slowly building up towards the end. Little bit of citrus to keep it all in-line. Almost gave it a 5 but it's just a hair from that but with some age on it I bet it'd hit it. Mouthfeel was medium and very crisp with a dryer finish.

Overall, this was an outstanding saison that I highly recommend. Been in a saison mood these days and found several that were good but this one is great. The only thing that would keep me from buying a bunch is the outrageous price (at least here in TX on it) of mid $20's. If not for that, I'd buy a ton to drink now and then to age several. [H;Y]

A: The beer is hazy and dark yellow in color. It poured with a finger high off white head that died down a bit and consistently left a thin layer of bubbles covering the surface.
S: The smell has balanced aromas of sourness from the brett and spicy hops.
T: Like the smell, the taste is rather complex and has initial notes of sour flavors and lingering spiciness from the hops in the finish.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation. Hints of dryness become apparent as the beer warms up.
O: This is a very interesting saison because it has just enough brett to make things interesting but still preserves the characteristic spices of the style.

On tap tonight at Teresa's Next Door in Wayne, PA. Poured into a tulip glass.

Comes to me slightly over-chilled, as is typical for an on-tap beer, so I let it warm a bit. The body is a clear straw, unblemished by any chill haze, carbonation streamers, or yeasty murk once it warms. There is a creamy head that leaves a smattering of delicate rings around the edges of the glass, but nothing consistent.

The aroma is immediately full of a fruity bretted funk. Pears, apples, and clove on top of a clean straw-scented earthiness spring from the glass. I did not expect such a full aroma so quickly. There are some spicy white pepper notes as well, but the funk really shines. Similar on the palate, the pear is accentuated as the dry funky finish leaves you with grassy hops, white pepper, and clove.

Well-bodied and nicely carbonated, this is a delicious and refreshing beer on a hot day in the summer. A phenomenal offering, I wouldn't mind seeing this turn into an annual release. Great balance, great flavor, and great all around.

Poured from 750 mL bottle into tulip.
A: Bottle opens with a nice satisfying "pop". Pours a faintly hazy orangish-yellow with a subdued neon glow (comes out with backlighting). 1 inch white head with decent retention. Looking through the haze, you'll find some (but not a ton) of carbonation. Nice persistent lacing.
S: Man, I love the aromas of De Proef's brews! Sticky sweet caramel malt, citrus and melon (melon always seems to show up in the aroma profile of De Proef's brews), black pepper, mild herbal note, and subdued brett funk.
T: A dry bitter hop bite hits first followed quickly by sweet citrus and melon. Black pepper and spice are sprinkled in as well. A nice mash-up of fruity esters and brett funk. The further you get into this, the more apparent the Styrian Golding hops become. Mild floral quality in the background. As this warms, grains come to the forefront.
M: Clean and crisp. Dry and moderately bitter. Spicy bite. Just the faintest of alcohol fizzle (not even a burn) in the finish. Light-medium body (ABV extremely well hidden).
D: What an interesting take on the saison! Love the play between the two yeast strains. Very refreshing and very drinkable If you like the idea of a more hoppy and spicy saison, then this is for you. I can't say this is excellent, but certainly a very good offering and another solid brew from De Proef. Seek it out if you can!

Broederlijke Liefde is the 2011 Brewmaster's Collaboration beer for Philly Beer Week between Brian O'Reilly of Sly Fox and Dirk Naudts of De Proef Brouweru. This Saison was fermented with two different yeast strains, a traditional Belgian yeast and also brettanomyces.

750 ml bottle poured into multiple tulip glasses.

A: Vibrant and bright hazy golden/orange body with a fluffy, creamy white head. The retention is very nice, leaving a distinct foam ring around the glass. This ring gives up some of itself as the beer is consumed in the form of splotchy lacing.

S: Peppercorn, Belgian yeast, mixed spices, funk, lactic tart citrus fruits, bubblegum. I like the funky notes coming off of this and the aromas lead way for what I hope to be an unique twist on the Saison.

T: Barnyard funk and spice are up-front, laying a nice, clean and crisp foundation that allows other flavors to come through nicely. Spicy citrus notes - apricots and grapefruit - are mid palate and finished off by some dry hay elements.

M: Crisp, medium-bodied, near perfect carbonation. I was wondering about the carbonation after I popped the cork as there was really no "popping" sound but it turned out to be fine.

It's a damn shame this beer won't be made again, as it's probably one of the best Saisons I've had. The bottle states it will develop over time, so I guess I'll have to track down what bottles are left and see if they survive the taste test of time.

Poured from the bottle into a Chimay goblet. Tasted at a tasting during new years eve.

Appearance: Pours a clear golden color with prominent bubbles like champagne. There is a layer of fluffy white head that stays on top of the pour.

Smell: Sweet and light. Quite herbal and fruity with a hint of tartness from the brett.

Taste: This is a very herbal saison. Light malt with a slight brett funk, but not a very sour beer at all. There are notes of banana and citrus fruit with a bitter finish.

Mouthfeel: Medium body with aggressive yet fluffy carbonation and a dry finish.

Overall: This is a really nice beer with a great blend of flavors. It should age very well and I'll look for another bottle to test that theory out.

A - Not bad being over a year old. A nice fizzy full inch of head a top of some colorful clear yellow gold beer.

S - Man this is what I want in a saison big notes of Brett, funky yeasts, lemon peel, and some fruity zest.

T - Not very sour but balanced enough to hide the ABV. Smooth crisp funky yeast and floral hops meets some lemon zest bitterness. Not bad

M - Very smooth drinks with a medium body despite the high ABV. Quite smooth.

Overall picking it up for 5 bucks was well worth it. Such a great take on the style and drinks smooth.

