A-Cloudy yellow, nicely carbonated, one finger head.

S-Very funky, oak and grapes.

T-Great balance, very funky, very acidic oak and grapes.

M-Medium bodied, well carbonated, dry crisp finish.

O-First Cantillon Gueuze. It was tasty. Not as good as the Classic Gueuze.

Bottle pour at Zwanze Day @ Avenue Pub.

Appearance: light yellow, light haziness, bone white minimal head.

Aroma: lemony tart notes, funk, acid, musky sourness, floral notes, with some herbal spiciness.

Taste: strong sour note, lemony zest, musk, funk, sour apple, earthy yeast, floral.

Mouthfeel: light, a bit crisp, but lower carbonation.

Overall: fantastic. Ended up with this when they kicked the Kriek keg, and I'm glad it did. The highlight of the night for me.

From a bottle at ChurchKey for 2013 Zwanze Day. Mini-snifter glass.

A: Opaque, light orange/pale color with a half finger of snow white head. Superb retention which lasts indefinitely.

S: Like fresh laundry, oddly enough. Light lemon and ridiculously integrated spice (?), some caramel and stone fruit. Very unique, nice complexity, and the aromas are highly complementary.

T: Odd, not quite integrated and a little off putting funk. Finishes with a lot of bitter/tannic notes, like overextracted fruit/tea. Very dry, a little stone fruit, and a nice mild-to-moderate sourness.

M: Creamy medium-light carbonation and medium body.

O: The nose is really interesting and unique, great stuff. But the flavors don't really come together at all.

Poured from the bottle at Churckey DC during Zwanze 2013 into snifters. Double helping woot!

Dull and opaque lemon body, with some deep orange center. Not much head given or presented.

Oh my god the bouquet on this brew just absolutely rips! Giant sour peach and pineapple topical fruit. Wonderful. Juicy. Quenching. Salivating. Mild funk aromatics hit the back but I litterally feel like I just ripped open a peach or sliced a fresh pineapple in front of me. Exquisite.

Palate seems less of a surprise, since the bouquet is so grand. The fruit notes hit nicely but come with a slightly wet body and feel. Light pepper finish and mild to moderate funk, with the acid a little downplayed. Watery finish unfortunately, but some good yeasty stickiness to match.

Overall I smelled this brew more than I drank it, if that's possible, but it's go some incredible impressive character.

Drank from a cask at Lord Hobo, Cambridge, MA
Served in a stemmed glass
This beer was being poured under the alias Cantillon Cuvée St-Gilloise.

Hazy, yellow ochre appearance. The liquid was capped by a lasting, bright white ring of froth.

The nose was one of the most complex and intense I have ever experienced within the style. Super funky and musty with hints of aged cheese. Tons of brettiness. Lots of oaky barrel character and fresh cut hay. There was a slight sweetness as well that tempered the acidity and lent the beer even more complexity.

The flavor profile was sharply acidic. Fresh lemon juice and a mix of other types of citrus fruits came thorough strong. Tart and slightly oaky. Wheaty in the center. Crisp and bright. The finish contained notes of bitter citrus rind and a good dose of earthy hops.

I tend not to be a fan of the mild carbonation present in most cask offerings, but it worked amazingly well in this beer. The liquid was pillowy soft, creamy and supple. The subtle effervescence really let the flavors shine.

Cantillon's only non-aged hopped beer was truly magical. Between the earthy, hoppy bitterness, the intense acidic notes, the complex funk and the supple mouthfeel, this beer put me in a state of sensory overload.

750ml bottle of Cuvée Saint- Gilloise into a Lost Abbey Teku glass. November 12, 2012 bottling date.

Pours a cloudy off-golden color with a nice big white head that dissipates fairly quickly. The aroma is a tad tart, tad vinegary and very yeasty. The taste isn't very sour at all, but much more on the subdued vinegary side. Yes its acidic but not overpowering by any stretch of the imagination and is one of the least lip puckering beers ive had of the style. Very herbal. Lemon is the most pronounced flavor. Bitterness on the back end, though its slight. The flavor profile is excellent and just what you want in a gueuze. Medium bodied, mild carbonation. Real easy drinking. ends extremely dry

Overall another high quality offering from Cantillon. The least sour tasting beer I've had from them, but the flavor profile is top notch.

