750mL bottle poured into a wine tulip glass.

Peach-skin color in the body with some golden hues. Fizzy but persistent pale white head. Not exactly a transparent beer, but neither is it murky. Light trickles of carbonation show through. 5

The nose is tart with some orchard fruit, fuzzy funk, and a white wine yeast aroma. Clean and appealing, but not profound in any way. 4

A surprising bit of raisin flavor is the first thing I taste, followed by unripened peach, earthy, floral funkiness and a sharply tart apricot juice flavor. 4.25

It's tart with some lemony acidity and a full-bodied feel. The finish has some tart bite before a vinous dryness and sticky funkiness that lingers. Carbonation up front gives a lively feel and accentuates the tartness before things settle into a lingering dry, oaky finish. 4.25

It's very good, I'll leave it at that.

A - Poured into a Kate the Great tulip a crystal clear golden hue with a thin white head that fades to leave light wisps.

S - Aromas of excellent funk, Cantillon yeast, horse blanket, sharp acid, light citrus.

T - Taste is similar to the nose with nice funk, real good house yeast, horse blanket, great acidity, bigger lemon citrus.

M - Mouthfeel is very lightly cardboard and a little thin.

O - Overall this beer was rather tasty, however, the mouthfeel is really too light for the style.

This and the other 100% Bio are the same beer, this is just the European label. The US label can't be called organic since the standards here are different than the European standards, but it's the same beer. Alas, I'll rate both.

Of the basic gueuze, perhaps my favorite. Appearance is standard for the style, small head that fizzes away quickly. Aroma is green apple, lemon, barn stall combination of hay / wood / leather / grain / salinity. Flavor carries that through with more minerality, a dried flower / potpourri middle, lingering lemony bitterness.

2013-02 bottle......

A - Dark gold, delicate pour leads to a small half finger head that dissipates quickly. Not turbid obviously and just a nice looker

S - Lemon, hay, grass, green apple

T - A lot of the same as the nose but earthy funk with lingering lemon-lime

M - Light body and carb, slightly bitter, hay

O - I haven't had a fresh bottle of this but good lord man this is excellent at 2.5yrs. Enough funk and light sour notes to make this balanced and very drinkable. Can't wait to see how my other bottle funks up years from now

Don't think this one reaches the heights of 3F's Oude Geuze (which I've had at similar ages to this one), lacking its depth/complexity of both aroma/taste, but what does recommend this one is its lightness of feel and great drinkability. It offers some nice fruitiness in the nose, along with a bit of funk that sort of lingers beneath the surface, never dominating but always popping up every now and then to remind you it's there. Palate is sweet apple tartness along with some slight vinegary funk. Sure, there are probably some other notes I could imagine, but that's the gist. I appreciate that the sour character doesn't completely scorch the tongue. This is solid stuff.

A: Golden. Hazy.
S: Tart sourness. Fig.
T: Intense vinegar sourness. Fig and plum. Funky. A little bit balsamic. Dry.
M: Light bodied with medium high carbonation.
O: Not my preferred everyday style. But when I want something tasting sour I would pick up this.

2012 vintage served in my Cantillon tumbler. Pours a translucent straw gold with a frothy, quarter inch, bright white head. Nose expresses citric acid, cork and horse blanket. Taste consistent with nose; however, I also get a distinct sawdust character as well, with a residual bite at the back. Mouthfeel is light in body with an almost still carbonation. Acidity is fairly mild; however, the acidity stimulates the salivary glands, leaving a salty finish. Overall, I've enjoyed this more in past offerings. That said, not sure if I will continue to store my Cantillons on their sides as I experienced a leaky cork with this one.

Cantillon gueuze '14 vintage

Pours a straw-yellow color, with a spongy, stable head, which is half a finger broad.

Exhibits an unbelievable balance between funky tartness, dusty wood and slightly spiced, citraic fruitiness. Reveals a plethora of subtle aromas, adding depth to the nose, a whiff of glue, old yogurt, vinegar and leather - leading to a unique smelling beer, full of little details.

Reveals a refreshing mouthfeel, due to the high carbonation, medium bodied beer.

Doesn't taste particular fruity in a sense of being specifically heavy on apples or very orange-like, while the beer does feature in fact a generous fruit note, with a lemony crispness to it. This impression gets balanced by musty, leathery malts, matured hops and vinegar, establishing a long lasting sourness. There is almost an explosion on the palate, as the carbonation hits the tongue, establishing an intense dryness, which is noteable until the very end. Finishes with a full-scale, crisp dryness, which doesn't numb the palate from receiving more subtle flavors though.

No fruits are needed to make this a great beer. I am astonished by its complexity, based on the beers lower abv. So much going on, while every aspect is artfully integrated in the beers taste, and interacts very well with its overall refreshing character.

2013 vintage. Poured into a Cantillon tumbler.

L- hazy gold straw, non persistent white head.

S- some funk, lots of lactic acid. Phenols, but in balance.

