Had on tap. 7 oz pour.
Another near flawless offering from one of the best Lambic Brewers in the world. Pours a beautiful golden hue with a lily white 2 finger head. Great funk and earthiness complimented by a hint of bitterness from the dry hopping. Great lambic and the standard of the style.

2014 cork date. Poured from a 750mL bottle into a Cantillon taster glass. Acquired in a trade.

Pours a somewhat hazy golden straw body with a two finger slightly fizzy white head that reduces fairly quickly but leaves a layer of retention and no lacing.

Aromas are of typical Cantillon character - upon opening it a funky cheesiness, grassy, musty hay, peppery, tart aromas, citrus, white wine, and a slight hoppiness in the background.

One the tongue is an immediate dry tartness, and borderline sour citrus notes which fades to open up distinct oak / barrel notes, funky yeast, and is followed by pepper, grass, and a muted hoppy bite on the finish. The dry tartness sticks on the tongue for a minute or so. Mouthfeel is medium light, carbonation is medium.

Overall world class, which is not surprising at all coming from Cantillon. Really enjoyed this one, lots of flavor and balance.

On tap at Blue Monk in Buffalo, NY.

This one pours a brilliant glowing yellow, slightly hazy, with a small head and a little bit of lacing.

This smells like super expressive citrus- orange, lemon, and grapefruit, with a big tart aroma, and funky hay aroma too.

This has a wonderful hoppiness to it that's uncommon in the style- it adds a nice citrusy and bitter dimension to the sour and funk. This is refreshing, tasty, and super drinkable.

This has a crisp, sparkling mouthfeel, with a high level of carbonation.

An unheralded gem from Cantillon. This was listed as Cuvée St. Gilloise, but I believe this is the right listing.

Lovely looking bright orange brew, topped with a very minor, white head, quickly fading to a ring, not atypical of the style.

Faint but deep funk and grassy hops on the nose. Tart.

Flavor follows, featuring incredible tartness. The hops, yeast, and aging all come together in a neutrally tart package (i.e. no real impression of fruit).

Major puckering on the palate; long funky finish.

Enjoyed a bottle of this at a recent bottle share. Cuvee Saint-Gilloise (Champions) is a solid example of the style and one that I enjoyed. Good stuff!

Nose shows funk and horseblanket, melon, elderflower and lemon rind.
Similar flavour; more funk, elderflower, grassy and spicy hops, peach and apricot.

Dose of funk but real citrus hops, too. And I’m liking the sherbety Lacto feel. But somehow I feel like Cantillon is out of their comfort zone. This is not hugely distinctive - Jandrain-Jandrenouille do better when it comes to marrying farmhouse flavors and big hops. The bottle suffered from being the last in a long night, and it is well put together like everything from this brewery; it’s just not capturing the magic for me. 4

750ml bottle in a wicker basket split amongst a bunch of wine glasses at the Cantillon brewery.

Pours hazy, pale, slight amber with not much head. Looks like a lambic. Smell is interesting -- lemony, clean.

Taste is hoppy and sour, but balanced. Strong hops aftertaste.

Mouthfeel is light and good. Overall, a little odd, but very good.

Cuvee des champions '14 vintage

Yields a cloudy, vibrant orange color, with a huge, froth head.

Offers a huge amount of grassy, american hops, giving the beer a unique note, which provides more depth, due to herbal, matured hops. There is a layer of subtle tartness underneath the hops, quite funky, together with leather, yogurt and a whiff of glue. The nose comes perfectly together, between sourness, grass, bitterness and even a fruity indication, leading to a fantastic aroma.

Has an incredible soft mouthfeel to it, with a fitting carbonation.

Tastes of leavy, grassy hops with a decent amount of citrus peel, bread and an enjoyable tartness. Blends perfectly into the slightly metallic, lively carbonation, unfolding matured hops among grass and acrid herbs. Finishes with a lively dryness and old hops, while a lot of the grass is still there, evoking an almost fruity impression as the malts tend to get a little sweeter.