Bottled 27th June 2012. 750ml served in a Russian River stemmed glass

Appearance: Pours a light golden orange color with 1+ finger of a white soapy head. Body is moderately hazy with low medium levels of carbonation streaming throughout the glass.

Smell: Big sour citrus notes of lemon and even some grapefruit. Barnyard funk, a bit of musty basement, grass, and herbs.

Taste: Lemon, surprisingly herbal, wood, tart green apples, hay, slight hint of earthy hops. Sourness is medium (low by Cantillon standards) and is more acidic than lactic. Finishes with a twinge of mild bitterness.

Mouthfeel: Light bodied and crisp with medium prickly carbonation. Refreshing and easy to drink.

Overall: Seems as though I'm continually impressed every time I try a new Cantillon beer and this one is no exception. This is an excellent beer and worth seeking out.

Poured from a 750mL bottle into a Williams-Selyem wine glass. Labelled as Cuveé Saint- Gilloise. Bottled in 2011.

A: Hazy hay-coloured beer with very light head. Translucent.

S: HUGE funk. Barnyard scents. Hint of fruit. Citrus peel. Not really my thing, but I recognize the complexity. An underlying sweetness brings a lot to the table.

T: Amazing. Complex, subtle, and exemplary. Fruity-tart, herbal-deep. Very dry. Loads of yeast.

M: Very tart. Lightly carbonated, but puckery.

O: I get it! Finally, I get the appeal of Cantillon. This is exceptional and titillating. I would recommend it to others.

Dry hopped with Hallertau

APPEARANCE: Pours a one finger, medium looking, white head with good retention. Head slowly fades to a nice full wisp. A cloudy carrot orange with medium levels of carbonation evident. Splotchy wisp and ring but no lacing down the glass.

SMELL: Tart lemon, green apples, light notes of vinegar and some floral hop notes. Touches of oak as well. Mild but nice.

TASTE: Quite sour and acidic up front, with lemon and vinegar through the middle into the swallow. Very little funk, but some bitter floral hops and light oak flavors accompany the tart lemon and sourness in the mild finish. Pretty clean and crisp, and increadibly easy to drink.

PALATE: Medium body and medium levels of carbonation. Light on the palate, creamy as well, goes down smooth and finishes dry but not overly puckering. Very nice and refreshing.

OVERALL: This is great. I'm not all that experienced with gueuze yet, but this is one of the more approachable I've found so far. The sourness is balanced well with the hop bitterness, and the feel is creamy and crisp at the finish, making this absurdly easy to finish quickly. A very nice gueuze I will gladly drink again, especially on a hot summer's day like today. Recommended.

Bottled Jan 29, 2010. Big thank you to alpineclimber and wordemupg for bottles of this. You guys are awesome traders and keep me in the funky sours that I can't get here ...and I do love my sours.

Appearance. Pours a hazy gold with a finger of fluffy white head.

Smell. Woody funk and sweet hay, a little vinegar, some lemon, apples and even light stone fruits.

Taste. Nice lemons, minerals and earthy herbal and even hops, fresh hay, and a very light floral perfume.

Mouthfeel. Medium-light body, medium+ fine and fairly soft carbonation.

Overall. Very nice, as usual with this brewery. I'll enjoy trying a well aged bottle of this at some point.

Poured into a tulip. Bottled 02 November 2011.

3.5 A: Lightly hazed yellow orange color. A little over one finger of frothy white head. Retention is about average and no lacing is left.

4.5 S: What an enticing aroma this has! It smells like the fresh outdoors. Wildflowers, jasmine, running water through a forest, melon, apple orchard. Hay to a lesser extent along with rotting wood. Not very acidic, which isn't really the Cantillon way. Perhaps that's why I like it so much. Fresh outdoors funk with just mild lactic acid. Supremely pleasant.

3.5 T: There's more acid in the taste, but it's still low for Cantillon - mainly lactic, but also some acetic as well. Herbal bitterness, lots of jasmine again, with a big woody type funkiness. Again wildflower and apple orchard. Sour apple and unripened peach. Hay, dried out campfire wood. There's a decent amount of astringency in this and it's a unique type of astringency, which I will call an acid astringency. Still, pretty good.

