This is my 1000th review, so I thought it would be fitting to pull out a true classic.

A 375ml green bottle with a bottling date of Dec 1st 2011. Picked up at the brewery while on a trip to Belgium about 18 months ago, and stored in my garage. Mannekin features on the label, making the gueuze...

Poured into a Duvel tulip. Bottle conditioned. A bright golden-amber hue with faint haze and light carbonation. Yields a smallish head of white foam that lasts for a few minutes before subsiding and disappearing. Aroma of sour funkiness: hints of unripe apples, apricot, peach, barnyard funk, hay/straw, faint wheat, mild lactic acid and subtle vinegar. Complex yet balanced - fantastic!

Tastes of prickly sourness and funky fruitiness with a lingering acidic finish. Notes of unripe apples, apricot, barnyard funk, hay, husky wheat, lactic acid, vinegar and earthy yeast. The sourness is dominant yet the flavour is simultaneously complex and rounded. Highly attenuated - the driest beer I've had. No bitterness to speak of. Mouthfeel is smooth and tingly, with light carbonation and good body. The sourness stimulates the palate. Exceptionally astringent, followed by an aftertaste of acidic funk, fruitiness and earthy yeast.

Wow - Cantillon gueuze never fails to impress. At first the sourness hits you and dominates the experience, but after a while the other flavours make themselves felt. The aroma and flavour are superbly balanced, and the body is wonderful. The only minor flaw was a slight lack of effervescence, but each bottle is different. Quite simply, a world-class brew that demands to be tried.

375 ml Belgian flag bottle poured into Cantillon balloon glass. Pours hazy gold with a thin layer of white head that persists through out. The nose is loaded with character. Fresh cut grass and hay come first along with bright lemon zest that cuts through the funk. Speaking of funk, notes of earth and hay linger strongly through out with an obvious tangy ness present as well. Taste starts with huge wave of citric acid, lemon zest, and tartness. The tartness sets the table for the earthy funk. Notes of hay, oak, and cork come through towards the finish with some peppery spice notes. Super complex, different notes come to the front with each sip. Mouthfeel is highly carbonated with light body. Overall, a very enjoyable brew. Super funky with a nice dose of tartness as well.

A - Light haze on an apple juice gold body. Thin white head settles quickly with little-to-no lace.

S - White peach, lemon, green tea leaves, fresh grass, muscat grape.

T - Grapefruit rind and pith, oak, honey, bitter dandelion, lemon, lime zest. Soft and gently complex.

M - Smooth medium frame with a gentle creaminess, and a sessionablely sour finish.

O - Well balanced with a fantastic flavor profile. The quintessential archetype example of the style.