T- sublime balance between brett fruitiness, barnyard funk, lemony sour, some soft cereal grains, with a lasting phenolic bitterness.

F- good and effervescent. Some oak tannins.

O- the balance is great. It's worth the hype.

Two fresh bottles consumed over my vacation week abroad. A little time would add some nice sour notes to this beer that a younger version at the moment lacks. Scores may go up when I revisit in a year.

Bottled March 14th 2012, opened March 23 2015. 375 corked and capped bottle bought at the brewery in Brussels on a "late honeymoon/finished nursing school/anniversary" trip with my wife in 2012. I packed the bottle around Europe for the next 2 weeks before flying it home. Something like 10 trains and 3 flights. Opened to celebrate the birth of our first born daughter.

Very nearly the most perfect Gueuze I have tasted. Just as good and maybe better than the 100% lambic gueuze I had from Cantillon a few years ago. I think I like this with a little age as well. I had it "fresh" at the brewery and although delicious, I think this is better after 3 years in the bottle. Bight acidity, mind-blowingly simple-yet-complex myriad of hay, brett, oak, and white wine flavors. The better the lambic, the less I find I can name the flavors.

The label says this can get better till 2030. I believe it. I have two more and one of them is going to sit in my cellar till that year.

Look: Slightly hazy golden yellow - the bottle was capped and corked so care was needed opening it, since this stuff is fairly lively. That said, the off-white fingers-width head didn't stick around for too long, diminishing to a foam cap and ring round the edge of the glass.

Smell: Typical gueuze - barnyard funkiness with more than a hint of vinegar. Some citrus and apple, but smells more than a bit like apple cider vinegar. Oddly, it's not nearly as sharp as Cantillon Kriek or Rose de Gambrinus.

Taste: Slightly funky up front before the fruit and citrus flavours start to show through. There's a bit of a herbal or grassy taste too with just the faintest hint of spice (pepper? coriander?). Surprisingly, it isn't relentlessly sour - most of the sourness comes in at the end.

Feel: Medium body, and the lively carbonation helps to accentuate the tart funkiness. If there was such a thing as the 'canonical' gueuze, then this would likely be it.

Overall: The ideal 'gateway drug' for Cantillon beers - it has a character all of its own but lacks the teeth-grinding sourness of, say, Rose de Gambrinus. That's not to say that it'll be to everyone's tastes - it won't be - but if you only ever try one gueuze then it should be this one. Fantastic.

Appearance: Slightly cloudy golden-yellow with a moderate white head that subsides to a thin white cap.

Smell: Prominent barnyard funk with some citrus and apple notes.

Taste: The barnyard funk hits first followed by some citrus notes. Some grassy hay notes are present along with some apricot-like notes. There is also what I call some classic Cantillon black pepper-like spiciness. The finish is fairly dry.

Mouth-feel: Fairly light-bodied with a moderate level of carbonation. Perfect for the style.

Overall: For me Cantillon makes the protypical Gueuze, upfront funk and complex taste profile. I would go so far as to say they make my ideal sour. It is likely purely due to the age but I found the funk more pronounced in this European Bio version than the other import versions I've had.

Not quite a formal review for this one - but just wanted to collect brief notes from a bottle I consumed back in 2013, and another just last week with friends while celebrating my 30th birthday. Both were 2005 vintage 750mls.

Easily the most sour and uniquely funky Cantillon I've ever had. Particularly the 10-year old bottle from last week. Very intense vinegar, lemon and earthy woodsy wet rock funk. Still well-carbonated, extremely dirty looking pour. This was the epitome of a sipper. The vinegar in particular is absurdly intense to the point of overkill, almost like a bad bottle of wine - but in a good way. I found myself nursing a ~8 oz pour for quite a long time.

I hopefully will add more notes/a more formal review after trying it again.

Appearance: It has a beautiful hazy golden/orange color to it. It has a nice off-white head that dies down moderately and leaves light lacing.

Smell: The aromas definitely give out hints of acidic notes, barnyard funk, tart apples, lemon, some oak and faint hay.

Taste: Like the aromas, it has a nice acidity upfront, tart green apples, lemon, slight citrus, barnyard funk, some oak and faint hay.

Mouthfeel: It has a low carbonation with a very nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied by great flavors and aromas. Beautiful Geuze!

Appearance - The beer was a golden straw yellow color with a bubbly white head.

Smell - The acidity of the style is present, but it takes a turn toward lime.

Taste- Amid the acidity, the lime taste catches my attention. It is not overly bitter citrus, but very pleasant. Toward the aftertaste, there is a dry oak sensation. The acidity is well balanced by the aftertaste.

Mouthfeel - This Gueuze will make you pucker. It is dry at the end, making you thirsty for more.

Overall - As far as I am concerned, this is a near perfect example of the style.

