Our Saint Dekkera® Reserve Sour Ale series are naturally soured by spontaneous/wild secondary fermentation and aging in oak barrels with microflora wonderfully unique to our downstate Illinois terroir, where we embrace the individual, wild character of each barrel to produce beers with a wide array of acidity, sourness and unadulterated funkiness

Golden ale with minimal head. Moderately sour. Mild funk. Strange, wet, sweet grain flavor. Moderate body. Slick texture. Harsh carbonation at first turns relatively flat. Complex but with a somewhat odd flavor.

these guys are so hit or miss for me, some of the beers are amazing, some are undrinkably bad. this is cool beer, not at all comparable to the lambics of belgium, but quite a bit better than a lot of other american takes. sold to me as "unfruited lambic", i like the wheat forwardness of this. its plenty dry, but grainy, with a raw type of wheat character to it, giving it some body and a distinct flavor. i dont get the aged hop character of the old world lambics, but i do get a nice mix of funky brett and bacterial sourness, somewhere on the middle of the spectrum for each. slight vinegar here too, gives it a flanders sort of charm, and plenty of oak on it, giving it a mellow earthy sweetness and a slight toasted quality about it. some lemon notes towards the finish as the acidity ramps up, a floral element, soft and delicate, and again with all the wood. fine carbonation as they go and a little more body than we are used to in the style. still a tad sharp, but a pleasant beer if you can appreciate it as its own thing. this st. dekkera series is where these guys are apparently doing their very best work...
