Having had this beer back in the fall, as well as the original Batch 500 way back in May or June, we were slightly surprised to find it lingering at Lunar; although, as typifies the slightly happy-go-lucky spirit of the place, it wasn't actually on the beer list.
My understanding is that this won a medal at the Night of the Barrels a couple of months ago in Chicago. Barrel aging has a certain cache, and can result in some epic results (DFH's Palo Santo comes to mind), but I have to say I am not totally sold on the aged 500.
It pours a slightly muddy deep chestnut. The aroma is a dense mixture of wood, toast and spices but the piny, volatile aromatics that characterized the un-aged version are gone.
There are a lot of flavors wrapped up in this, but I thought they lacked clarity or any particular profile.

Pours a dark ruby color with a short creamy head.
Scent of oak, honey, malts, hops, fruits, and some alcohol. Very good, but the hops are fading.
Taste of hops, fruit, alcohol, oak, and honey. Tasty indeed, but not among the best Barrel Aged Imperial IPAs I have had.
Mouthfeel is medium full bodied and smooth with a nice little bite.

Served in a 9oz snifter.
Half-finger head on top a toasted chestnut hued brew. No bubbling in this somewhat syrupy looking liqiud. Great, carmelized bourbon wood aroma. Mixed with a smooth touch of embery fire from the alcohol. The taste is varied and complex. Toasted bread grains gently compliment the viscous citrus hop syrup. The hops seemlessly meld into a caramel and faint vanilla bean toasted wood character. The alcohol compliments some sugary sweet fruit flavors with a mellow swirl of bourbon. Chewy and syrupy mouthfeel is perfect for swirling around the tongue. Perfect sipping beer.
