Poured from a 1pt. 9.4 oz. bottle into a Belgian tulip glass.
A: Pours a slightly hazy golden yellow with a generous head that collapses quickly into a thin white cap with constant bubbles rising to the top.
S: Lots of sourness in the nose. Kind of like an apple sweet tart with a hint of grape. Strong acidity that stings the nose a little when breathing deeply. Slightly musty.
T: Very tart and dry with a white wine acidity. Tangy with a green apple bite. Very fruity with a hint of peach. Very sour but not overwhelmingly so with just enough sweetness to give it a crisp, refreshing finish.
M: So dry that it makes your teeth squeak when they touch. The tartness clings to the top of your tongue and the roof of your mouth for several seconds before it fades. In the end, it is remarkably refreshing.
D: This is remarkably drinkable for the style. Due to its tartness and acidity this is definitely a sipping beer. It's not something you could (or should) chug down in big gulps. It's the type of beer you should savor in little swigs to fully appreciate.
Overall: World class. Not cloyingly sweet like pasteurized and blended lambics. Just straight up sourness with an amazingly complex fruity flavor profile. I don't think I could drink it all night long but it's something I would gladly buy again.

Relatively clear golden liquid, slight haze. Pure white head, decent retention.
Tart aroma, straw, funk, lemon. Strong and clear.
Taste does not disappoint. Strongly sour and tart, sharp flavors, citric acid with musty funkiness.
Light and drinkable, oily and slick. Puckering and a mild back-throat acidity helps you to slow down and savor each sip. Long, long, semi-dry finish.
Lovely beer - easy to see why it's considered among the best in the style.
