Pungent and deeply earthen, the brine character of old lambic meets the youthful zest of sour citrus and a pang of acetic sharpness and plays out fully on the palate from nose to finish.

Cuvee des Champions opens with a rusted haze of deep gold with orange highlights. Allowing only a diffused glow from behind, the beer carries a mystic semi-opaque appearance beneath a fluffed head off eggshell white which stands tall throughout the session but with minimal lace. Eventually, the low pH gets the best of the beer.

Surprisingly tart and complex aromas flood the olfactory senses with wave after wave of varying scents that stands off that first sip until the nose first becomes comfortable with the pungent aromas. Sour grapes, lime, grapefruit pith, light vinegar, crab apples and bruised fruit rise in those early visits to the glass. But becoming acclimated to the aromatic matrix more robust notes arise in the shape of wet hay, leather, dried tobacco, weathered oak, sandalwood, horse hair, mushroom and sea air. The beer takes the nose on quite a journey even before the first sip is taken.

But then the intense pang of sourness penetrates the soft tissues of the mouth with ease, bringing with it the fruity sourness of white wine must, dried limes, and complementing bitterness of white grapefruit. What follows is a mid palate of dry woody, husky malt taste that pins against the taste of straw and hay from hops. And then the long a drawn out finish reveals the more mature lambic taste of leather, sea brine, tobacco, worn oak, copper, mushroom, and light Stilton cheese. Despite the clean lactic sourness closes the beer suddenly and sharply, the aftertaste of maturity lasts seeming indefinitely. But throughout, this becomes one salty gueuze.

To the mouth, the sharp acidity reigns supreme with high astringency that hides behind the taste of sourness and bitterness in much the same way as does grape skins and raspberry seeds. The salty taste informs the skim malt underpinnings and provides just enough texture for the carbonation to reside; giving the beer slight creaminess at first but sparkling wine sprite at mid palate. Powdery-dry to finish, the notion of old dried woods return with tannin and alcohol evaporation.

Cantillon delivers once again a superior gueuze that takes the palate in all sorts of directions at once. As complex as the beer is, so many flavors reveal at once that is seems to confuse the nose and palate as much as it satisfies them. It's akin to that Picasso that's awe inspiring in the gallery but you don't want hanging in your home.

Presentation: Typical 750ml Cantillon dimpled base green glass bottle comes with a fully impressed cork and large brass crown cap, all this is covered in a thick black foil that covers the slender neck for about 3”.

A limited release to celebrate the fact that the local Football Team called Royale Union Saint-Gilloise (hence the USG symbol and the striking yellow and blue colored label) were Champions of Division 3B after the 2003-04 Season and that they therefore gained promotion to the Second Division.

Listed at 5% Alc. Vol., the ‘Cuvée des Champions 2003-2204’ is a very unusual 100% Gueuze-lambic in that it is a blend of only two year lambics; the young spritzy one year and aged three year lambic typical of more traditional Gueuze-lambics are both missing. Rumor is that the two year old lambics were personally by Jean-Pierre Van Roy (as opposed to his Son who is now the brewmaster) and then dry-hopped prior to blending.

Cork was in great condition and dated “Botteld 2.004”.

Appearance: As always for these sorts of special occasions, my ever trusty straight sided Cantillon tumbler was thoroughly cleaned and dried prior to being used. On the pour a highly audible fizzing off-white head vibrantly dissolves & decays before your very eyes in a few seconds leaving a very small but virulent tiny head which leaves only the barest amount of bubbles. Golden yellow it has some light brown hints that give the appearance of a watered down Lipton’s Iced Tea at times. Gentle swirls remind you that this is not flat, but that it dos have some inherent carbonation, but it takes some teasing out.

Nose: Sharp acidic pungent aromas pull you deep into the Cantillon tumbler. Rounded funky farmyard traits with some savage urine and damp hay lingers in amongst some old fruity yet aged hops.

Taste: Gosh, it’s always great to be assaulted by Cantillon. The CdC has some smooth qualities despite its shockingly acerbic character. The Gueuze character is definitely here; sharp, biting, mouth-puckering and distinctly ‘in yer face’, yet the dry-hopped nature of the two year old lambic adds a balance to the normally more aggressive “younger” versions. Solid Gueuze which has been taken down a peg or two but with a nice juicy aged hop character to balance for that.