As there is a belgian IPA, this in my opinion comes closest to an IPAed lambic . Dont get me wrong, this is unmistakely a lambic, but the hop integration is pretty much character defining. The beer has a highly unusual taste for a lambic, coming incredible well together, with hops doing a huge part of the work, among your typical cantillon lambic foundation. Very rich in flavor, the beer emphasizes a lot subtle flavors, cutting through the matured hops. Reveals a perfect interplay between sour and bitter.

January '15 vintage.

I have a few older bottles, and I just haven't gotten around to trying this beer, until someone was nice enough to share a fresh one at Gratitude day. Cloudy amber-orange pour, with a nice fluffy white head that settled at a small layer. Funky, lemony aroma, cobwebby, green hops and oak. More of the same in the taste, barnyard funk, earthy, green hop notes, lemon, acetic acid. Light-medium body, awkward mouthfeel. Reminded me a little of Iris, which I really do not like fresh. So I'm interested to see if I like this beer better when it's got some age on it. Hops in lambic just doesn't really do anything for me.

Vintage 2014 drank early 2015

Appearance: pours a golden yellow. forms a small white head with no retention. Very slight lacing as it swirls around. Hazy and almost opaque.

Smell: mix of hops and sour. the mixture makes it hard to figure out what hops are used. underneath the mixture are some funky and oaky flavors. some vinegar and lemon juice.

Taste: opens with an almost candy like mixture of sweet and sour. hops are resiny and maybe a little fruity. vinegar and lemon juice make up most of the bee, lots of oaky flavor and funky yeast.

Mouthfeel: medium in body, lots of residual funkiness and hop flavor. a bit acidic.

Overall: a solid beer but as far Cantillon beers go this is one the lower end of the spectrum. Lacks the complexity of other beers of the style, and as far as dry hopped sours go they seem to be more on the miss side of the spectrum.

750 ml capped and corked bottle, back label says bottled 24 September 2012, best before September 2022. Labeled as Cuvée St-Gilloise. Served in a Prairie Teku, the beer pours a hazy golden/orange color with about an inch off-white head. Head retention and lacing are both good. Aroma is nice, it's smells like apricots, hay, funk, citrus peel and some peppery spice. The brew tastes like citrus (mostly lemon) peel, hay, funk, bready/grainy malt, oak, peppery spice, earthy/floralness, and some white grapes. There's a nice mix of tartness, fruitiness, and funky/earthiness. Mouthfeel/body is light/medium, it's smooth and easy to drink with a good amount of carbonation. I thought this was good, definitely worth picking up if you come across some!

I was a bit disappointed! It just wasn't sour enough for me. Compared to other Cantillons I tried, this was the least puckering for me.

Very complex though. Lemon, white grapes, barn yard.

My first Cantillon. Bottled 2012.

Pours with a nice thick head and retains this throughout glass. Nice funk up front with a delicious tart slightly sour finish. Very enjoyable, glad I was able to pick this up at the beer mongers cellar sale.

2010 vintage

Not sure how it tastes fresh, but this is one of the best beers I've ever had. Super funky, tart and bright, but not crazy sour. Lemony, grassy, and fairly dry. So easy to drink. Cantillon is amazing.
I need more of this in my life.

Enjoyed as part of a tasting group out of a green 750 mL bottle with a regular cork and crown. I didn't write down the bottling date, but I'm pretty sure it was February 2014. Poured into a Belgian-style tulip glass.

Appearance (4.5) - Pours a hazy, bordering on cloudy body the color of apricot skin, but a bit brighter, almost glowing from the ambient light. Atop the body sits a finger of off-white foam that consists of predominantly smaller bubbles, a la champagne, but with far more staying power. Retention is moderate, and lasts longer than I'm willing to wait before taking my first drink. Lacing is sparse, but present in places along the sides of the glass.

Smell (4.25) - A nice blend of ripe fruits--mainly in the vein of stone fruits like apricot and peach, with some white grape tartness--and souring bacteria, lending a nice lemony acidity and sharpness to the nose, like pickling liquid. There is also a more subtle note of citrus zest and grapefruit pith, and a hint of what might be white pepper? Hard to tell, because the stone fruit and souring bacteria are the predominant players in the aroma.