Appearance: Pours a light but somewhat cloudy gold, with a nice rocky one-finger head.

Smell: The Brett comes through strong, along with some fruity notes. Very, very enticing.

Taste: Wow, this is a good one. The Brett is primary but not overly dominating, as the almost tripel-like fruit is also present, together with black pepper and perhaps some other spice. Bracing hops come through in the middle and the finish, balancing it all out.

Mouthfeel: Light to medium-bodied. The ABV is well hidden.

Drinkability: Quite high; this is a really nice beer.

A-Pours hazy straw yellow with rusty orange highlights and about an inch of clingy, off white head. Leaves intermittent fat gobs of sticky lacing.

S-The aroma immediately reminds us we're drinking a De Proef beer. Wonderful floral aromas stacked on layers of white pepper, sage and clove. The funky brett character is elegant and complex. Musty barnyard earthiness with bright moments of citrus skin sweetness and old leather.

T/M-Floral hoppiness right up front, delivered on a wave of chewy, vibrant carbonation. The hops shift from floral to dry mid-palate, undercutting the pleasant mouth-feel. A delicate brett funkiness hangs on the back palate, but it's mostly covered by the hops. Medium bodied.

O-The bitter hops are detrimental to the overall success of the beer. Not one of the better De Proef collaborations, but good in its own right.

Pours a hazed golden orange with some yeast floaties, active carbonation yields a quickly diminishing frothy white head, minimal lacing. Scent brings a mild, but none the less inviting blend of horse blanket, light spice, very light floral and fruity notes with a fresh baked multigrain loaf of bread backbone. First sip brings a smooth blend of the noted components of scent. The brett gives a great barnyard/horseblanket note, lightly tart fruityness, nice white peppry spice, fresh baked bread. Body feels fuller then most for the style, helped by in control caronation, smooth on the palate and quite dry. What a nice beer, the brett is present in a perfect quantity and balances perfect with the mild spice and fruityness for such a refreshingly dry beer. Would love to see this develop over time.

A: Pours a hazy light to medium golden yellow in color. The beer has a finger tall dense white head that reduces to a thin film covering the entire surface of the beer with a thicker ring at the edges of the glass. Moderate to significant amounts of lacing are observed.

S: Quite a strong aroma of barnyard funk and brett in the smell of this beer along with some lighter notes of floral hops and touches of vinegar acidity. Additionally, there is a light amount of lemongrass spiciness in the finish of the smell.

T: Starts out with some pale malt flavors and quite a bit of spicy yeast (peppery). There are also light amounts of tartness and funkiness contributed by the presence of brett. Additionally there is a light flavor of citrus/lemon rind.

M: Just shy of medium bodied with light to moderate amounts of carbonation. Very dry in the finish.

O: Quite a bit of complexity in this beer and very enjoyable. Probably my favorite beer in this series of collaborations this brewery has done - definitely one to get again.

Bottle picked up at International Beverage in Grand Rapids last weekend. Served in a Mikasa tulip.

Pours a nice golden-orange color with a bit of chill haze that clears up as it warms. Huge, fluffy off-white head sticks around forever and leaves good lacing on the glass as it falls.

The nose starts out with quite a bit of Brett -- nice notes of earth and a bit of barnyard plus some peppery phenolics. Lightly-toasted malt comes in behind that. The flavor steps back a bit, with the phenols taking over a bit and the Brett earthiness falling a bit behind. Same problem occurs in the mouthfeel. Quite dry in the finish. No problems per se, just not as good as the nose would have suggested. Overall, very high quality and probably my favorite in the collaboration series to date. Should age nicely.

Pours a light fizzy head with golden clear banana colored beer.

Nose has light Belgian straw malts, Brett and barnyard funk, light citrus and orange peel, light spices, bright fruit.

Taste has Brett! Big time Brett! Light barnyard funk, spices, citrus, bitter orange peel, light sweet sticky malt, Belgian golden malts, drier sticky finish.

Mouth is med bodied, lighter but dec carb.

Overall not bad, needs more time to let the Brett do it's thing, nice golden malts, nothing bad, nice light citrus, a bit sticky though.

First had: on tap at Pinocchio's, Media, PA

Brewed as a collaboration between Sly Fox and De Proef as the result of a contest/drawing that occurred at McGillin's Olde Ale House in Philly in which the winner picked the brewer of his choice and was awarded a trip to Belgium to assist in developing the beer. I'll just say that I was there that night and entered into the contest, with Dogfish Head as my brewery of choice. I should've won just because I was forced to go to McGillin's, aka the worst bar ever. Also my beer would've been better because DFH > SF. Heh. Anyway.

This poured was served in a Pinocchio's signature stem glass, a mostly clear peach color, with a small cap of white head that left a bit of lacing. Nice mild aroma of citrus and spice, with tones of Belgian yeast and funk. Taste of pale malts, light sugar, Belgian yeast (a bit subdued, which was nice, actually), sour orange zest, pineapple, wet grass. All flavors in very good balance. Higher alcohol barely noticeable. Almost medium-bodied, crisp and quite drinkable.

A - Yellowish bodied beer with some hints of orange. Nice foam head that left significant lace on the sides.

S - Good funky brett, smells quite fruity with some moderate tartness. Pineapple notes are prominent with some barnyard and wet hay.

T - I found this to be a pretty fruity and tart saison. Has some good funk and horseblanket, with some nice drying phenol flavors on the end. It's sweet, but there is some yeasty notes to break it up and make it finish appropriately.

M - Medium bodied, moderate carbonation, dry finish.

O - Good beer, fairly distinctive, and pleassant tasting. Added to an already nice buzz I had going with it's relatively high ABV.