Mouthfeel: Low key carbonation is a direct result of lacking the urban young upstart the one year old lambic, yet nevertheless I do love the flatter feel once in a while. Still has a nice puckering feel at the death.

Drinkability: I find it hard to judge this objectively for I love lambics and I find the more traditional versions all the more quaffable. Not a drop was spilled. Easily a Session brew for the satanically minded lambic-lovers but in the general scheme of things I think a 4.5 is a fair drop of the hat here.

Overall: I thoroughly enjoyed this ‘special release’ Cantillon which I thought I would never get to taste. A seriously Big Thanks goes out to the awesome Beerica-weizen for the opportunity to try this one! I owe ya!!

A - Slightly hazy golden with a thin white head that falls quickly to a ring of lace.

S - Sour and acidic with lemon in the background. Every few sniffs would produce a dirty barnyard/horse blanket aroma.

T - Sour and sharply acidic. A bit of sweetness after the sourness takes away some of the acidic sting. Herbal and floral with some lemon thrown in.

M - Medium mouthfeel with a sharpness from the acidity and a dry finish.

D - This one got better with each sip.

A- Hazy golden yellow with three finger white head.

S- Funky, some citrusy and earthy hops, somewhat sour.

T- Tart, tea like taste, oak, green apples, touch of funk, some lemons.

M- Smooth, crisp, light body, dry.

O- Very drinkable and tasty. Not that complex but very well balanced. It could have a big nose and taste but it is really a treat.

Finally, finally I get a crack at Cuvee Saint-Gilloise.

The pour is typical Cantillon Gueuze. Bright yellow, with a thin white head that disappates almost instantly. The nose is full of the sour, juicy, mouth-watering aromas. But there is also a big, citrusy, hop aroma. I couldn't believe how hoppy the nose was. It made for an interesting combo that I had never experienced before.

After my first sip of these beer I was perplexed. Definitely the least sour Cantillon beer I've ever had. Not to say it isn't sour, it certainly is. But the hop bitterness or youth of this beer keeps the pucker factor pretty low. It's absolutely delicious. The restrained tartness really lets some of the other elemnets shine. Dry grain, light brett notes, some tropical fruit. This thing is a gem!

Mouthfeel was spot on. Perfect carbonation and mouthfeel.

Overall, another stellar beer from Cantillon.

From notes. 750 ml bottle, 12 oz sample. Poured a very clear, lightly coppered orange color with a sparse whisp of head over top. After the pour, this one was pretty still, with no bubbles working out of solution. There was no mistaking what this beer was going to be about when smelling it. Tons of sourness hit hard, with a big acidic sharpness. There was mild donkey urined soaked hay acridness, and I'm not sure if this should follow the last statement, but I thought it was very enticing. Flavor really assulted me with sourness on the first sip, that moved to a more vinegar-like sharpness and acidity. There was an odd sharp sweetness in there as well that I could not correlate to anything I was familiar with. Mouthfeel was moderate with a very light carbonation. It left a good bit of stickey spit in my mouth and was moderately dry on the finish. Overall, this was another winner from Cantillon. Very good taste, with a lot of intense flavors like sour and acidity. Not a lot of complexity there, but it really worked for my taste. Good brew.

750ml bottle ('05 vintage) poured into a Weyerbacher tulip; shared at a tasting.

A: Rich, lightly hazy orange body with a finger of very fine head; light lacing. Great looking lambic.

S: Wow, this smells as intense as any beer I've ever experienced. Hugely spicy, hugely funky, and hugely sour. Great.

T: Cantillon goodness. Need I say more? I guess I should. It's super sour, and packed to the brim with complex and totally distinctive funk - mustiness, barnyardiness, mustardseed, lemon, and spice. Fantastic.

M: Light to medium body with ample carbonation. Pleasant.

D: I think I could drink Cantillon forever (cue clip from The Sandlot): for....ev....er.

Notes: Outstanding gratitude has to go out to Matt for generously sharing this treasure. There's just nothing like a well-aged Cantillon to delight the taste buds. I'm so glad I got the chance to try this wonderful lambic - a far better example of the unblended style than the totally flat (albeit tasty) Bruocsella.