Taste (4.5) - What was a very bright and refreshing smell has become a taste with the same bright, acidic notes, but a little more presence from some complementary flavors. Again, stone fruit and now some green apple rule the roost, with overly-ripe peach coming to the forefront, and the lacto provides a puckering sour citrus that reminds me of really tart lemonade, but without the sweetness. The sense of white pepper and some earthy funk comes back, but this time more recognizable than in the smell.

Mouthfeel (4.5) - As noted, this one is bright and acidic, with just enough pucker to make it refreshing. Body is light and the finish is predominantly dry.

Overall (4.5), just another fantastic offering from Cantillon. From what I'm aware of, both this one and Iris are hopped up lambics, but I think I prefer this one a little more, as it's a lighter lighter in body and less bitter. Perhaps the blending that takes place in this one (that I don't believe takes place in the Iris) has smoothed out the rough edges a bit.

Pours a hazy as can be golden color with a dense white head. Smells of tart acidity and apricots. Sour beginnings give way to a peppery spice of a finish. Lemon notes, crisp green apple, and fresh cracked pepper. Delicious.

Reviewed from notes taken August 2014. Label: Cuvee des Champions. 2003-2004.

BOTTLE. Bottled May 19, 2009. 5.00% ABV. Purchased at Olutravintola Pikkulintu in Helsinki for 28 euro. 75 cl with colorful label art.

Served cold into stemware and allowed to come to cellar temp during consumption (per instructions on the label). Expectations are very high given the brewery, rarity, and style.

No bubble show forms as it's poured.

HEAD: 1 finger wide of white colour. Nice supple complexion. No lacing. Retains for 2-3 minutes. Could appear softer. Head is average for a gueuze.

BODY: Translucent quasitransparent pale copper with faint orange hues. Above average vibrance. No yeast particulate is visible - at least not in the first pour from the bottle.

Appears aptly well-carbonated. I'm looking forward to trying it, but it looks like any other upscale gueuze.

AROMA: There's definite sourness - maybe a 6/10 in terms of intensity. Lambic yeast, wild bacteria (incl. lactobacillus), and pedio. A faint neutral oak tone is present throughout. I love that it's not as cereal-emphatic as many of Cantillon's gueuze. Has some wet wood notes, indicating the 5 years of age have induced some pleasant changes. A hint of apple and pear. Light vinegar. Faint grassy hops.

It's a pleasant aroma of mild strength.

TASTE: Lovely. Grassy hops complement the mellow not-too-malty not-too-grainy neutral base nicely. Hints of apple, pear, lime, and plenty of esters. It's not cereal-emphatic like many inferior Cantillon gueuze, but maybe that's the aging at work. Sourness intensity is a 6/10; not puckering, but pleasantly smacky. The fantastic wild yeasts and bacteria (pedio, a bit of lacto, mainly lambicus) complement each other and the rest of the flavour profile beautifully.

Has a hint of white vinegar. White oak undertones throughout. Some apple cidre. It's not real funky or "farmyard-y," but there is some faint wet hay.

Balance is excellent overall. Plenty of complexity, intricacy, and subtlety is featured here, but it could have more depth of flavour. Has a long duration of flavour, with the acidic vinegary notes lingering in the throat in the aftertaste. Very pleasant to drink, and refreshing as well. The lambic/wild yeasts are the highlight here.

It's a very cohesive, dareisay gestalt build, though there is room for improvement. I could definitely go for more sourness, and some lemon and/or farmyard character would be nice. It's not as tart as would be ideal, either. But boy is it tasty.

TEXTURE: Wonderfully smacky on the palate. Smooth, wet, and refreshing. Perfectly carbonated. Ideally medium-bodied. Approachable and enjoyable. This texture complements the taste wonderfully.

It's not oily, gushed, hot, boozy, astringent, harsh, rough, or scratchy on the palate.

OVERALL: This is a damned impressive gueuze from Cantillon, and absolutely one I'd get again...at non-Finnish prices. Well worth trying for those who enjoy the style, and certainly one of the better gueuze I've had from Cantillon. I think the 5 years of age helped erase the cereal signature of Cantillon's younger beers in the style. I'll greedily finish this bottle alone.