3.5 M: Lighter medium body. Good moderate carbonation. Neither spritzy, nor creamy, but it works well enough.

3.5 D: It's definitely one of the funkier Cantillons out there. It's good, but 3F does it so much better. Still, worth a try.

Bottled June 27, 2012.

Beer is translucent golden, bordering on opaque. Moderate white head, OK retention.

Very nice smell. Funk is notable but a bit restrained. A strong fruit smell is present. Apple.

Taste is quite tart. Funk and barnyard flavours are there, but not overwhelming. The added hops have a big impact. A bitterness accompanies the tartness expected from the lambic. Grass, apple, lemon and oak are all detectable.

Medium bodied, highly carbonated, but with delicate bubbles. Dries the mouth.

Overall, very good as one would expect from Cantillon, but I found the bitterness a bit jarring. I may like this beer more with a bit more time on it.

Bottled 27 June 2012 (Cuvee Saint-Gilloise label)

A -Pours a slightly hazed deep golden brown with one finger of creamy off-white head. Head has good retention before fading to a thin cap.

S - Nice lemon and funk initially. The funky element of the aroma is persistent throughout the aroma, but it isn't particularly strong and not overpowering, though it seems to get stronger and pick up more of a cheese element the further I get into the glass.

T - Very tart up front, with a lot of lemon and some under-ripe peach. The tartness masks the funk initially, but a nice earthy layer comes in midway through and lingers into the aftertaste. Both he tart elements and the funk linger for a long time after the finish.

M - Very creamy mouthfeel to accompany the mouth puckering tartness. Finishes moderately dry, but less so than many other gueuzes. Pretty impressive.

O - Still relatively young, so I assume this may become more dry over time, but this is a very enjoyable gueuze.

Pours a nice, full, orange colour with a small white head.

Smells very tart, and funky.

Tastes crisp and refreshing, with a lemon acid hit, rounding itself off quickly and not lingering for too long.

Thanks to Mike for splitting his bottle with me - Cantillon in any form is always greatly appreciated. Cuvee de Champions (a.k.a. Cuvee St. Gilloise) pours a somewhat translucent, golden-yellow color with a huge, foamy, eggshell tinted head that fizzes up quickly and leaves some nice bouts of chunky lacing along the glass. Very volatile beer, as even a modest pour produces a huge layer of foam.

Before I even lean in to the glass, I can already smell the funk in this one. Extremely funky from start to finish; cheesy, musty barnyard, horse-blanket, wet hay, old cork... you name it. The funk is based off of that signature Cantillon aroma, but even takes it up a notch and amplifies it quite a bit. The funk is accompanied by some herbal lemon zest, a bit of grass and leaves, and a mild, abrupt tartness that is mostly akin to apples and white grapes. If anyone asks you what "funk" smells like, let them take a whiff of this.

Needless to say, I was very excited to finally toss this one down the gullet after the insanely funk aroma that had just pierced my nostrils. The first sip includes a nice round of pears and even some peach tartness that went primarily unnoticed in the aroma, along with smaller amounts of green apples and white grapes as noted earlier. The tartness exerts itself quickly, jolting your taste buds for a moment before fading away into nothing more than a lasting, fruity sweetness.

The funk is actually a bit toned down on the palate, although it's still incredibly apparent and certainly the most important part of this brew. Funky musk, damp cellar, and corky horse blanket all come to mind when tasting this brew. Sometimes it's hard to accurately describe the funk you're smelling, but those words all come to mind. Just know this - Cuvee de Champions is an incredible funky brew, bottom line. The mouth feel is pretty sparky with a nice, highly carbonated snap. Light bodied; slick with a dry aftertaste.

Probably one of the nicest additions of funk I've tasted - so incredibly funky while remaining drinkable and free from anything offensive or off-putting. A nice meshing of flavors with some fruits and a light, yet assertive tartness that keeps you coming back for more. If this were more easily available, it would be the "go-to" brew to introduce someone to the world of unabashed funk.