8 oz. pour in a wine glass at Ebenezer's Pub in Lovell, Maine .

Solid light caramel color, thin tightly bubbled head. Tart funky fruity nose. Sour apple, immediate dry finish. Super tart and yeasty. Cider vinegar, lingering bitterness in the back of the throat. Thick creamy mouthfeel, with nice carbonation.

A delicious light lambic, that makes you pucker, refreshingly tart, but with an insanely dry finish. Very enjoyable!

Love ending a meal with a Cantillon lambic.

2014 cork date. Poured from a 750mL bottle into a Cantillon taster glass. Acquired in a trade.

Pours a somewhat hazy golden straw body with a two finger slightly fizzy white head that reduces fairly quickly but leaves a layer of retention and no lacing.

Aromas are of typical Cantillon character - upon opening it a funky cheesiness, grassy, musty hay, peppery, tart aromas, citrus, white wine, and a slight hoppiness in the background.

One the tongue is an immediate dry tartness, and borderline sour citrus notes which fades to open up distinct oak / barrel notes, funky yeast, and is followed by pepper, grass, and a muted hoppy bite on the finish. The dry tartness sticks on the tongue for a minute or so. Mouthfeel is medium light, carbonation is medium.

Overall world class, which is not surprising at all coming from Cantillon. Really enjoyed this one, lots of flavor and balance.

On tap at the Rattle n Hum, this one was an 8oz pour.

Cuvee des Chamions pours a mildly hazy orange, lightening to tangerine when backlit. There's a thin white head that dissipates quickly into nothing. The nose is a bit delicate, and it's largely a blend of sweet pale fruits (apricots and peaches) and woody oak notes. There's a faint tart aroma present as well. The sour notes noticeably increase in intensity in the taste. The resulting balance between sweetness, barrel notes, and acidity is just about perfect. It's still not nearly as aggressively tart as some of the other Cantillon offerings I've had, but that only allows the other flavors to really shine through. The body is as dry and light as I'd anticipate from a 5% brew that probably has little in the way of residual sugars, but the carbonation is a pleasant surprise. It doesn't really come alive until mid palate, but when it does a torrent of tiny bubbles appear and liven the beer up. Cuvee des Champions maybe isn't as challenging as Cantillon's other beers, in terms of how much the wild yeast and bacteria have taken over, but it's subtle and artfully balanced. I imagine it would be accessible to someone new to sours/wild ales, but at the same time still has more than enough depth to please a seasoned drinker. My favorite sour to date.

Poured a a semi-hazed straw yellow color with a slight bubbly white head
Oh man, this smelled AMazing! Brilliant mix of melon fruits with grassy, floral hop presence. Some hints of pepper/spiciness, white wine and a bit of lemony citrus.
Taste was nice and tart, but not overly acidic. Earthy hops give way back to the tartness. Get some woodiness as well.
Really dry and crisp mouthfeel.
This is another world-class offering from Cantillon.

I had this beer among a number of sour beers at a sour beer event at Rattle N Hum in Manhattan. It was great to taste so many sour beers side by side and this one really stood out as the gold standard among the many others I tried.

Poured a golden orange with a nice frothy head that left a great deal of belgian lacing behind.

Aroma was of oak as well as some slight fruit and a little bit of sweetness.

Flavor as well featured a combination of wood, sour and sweetness blended together perfectly.

Overall a very good beer that I was glad to try on tap, as I've only had Cantillon beers in bottles.

A- Pours a hazy, really pretty golden color, topped with two fingers of creamy white head, good retention, leaves some spotty lacing.

S- Very funky, hay, apples and some lemon.

T- Very fruity and citric, big lemon flavors, nice funky tartness, floral notes as well, not picking up on a lot of hops in the aroma or flavor.

M- Light, crisp feel, well carbonated, slightly puckering, dry finish.

O- A really excellent beer, this is the only Cantillon gueuze I've had besides their regular Gueuze 100%, and I definitely enjoyed this one just as much, if not more.

Cuvee Saint-Gilloise Bottled on 04 Oct 2010, Opened on 9.25.12.

A - Pours a clear, copper orange with a huge off-white frothy head with amazing retention.

