Bottled on the 7th of June, 2011.
375ml green glass bottle with cork and cap served slightly chilled into a goblet.
Cantillon's Classic Gueuze is a slightly hazy golden yellow color with a hint of pink. The head is thin and fizzy and settles quickly, similar to a champagne.
Aroma is wonderful and enticing with slightly sour and tart elements. Complex and unusual.
Flavor is also sour and tart but not nearly as much as I was expecting. It has a nice softness to it that doesn't hit as hard as some other lambics. Sweet up front with tart cherries, peaches, and apricots. It turns more sour towards the middle of the sip and then finishes dry with a little tannic pucker.
Mouthfeel is medium-light in body and perfectly carbonated. Balanced more than others in the style and more drinkable too.
Overall a really excellent Gueuze. Probably a great place to start if you're new to the style.
