750ml capped and corked affair, the January 29, 2010 bottling. Apparently this is the same beer as the Cuvée des Champions, but ze label sez what ze label sez. So, a hoppy Cantillon, eh?

This beer pours a slightly foggy, medium burnt golden amber colour, with two fingers of puffy, tightly foamy, and somewhat soapy eggshell white head, which disappears slowly, leaving very little beyond a few instances of ocean swell lace around the glass.

It smells of wet, spicy bread, earthy, funky yeast, musty tropical fruit and more pedestrian citrus pith, and leafy, dry grassy, and floral hops - evoking images of a very rustic, simmering summer meadow. The taste is much more sour upfront - acidic citrus, green apple, aged lemon, and free agent vinegar, alongside some mild barnyard funk, a decent barley grain backbone struggling to keep its head above the tartness line, and a hefty, but well moderated dose of spicy grassy and herbal hops - that dry hopping sure did the trick.

The carbonation is fresh and sprightly in its understated frothiness, the body more or less medium weight, and quite crisp, which detracts a bit from any (snicker) smoothness that might have been. It finishes just a touch off-dry, the funk, base grainy malt, and fading floral hops riding us out into the sunset across the aforementioned meadow.

Definitely a tart one, but in a much more manageable way then a number of other offerings from this brewery. The two years spent in oak isn't overtly noticeable, but must contribute to a certain degree to the softer, smoother nature. Nice and drinkable, with the usual caveats, and now with a hoppiness quotient to boot! A sassy flavour contrast to some nice homemade cupcakes - thanks, babe! (1,721 characters)

Pear colored appearance with an active and alive foam. Sour, tangy pear aroma with white wine, vinegar and Apple cider. Lemony tart flavor with some Apple cider, balsamic vinegar, earth, and mineral. Tart, sour feel, quite tangy it feels alive on the palate. (258 characters)

Had at Max's Belgian Fest.

Appearance: hazy orange yellow color with a short one finger head that falls immediately. No lacing develops.

Smell: muskiness is up front and dominates the nose.

Taste: strong initial sourness that mellowed after the tastebuds got accustomed to the flavors. Sour and tart grapes, tart green apples, fruity sweetness, and some mild bitterness wrapped in a musky barnyard blanket. Extremely dry beer.

Mouthfeel: smooth and very dry throughout. Long sour aftertaste. Medium bodied.

Drinkability: decent despite the strong sour flavors. This beer grew on me during the session, and the taste score rose as it warmed. Very interesting on tap. (682 characters)

Pours a lightly hazy golden with a finger of what head that faded into a good long-lasting collar. I’m getting a lot of stone fruits on the nose and palate including apricot and peach. The taste is full of more citrus notes than the nose let on. Earthy spice and a bit of yeasty funk balance out the fruit and lend some tartness to the mouthfeel. The finish is very dry, and I’m getting some citrus rind bitterness in the aftertaste. Low carbonation, tart dry mouthfeel, medium body. Another great Cantillon, I need to get my hand on some of this stuff. Thanks again Russ. (634 characters)

A frehs bottle poured at the source itself. Poured into a Cantillon branded chalice. On to the beer:

This dry hopped gueuze is orange colored with a crisp, low head. Some creaminess is given off from the head, not common with the style. The aroma brings a big note of grassy hops, along with a little tartness and hay. It's not grossly sour or taste in taste. It's fun and refreshing. There's a mix of swert tart flavor and modest sour lemon with the vibrant grass notes. Medium bodied is the beer, with light carbonation and mellow texture.

A twist on the usual gueuze. Personally, I'm more fond of a more tart gueuze than a hoppy one, however there's little doubt that this is fun to drink. (695 characters)

750ml bottle served in my Allagash tulip. Poured an orange-gold with a quarter inch bright white head with a slightly hazy clarity. Nose was citrus, cork and some french oak. Taste was citrus and a little woody. Mouthfeel was medium-light with some tartness up-front and a consistent background effervescence. Tartness stimulates the salivary glands in the cheeks towards the latter half, before culminating in a slightly dry finish. Nice sour - not over the top and really quite drinkable for the style. (504 characters)

2009 750ml caged and corked bottle

Appearance: The body is btw straw and golden yellow in color with a slick appearance. Carbonation is minimal, the head is an off white 1 inch crown that shows little retention and leaves little lace.

