My first Cantillon, received from the generous FluffyMcTingles. Thank you very much! Bottled 02/14/2011 and reviewed from notes taken 10/26/2011. Poured into a snifter.
A translucent, vibrant, ruby red body with about two centimeters of bubbly, pink head. Brief retention, minimal lacing, but a gorgeous hue nonetheless.
Aroma is of tart cherries, a faint yeast funk, some straw, and hay. A delicate saison-like background that showcases the cherries.
It tastes of cherries, other light fruits, yeast/funk, straw, haw, some faint grasses, and subtle spices. Well balanced, and again highlighting the cherries.
Mouth is crisp, not overly acidic or abrasive, and finishes a bit dry.
Overall, a delicious offering. Easy to see why these are sought after.
