Appearance: Golden copper in color, very clear and non-opaque. Small off white head with good ammounts of lacing.
Smell: Not as much hop presence as I expected. Good whiffs of caramel malty sweetness much like a Scottish ale. Very balanced hop profile and faint oak on the nose.
Taste: I like this alot. I get caramel, vanilla and some Xmas beer spices on the front end and mild balanced hops and slight oakiness on the back end. The more it warms, I get more baking spices setting in. At 9.9 abv, the alcohol does not make much of an appearance.
I wish I had more of this. Anyone can hop the crap out of beer. But when hoppiness and all of these other flavors can be balanced like this, it's impressive. Nice job Sothern Tier.

Holy oak taste, Batman!
Forget aged in oak. This tastes like I'm just drinking right out of the barrel. Oak, brown, tannins. That's what this beer tastes like. Also some hops and malt... but mostly just oak.
No real good aromas to speak of.
What am I drinking? Sigh. Drinkable and unique, but wouldn't have it again