Smell: Hops, barnyard funk, and a touch of urine soaked hay.

Taste: Same as nose. I had heard that the recipe was different for the new vintages (hops addition) and thats why I tried this bottle fresh. I figured lets try it while the hops are shining. Well the sourness/tartness is minimal when its fresh but it fuses nicely with the hop treatment. Different and well done.

Mouthfeel: On the lite side of medium bodied with minimal carbonation.

Drinkability: Low abv and not very sharp....so easy to drink.

If you are looking for that classic "Cantillon Sharpness" that will make you pucker, this isn't the right Cantillon for you. This new recipe is quite sessionable. (911 characters)

Poured into a 6oz wine glass at Monk's Cafe in Philadelphia.

Pours a golden yellow with more head than I've ever seen in a Cantillon beer. Monks seemed to be having difficulty with this tap as it took a while to pour due to the gushing. Aroma of Fruity citrus hops blended nicely with Cantillon funk and tartness that I found preferable to the Iris I had tasted a few days prior.

Initial blast of the dry hopping provided flavors of summer fruit and lemon. Apricot and peaches quickly turned to a violently acidic finish. More acidic than sour leaving a slight burn in the back of the throat. Left me satisfied, but not smitten. Despite not being totally blown away, a tasty lambic that I would happily drink again and again.

I have an '07 in the cellar that I'm holding for the next Philly sports championship. Hopefully will not have to cellar much longer as I'm not sure it will hold up well. (899 characters)

Consumed at Stone Sour Fest.

Murky golden color about a finger of fizzy white head. Not a very pretty beer.

Smells of hay and funk. Some tart and zesty citrus notes. Some light earthy hops.

Tart apple notes, zesty citrus, hay, funk, pretty bitter and hoppy for what I'd expect.

Zesty, sharp, light in body, but super well carbonated making it seem a little fuller.

Yeah, just zesty tart and bitter goodness. (412 characters)

A: Poured a hazy golden yellow with a fizzy white head on top. Decent retention leaving a thin white cap on top. A small amount of random lacing formed on the glass.

S: Extremely funky, not very fruity like other Cantillon gueuze I have had. Very barnyard/musty with some faint lemon and grass.

T: Much more like it! Plenty of citrus fruits, some lemon, peach, green apple. and apricot. As it warms the flavors intensify a bit as does the sourness of this gueuze.

M: Slightly lighter than medium bodied, tart, but not overly so. Very drinkable. Flavor much better than aroma imo.

O: Another great gueuze from Cantillon, though I preferred classic and Monk's to this one. (727 characters)

Opened for Sour Day 2012. Picked this up recently at Binny’s, 2011 vintage.

A-Poured into a Duvel tulip. Saint Gilloise pours a cloudy orange in color with about a half finger worth of tight white head.

A-Nose is exceptional, you can definitely detect a good hop presence from the dry hopping, there is also lambic, some urine, and must.

T-Flavor is less focused on the hops and more on the lemon. The hops are more in the background with some moderate funk.

M-Light mouthfeel, light carbonation, heavy lactic acidity, and a long finish.

O-Great beer that is a nice change of pace for Cantillon. I really like the hop character that St. Gilloise and Cuvée des Champions have, it’s a nice compliment to the lambic. Still prefer Cuvée des Champions more than St. Gilloise, but both are awesome. (808 characters)

Pours a bright gold color with an average size white foamy bubbly head that recedes to leave some spotty lacing.

Aromas begin with barnyard funk, lemon and hints of grassiness from the hops. As it warms it gets much more funky to an almost cheese-like level, maybe that is the combo of Belgian funk yeast and the choice of the dry hops. Oak and some mustiness exist as well.

The tastes follow the nose with lemon, and grassy hops, then some cheesy funk and some more emerging earthy, musty funk notes. Wet hay and other dusty musty oak flavors add to the complexity as it warms.

Mouthfeel is medium bodied with medium carbonation. Finish is super funky, not super sour, but really musty and oaky.

Overall I enjoyed this beer albeit being nothing like I was expecting. I have not had a Cantillon with this much hop character but it was a nice chance of pace. There is the typical Cantillon funk which cannot be replicated to complement the dry hops and create a unique yet enjoyable experience. (997 characters)

Gueuze-a-palooza 10/8/11; poured into an E&J Cask & Cream glass

A) Quite clear with a reasonably bright hue. One finger head fizzles to a slight layer. Pretty color and nice clarity.