A frehs bottle poured at the source itself. Poured into a Cantillon branded chalice. On to the beer:

This dry hopped gueuze is orange colored with a crisp, low head. Some creaminess is given off from the head, not common with the style. The aroma brings a big note of grassy hops, along with a little tartness and hay. It's not grossly sour or taste in taste. It's fun and refreshing. There's a mix of swert tart flavor and modest sour lemon with the vibrant grass notes. Medium bodied is the beer, with light carbonation and mellow texture.

A twist on the usual gueuze. Personally, I'm more fond of a more tart gueuze than a hoppy one, however there's little doubt that this is fun to drink.

Poured from a 750 mL bottle ( st gilloise ) into a tulip glass.

A- Poured a dark maize color. Three fingers width of white head, reduced to a ring over time. Very murky.

S- Very nice blend of various aromas. Getting lots of oak and a familiar barnyard mustiness in the nose. Also noticeable is distinct sour lemon/citrus fruit aroma.

T- Upfront there is a definite note of lemon tartness with oak underneath. This tartness eventually fades towards the middle, giving way to a earthy, grass-like flavor. There is some oak, wood flavors in there as well. The beer finishes with slightly bitter hops.

M- One of the better mouthfeels on a lambic. Light body, yet carries a feeling of fullness due to the carbonation. Finishes rather dry.

D- This one goes down very easily, given that this beer was not overly tart. Could be a great session beer.

This poured out as a hazy yellowish orange color. The head is decent looking, thin retention with a pretty good lacing. The smell of the beer gives off a good amount of funk along with grassy malt. The taste of the beer is along the lines of a Gueuze and a pilsner. Tart and slightly sour, some grains and wheat hidden in the faith distance. The mouthfeel is smooth, nicely carbonated and drinkable. Overall this beer is really quite nice.

Looks like clover honey, hazy and golden. Not much head. Funky, classic lambic aroma with lots of plasticky medicinal notes, ripe pears, dried apricot, a faint hint of lychee, and pleasant, grassy hops. Lip-smackingly, puckeringly acidic and very refreshing. Sour apple, sourdough, white grapefruit... really juicy, relentlessly sour but very moreish and mouthwatering. There's a touch of passionfruit and this intriguing violet-like floral quality in the finish, as well. Not quite 'easy drinking' on account of its acidity, but really very delicious.

A: Pours a glowing straw-orange with a nice white head.

S. Citrusy character from the dry hopping and acidity, tart and horsey, light wheat, a bit lactic.

T. Light lactic and pineapple brett, moderate oaky tartness, sour mango, wet hay, subtle hop bitterness.

M. Light and frothy body.

O. A very fruity geuze, more on the bright rather than earthy side, thanks to the brett and the dry hopping. Very drinkable and refreshing.

Pours a lightly hazy golden with a finger of what head that faded into a good long-lasting collar. I’m getting a lot of stone fruits on the nose and palate including apricot and peach. The taste is full of more citrus notes than the nose let on. Earthy spice and a bit of yeasty funk balance out the fruit and lend some tartness to the mouthfeel. The finish is very dry, and I’m getting some citrus rind bitterness in the aftertaste. Low carbonation, tart dry mouthfeel, medium body. Another great Cantillon, I need to get my hand on some of this stuff. Thanks again Russ.

Hazy bright golden colour with big, creamy white head. Decent head retention for the style.

Wonderful aroma. Nice combination of tropical fruit, lime, earthy funk, oak and spicy hops. Very nice and well balanced.

Again the flavour combines a punch of fruit, tartness and hops. The funk is a little subdued but the tropical fruit and earthy, spicy hops is great. Moderate bitterness. Moderately tart. Incredibly balanced for a Cantillon Gueuze.

Medium body with moderate carbonation. Solid.

A wonderful lambic. The dry hopping adds a nice note and the balance of yeast flavours in this one are great.

A: Clear copper with a foaming white head. Serene inside of the glass.

N: Delicious. Musty hops, lemon zest, and attic spaces. Oak holds down the fort with some black peppercorns and graininess. Hints of grapefruit and pineapple.

T: Lemons, straw filled barn stalls, pineapple, horse blanket, oats, and wood. There’s a very balanced sourness here and some excellent funk. Tart without being grotesquely sour.

M: Perfect. Like drinking a pilsner it goes down so smoothly.

O: Accomplished beer and one of my favorites in the Cantillon pantheon. The hops and the lambic work for me.