A: Pours a clear dark straw yellow with just over 1 fingers width of bright white head which dissipates down fairly quickly and leaves very little lacing. 4

S: Very tart with lactic acidity, lots of vinegar notes as well. Some oak, fair amount of cheese like funk. Very strong aromas as a whole. 4.25

T: Not as sour as the nose, or as other Cantillons Ive had. Lactic acidity, lemon-lime citrus, some sweet esters, oaky vanilla on the finish. Funky notes are there with a burnt plastic like quality. Subtle bitterness which is a bit of a surprise, but it is more of a tart bitterness. 4.25

M/:D Lighter bodied, carbonation appropriately high, somewhat drying on the finish, drinkability is good. 4

O: Very good, but still a bit disappointing as I have exceedingly high expectations from Cantillon. My least favorite Cantillon to date, that being said its still better than 95% or beers Ive had and Id still drink this any day of the week. 4.25

Bottling date is 27 August 2013. Almost a year old.

A: Oddly enough there was some liquid under the cap, above the cork. Not sure if that's a good sign. Pours a hazy, orange-gold? Medium sized fizzy white head. Decent head retention but zero lacing as you'd expect.

S: Lots of tart fruit aromas. Apricots and apples primarily. Light citrus rind. Touch of sulfur.

T: Sour apples and apricots again. Super tart of course. Tart and funky as hell in fact. Super bitter orange peel. So bitter, it's almost bile-like. Sulfur-like, rubber-like aftertaste that hangs around forever. Tastes like a car did a burnout in my mouth between sips.

M: Medium bodied, super tart and bitter.

O: Interesting transition of sweet and tasty fruitiness up front that quickly turns sour, then funky. It's pretty good but that burning rubber and bile aftertaste is a bit hard to get past.

A-Pours a hazy, glowing yellow color. Head immediately grows as I pour. After the pour, the head begins to die off and eventually almost nothing is left. Light lace rings.

S-Lively, acidic, tart aroma. Oakiness. Funky cheese rind. Organic and rustic. It exudes tartness.

T-Sharp, acidic, lactic sourness. Like biting into a lemon. Funky cheese. A bit dusty tasting. Slightly grassy. Finishes with a pleasurable oakiness.

M-Puckering. Lingering flavor. Very light bodied. Tight carbonation. Very easy to get it down but too much would probably abbreviate the stomach.

O-Pretty damn awesome. Very sour and complex. Intense and quite tasty. Another excellent Cantillon beer.

Graciously shared at a tasting commemorating JK sours release...poured conservatively into a tulip, estimated 3 oz pour. My first Canty, vigin no more, it's a brand new world.

Cantillon is just so experienced in their ways. The only reason I didn't give this an even more perfect score is because I had my first DDG before this.

Appearance is liquid hay, cloudy layered beautifully. The smell is all barnyard, funk, sweet citrus-y juices, pineapple...

The taste is wonderful, palate cleansing, apricots, citrus, just so primitive and refreshing. The mouthfeel was lingering, just the salt of the Earth in a bottle. Cantillion, I'd say keep up the good work, but I'd be an 100 year old broken record- just simply know what they're doing, I'm very humbled... And to be honest I feel honored to have drank it.

I shall return.

Pours a hazy golden straw with a very tightly bubbled, two finger tall pure white head. The quickly dies down to a half finger's height, leaving no lacing behind in it's wake. For a gueuze, the head that remains is quite stable.

Aroma: (4.5)
Wow, as soon as the beer is poured your nostrils are struck by loads of fully matured, slightly cheesy Brettanomyces funk; plenty of musty horse blankets, wet hay, dried apricot flesh, peach and bright pear undertones. Beneath this funk are juicy notes of tart lemon and pineapple juice. As the beer warms, subtle vanilla from the oak barrels begin to surface amongst the funk.

Taste: (4.5)
Bright, tart lemon juice slaps your palate immediately, quickly followed by the huge, fruity Brettanomyces character that was so present in the aroma; rich dried apricot flesh, pineapple, musty dried leather, damp earth and hay. The beer finishes off dry and tart with long, deep lingering rustic tones of light stone fruits; mostly apricot and peach, pineapple and very creamy, slightly malty vanilla tone. Amazing.

Mouthfeel: (5)
Medium bodied, with a very creamy texture, assuming from the rolled oats that were utilized in the base beer. Firm carbonation.

Overall: (4.5)
The organic version of Gueuze from arguably the most sought after Lambic producer, Cantillon. The classic "Cantillon" funk is ever so present in this beer, but for me, what really separates this Gueuze from the rest of the lambic producers is the fact that the body is so silky and creamy. The beer is really is a balanced as a sour can get, as the Brett funk really cuts through, yet doesn't overwhelm the tartness of the aroma or flavor. Definitely worth seeking out.

One of the best bottles of Gueuze I've had. A young Gueuze, so the taste is not as sour as an Oude Gueuze. Beeradvocate says it is retired, but mine was bottled 27 August 2013. So it is probably back in production. Of course, I got it in Ghent, Belgium and not the good ole US of A.