S) Pleasantly restrained aroma with enjoyable subtleties. Very clean for a gueuze. Soft tones of oak sit atop. Apple and pear mix with citric hop notes. Hints of grass and a floral suggestion. Faint earthy undertones round it out. Musty without being particularly funky.

T) Tastes tangy and tart with crisp apple notes. Quite fruity. A good swirl or two draws forth funky tones of musty oak, antiques stores and cheese. Dry with a tart, sour twinge throughout.

M) Dry, light and crisp feel. Carbonation is higher than I prefer but it adds some crackle that manages not to trump the flavors.

D) Perhaps not the most proper take on the style, it is very tasty and does subtlety full justice. (897 characters)

A hazy golden orange with loads of tiny suspended particles being moved around by some pin prick bubbles that produce a sort lived head that leaves no lace, on par for the style

S funky as all hell with some lemon and almost smells like a big oaked chard with the vinous notes and wood

T some cereal on top of what smell, very dry and funky with some sour apple

M very tart with quite the pucker too it but smooth at the same time if that makes any sense, thicker then expected and just a few pinprick bubbles give it a little life

O pretty straight forward but great if you the funk, I might be tasting this tomorrow at this rate

I'm still a rookie in the world of lambic's but slowly I'm learning what I like, thanks Adam for bring this by (801 characters)

Dry hopped with Hallertau

APPEARANCE: Pours a one finger, medium looking, white head with good retention. Head slowly fades to a nice full wisp. A cloudy carrot orange with medium levels of carbonation evident. Splotchy wisp and ring but no lacing down the glass.

SMELL: Tart lemon, green apples, light notes of vinegar and some floral hop notes. Touches of oak as well. Mild but nice.

TASTE: Quite sour and acidic up front, with lemon and vinegar through the middle into the swallow. Very little funk, but some bitter floral hops and light oak flavors accompany the tart lemon and sourness in the mild finish. Pretty clean and crisp, and increadibly easy to drink.

PALATE: Medium body and medium levels of carbonation. Light on the palate, creamy as well, goes down smooth and finishes dry but not overly puckering. Very nice and refreshing.

OVERALL: This is great. I'm not all that experienced with gueuze yet, but this is one of the more approachable I've found so far. The sourness is balanced well with the hop bitterness, and the feel is creamy and crisp at the finish, making this absurdly easy to finish quickly. A very nice gueuze I will gladly drink again, especially on a hot summer's day like today. Recommended. (1,332 characters)

A - hazy gold straw, delightful pillowy head.

S - muted, moderate funk, vinegar.

T - vinous, tart, hoppy, dry finish. Oak to the fore. Quite a light flavour overall. Not too sour, either.

M - quite light carbonation, smooth.

O - not certain if this is my favourite Cantillon due to dryness and oak, but still a top drop. Brilliant match with blue cheese. (358 characters)

Bottle of Cuvée Saint-Gilloise, vintage 2011. Shared by mdaschaf, thank you sir! Served into a tulip glass.

A: Hazy bright golden sunset orange body with a rocky, foamy white head. Retention was decent but the lacing was a bit lacking. Nothing really out of the ordinary for the style.

S: Odd funk, very musty and dank smelling. Faint citrus notes orange and lemon peel. A bit grainy towards the back, just an overall strange smelling Gueuze.

T: Much better than the aroma, thankfully. Bright citrusy funk is up front and through the mid-palate. Through and through the classic funk character moves bringing in some minor tartness along with it. Refreshing, tasty and certainly hits all the marks for what it is.

M: Highly carbonated, again without much of a "pop" from the cork. Dry like I normally get but it's not overboard. Plenty of bubbles on the palate.

I enjoyed this one quite a bit. The aroma didn't set the bar high but the taste came through. Cantillon does it once again. (990 characters)

750ml corked and capped bottle poured into a hill farmstead tulip. Bottled 02 November 2011, labeled Cuvée Saint-Gilloise.

Pours a slightly hazy yellow miner with a very small white ring of foam. Nose is slightly hoppy, bitter, tart, and very crisp.