Cuvée Saint-Gilloise, 2014 on the cork.
Light orange pour, hazy, bubbly one finger head kept alive for a while, settles to a sticky thin lace in due time.
Two elements are really strong in the smell: vinegar and wood barrel/old dusty stave. "Green" fruit with a big acidity also, with grapes, lemon, cider apples, some "sweetish" fruitiness also, probably from the Hallertau hops. Lots of funk too, with grass, green hay, herbs, very fresh and springtimey, not too heavy with the earthy barnyard notes.
Really sour taste, literally tons of lemon made me cringe at first. Settles fast with some green apple, musty white grapes and even some tart yellow cherries, and the vinegar gets weaker. Big grassy funkiness, green twigs, field flowers, really fresh. Faint dry white wine barrel, nice dusty oak. Dry crisp finish, as expected. Nice fruitiness in the aftertaste, there are even some nice faint hints from the hops, a bit of tropical fruit, and i even got some watermelon peel.
Light to medium bodied, hearty prickly carbonation.
Not the most complex gueuze, but really fresh and tasty, Cantillon prove themselves yet again.

Pear colored appearance with an active and alive foam. Sour, tangy pear aroma with white wine, vinegar and Apple cider. Lemony tart flavor with some Apple cider, balsamic vinegar, earth, and mineral. Tart, sour feel, quite tangy it feels alive on the palate.

Fresh 2014 bottle into Cantillon balloon.

Pours hazy, juicy light orange color, with a one finger active white head that settles to a ring around the edge of the glass with a little left over bubble mass in the center. Looks inviting.

Aroma is deep older lambic funk with wet horse hair, dusty basement, pungent tangy flowers, grapefruit pulp, subtle Bordeaux grape, and earthy/woodsy hops. Damn this is smelling good. Similar yet different than Iris. I prefer the stronger funk of this.

Taste is just the shiznit. Mellow, refined lambic unlike the maltier Iris. Nice bright citrus and grape flavors come out as the result of the smooth 2 year old lambic underneath. The funk is there but balanced. I'm getting peach notes, limeade, and sweet apple along with a lot of those nuances from the nose.

This sports a light body, creamy lower end carbonation, and dry, tart finish with a pleasing acetic bite coming through the lacticness.

This fresh Gilloise may be drinking better than the 3 year old Lou Pepe I had last week. And that Lou Pepe was amazing. And I certainly enjoy the 2 year old base lambic better than the all pale malt Iris base. The hops seem to shine through more on this as well without the sharper hop bite of Iris. Yes, yes, yes..

Bottled @ the 17th of February, 2014.

A: Beautiful art, first of all. Cantillon trademark. Corked and capped bottle. Pours a hazy light orange color forming a thin but very fizzy and big bubbled white head that dissipates quickly leaving no lacings at all

S: Very malty and fruity. Very complex. Let me try to describe it: Notes of sweet malts, vinegar, grapefruit, leather, orange zest, honey, peaches, wet grass and flowery hops. A bit earthy in the end

T: Also very complex. Slightly sweet upfront becoming quickly, tart and funky. Moderate sourness, nevertheless. Notes of pale malts, vinegar, grapefruit, leather, orange zest, honey, peaches followed by an absolutely great hops bitterness and finished by some metallic and earthy notes. Lambic yeasts

M: Smooth, bit creamy and a bit molasses body. Fizzy "alive" carbonation. Malty/funky aftertaste

O: Perfect drinkability. Quite hoppy and bitter if compared to a classic Lambic Gueuze. Very unusual and interesting. IMHO, Cantillon is the best brewery of all times...

Corked and capped 750 ml bottle from Tipples dated July 4, 2013. Pours hazy tangerine colored with a small white fizzy head that dissipates quickly. Aroma of vinegar, oak, hay, sour apples, lemon peel, wet dog, maybe a little mango pineapple tropical thing going on here. Flavor is sour oaky vinegar, dust, juicy tangerines and other tropical fruits, grass. Low to medium body, low carbonation, finishes dry. A nice beer, but maybe a tad unexciting.
