12oz bottle at cellar temp poured into a wine glass. im making out the bottling date to be feb 18, 2008(it says 18feb80), however the cork says it was bottled in 2007.
pours such a wonderful color, a pinkish red with hints of brown. a quick dissapaiting fizzy pinkish head, afterwards leaves nothing, no real lace, but some nice legs.
in the aroma, lots of mustiness and funkiness. smells of old cheese and an old wet basement. subtle hints of cherries in there. tartness is apparent in the aroma as well.
mouth puckeringly sour and tart. lots and lots of funk and mustiness going on. hard to even describe the taste as this is my first truly authentic lambic, only other lambics ive had were lindemans. the cherry is there, but not as prevailant as i thought it would be. finishs dry.
light body. a fine low carbonation. coats the mouth with sugary tartness. really makes your cheeks get sucked in.
took me quite awhile to finish the 12oz bottle. the musty tartness was a bit much, half a bottle wouldve been great. definatly an acquired taste and i would love to explore some more of what cantillon has to offer. i think any avid beer enthusiast should try this, as it is supposed to be the lambic of lambics, and is just truly a different kind of beer. the brewing methods are also very interesting to me.

A shining jolly rancher ruby red body, mostly clear on the first pour, rapidly forming a pink salt head, frothy and vigorous, wearing itself out rapidly to nothing.
Smells of midsummer farm fields, hay, sunshine, dry brush, along with musty funk, whispers of sour fruit.
Vibrant acidity, mild funky tang, aged red berry juice - raspberry, currant, sour cherry; feel is sharp and bracing while sticky, the acidity gets to the back of your throat, and an active frothy carbonation; a dry finish begs for more, some sticky sugars lingering.
It's all balanced beautifully, candy sweet and puckering tart, dashes of must, bright and sticky, and the fruit aged to an intriguing sophistication. Wonderful.

A: Poured into a tulip glass to a beautiful deep red which is topped by a dense and slightly rocky two fingers of pinkish head which fades slowly to a small mat with minimal lacing
S: Smells of funky oak with some sourness along with a touch of cherry
T: Taste is bright and acidic cherry up front followed by some funky oak, more acidity, a little furniture polish, hints of yeast, along with some more nice cherry flavor. On the finish there's more sourness, funky oak, hints of barnyard, cherry, and lingering hints of oak.
M: This beer has a body which is on the lighter side of medium. Carbonation is light but effervescent while the beer has a drying finish due to the acidity.
O: This is incredible. I definitely should have popped this one sooner, but it still drinks incredibly well. Great flavors and a really nice amount of complexity on top of aging beautifully.

Slightly hazed garnet with a fat sticky pinkish head that retains nicely. Aromas of wet hay and wood, leather, mellow warm cherry spice. Damp wood, lemon, tobacco leaf, with most of the cherry flavor coming after swallow. Medium light and tart, but not overly puckering. Delicious!

375ml Bottle - Pours ruby red with a 1.5 finger off-white foam head that dissipates rapidly. On the nose, notes of sour cherry are prominent, followed by weaker floral notes and oak. On tasting, cherry tartness comes to the fore with a gentle sourness that lingers. Earthy notes, oak and citrus are also evident in an outrageously complex and beautiful beer. Great mouthfeel with excellent carbonation and a dry finish.

Got one from Ma Che in Rome. Overall a beautiful representation of the style! Very fruity, and puckery at first, but then the malt back started to appear and balance the sourness.

Bottle from Etre
Bright brick red color with a light opaqueness and a good sized white head with a hint of pink in it. Solid earthy funk and lemony lactic tartness with huge cherry aroma flavor and tartness to round it out. This beer is beautiful I wish it were more available.