Taste is much happier than the other Cantillon beers I've had, which is really nice with the tart Cantillon funk. Taste is classic Cantillon tart and funk, a bit fruity with a dry finish. Mouthfeel is crisp and dry. Very good beer. (484 characters)

Reminds me of the skin of a pear multi colored and even looks fuzzy and opaque. a small slightly off white head last quite a few minutes.

Tart fruits and berries with a good fresh earthy grassy hop character. Just a great effervescence with a bit of a funky character.

Nice tart front and finish but things seem thin in the middle. Slight acidity with a plethora of fruits, starfruit, stonefruits, some berry flavors, hints of wood and tannin with a nice hop bitterness on the finish with a bit of the grassy and earthness throughout. (537 characters)

Enjoyed a bottle of this at a recent bottle share. Cuvee Saint-Gilloise (Champions) is a solid example of the style and one that I enjoyed. Good stuff! (151 characters)

Big thanks goes out to MSquared2 for sharing this one during a fair sized Cantillon tasting! 2011 Vintage! Served from bottle into a Cantillon balloon. Poured fluorescent orange with a minimal white head. Maintained excellent lacing throughout the glass. The aroma was comprised of sweet malt, fruit, fruit hop, funk, tart, and herbal. The flavor was of sweet malt, fruit, fruit hop, funk, wood, sour, spice, and herbal. It had a light feel on the palate with high carbonation. Overall this was a good brew. The hop character on this one really added a very unique touch to this style that I never would have thought possible. The fruit hoppiness really blended quite well with this brew and kept me interested after each sip. This could be a good gateway for some who like fruity hops and want to get into sours. Will be interesting to see what some age does to this brew as the hops start to fade. But as is, this is still a very solid brew. (943 characters)

A 750 mL corked and capped bottle with '2008' stamped on the cork.

A: The ale is an apple juice yellow, hazed up by both temperature and sediment from the bottle. The current mugginess is making the glass very sweaty with condensation. A small white head arose on pour only to quickly dissapate.

S: The aroma is sharp, tart with citric lemon and grass flavors. A mild hoppiness and cereal grain profile stands out on the back end.

T: The first impression is citrusy tartness, sour but fleeting. On second and third sips, the sourness lasts much longer, well into the last quarter of the sip. Lemon and green apples are dominant behind the tartness. The cereal malts and a stronger than normal hop flavor linger near the end. Sweet fruits fill the void near the end, but the lasting memory is more citric tartness. A nice beer for a warm day.

M: The lemony mouthfeel is tart but not astringent. A grassy mint and lemon aftertaste doesn't overpower.

D: At 5% or so, this is a very easy sipper, which explains why this first glass took all of 20 minutes to get through. (1,071 characters)

Bottle: Poured a hazy golden color lambic with a medium foamy head with good retention and some lacing. Aroma of funk and barnyard with some dry hoppy notes. Taste is also a funky mix with medium barnyard notes with well balanced tart and acidic notes and a dry European hops finish. Body is quite full with average carbonation. Very well brewed with hoppy notes mixing quite well with the tartness and acidity. (411 characters)

Had this on tap at Novare Res earlier in the summer, and I've seen bottles around recently as well. Poured a hazy golden with a light head and lacing, which is fine for the style. Smells sour and funky with a noticeable band-aid aroma. The taste is similar. The band-aids are just restrained enough to make this enjoyable. Any more flavor from that department would just make this too challenging. Sour, but more horse-blanket funk than sourness, but some lemon does start everything off. The mouthfeel is smooth and very tannic. The extreme funkiness, band-aid flavor, and sharp tannins make this a bit challenging. You really better like gueuze to enjoy this brew. I do, but even so, this was pushing the edge of the envelope between great and undrinkable. (758 characters)

A: poured a hazy yellow that had a finger head and some good sticky lacing.

S: up front hits acidic lemons with slight oaky notes and slight hay like funk.

T: lots of lemon tartness that reminded me of the cantillon iris. Like the nose it also had slight oaky funky flavors going on in the mix.

M: meduim body with good carbonstion to accent the taste with a dry finish that cleansed the palate.

D: very good beer by cantillon but not my favorite from them, too expensive for what it is at $35 bucks. The iris comes close to the overall characteristic and is almost half the price of this one. (597 characters)