S - Lots of funk, green apples and pears are most noticeable.

T - Nice barnyard funk, then some tart lemon, apples, pears, and hay.

D - Tons of carbonation with a light body. A crisp light finish on the tongue.

O - More muted, but I love the apple/pear flavors that dominate.

Pours a lightly cloudy orange amber, thin white head forms, quickly disappears but drops some spots on the glass. Smell is insane, woody, crazy acidic, very lemony, hay, funky and sour, almost a grapefruit or tangerine acidity going on, touch of vinegar, pretty awesome. Taste is just as good, for woody and acidic, lemons, nectarines, light toasted/ashy oak, funk, very sour in the finish, but pleasant and balanced. Mouthfeel is light bodied with low carbonation, very drinkable stuff. Damn this was a good lambic, thanks Scotty!

2008 Vintage. Pours light hazy straw yellowish orange with a large white and pillowy head. Retention is good.

The aroma has the signature Cantillon Brett funk, but it's more restrained here, and notes of citrus seem more prominent than usual. Lemon is strong, as well as some orange and light floral notes. The Brett is musty with lesser notes of barnyard and horsey. The malt profile is light, with some graininess.

The flavor is of tart citrus in the form of lemon and grapefruit. Bitterness is at a low-medium level. Brett provides some funk but it's restrained, as it was in the aroma. Mustiness is apparent as well as a little cheesiness. The finish is very, very dry, with moderate acidity and a nice level of tartness.

Light bodied, effervescent. The mouthfeel is very dry. This is insanely drinkable. This was split 3 ways but finishing an entire 750ml alone would be very easy.

Clear brass, coated with a thin white mist. Hyperactive carbonation streamers. Satisfyingly funky aroma. Fruity and quite tart, with lemony and green apple sourness. Farmy, musty and deliciously odd. The first sip reveals that signature puckering sourness. Quite funky, with a pervasive lemony feel. Moldy and bacterial, with nuances of wet wool, damp basement, rotting vegetables and rat cage, all held together with a peculiar sharpness in the finish, somewhere between chewing on aspirin and flower petals. A hint of medicinal phenols. Green apple tartness, like sour candy. Lemony overall, and deliciously strange. Light bodied, with champagne-esque carbonation.
This brewery is proving itself to be outstanding in my eyes. Everything I've tried from them has been solid and unique. Always in the same style, of course, but each has it's own personality. This one's no different.

Pours a hazy, golden-amber body with an effervescent 1cm white head with excellent retention. Looks like a Cantillon lambic to me.

It smells so musty, its ridiculous. Like an old attic.. kind of like Brasserie Cantillon's attic! It smells quite a bit different than the Classic.. but has more of the pears and an earthy, floral smell which I imagine is from the dry hopping. Pretty intense aroma without much indication of vinegar or lactate.

This was way more sour than the Vigneronne and Saint Lamvinus, up there with Blabaer and Fou' Foune. It tastes so much different than the Classic. Its cleaner, more crisp while bringing a mustier quality with more of pears and oak. There is a nice tartness on top of the vinegary sourness. I don't get much of the florals here that I did in the nose; really I can't tell that its been dry-hopped. Still, I really appreciate the difference in this Cantillon from some of the other ones I've had.

Such a crisp, dry, refreshing beer. Its not as crisp like Vigneronne was, but it is crisp in the sense that the lambic flavours just pop out more. Very enjoyable, really refreshing. Rather sour, very clean and enjoyable.

Clean, crisp and musty. Highly recommend to any sour head. This is a really good lambic and a nice change-up from many of the other Cantillons out there that have the classic brewery funk all over them.

Re-review (18 months): Had this one again, from the same November 2012 vintage. Poured into a Cantillon stemmed glass today, 4/1/2014. So a year and a half of age. Basically, I found this to be significantly better than at 11 months of age. The floral aspects have faded and there is a much more lemon zesty, white vinous quality to the beer. I could be fooled into thinking this had some white grapes, especially accompanied by the oak and mustiness. Clear Cantillon barnyard horseblanket funk that's developed a good bit in the past few months. Really good stuff, especially as the vinous qualities seem to have developed in this beer somehow.

750ml bottle. 2013 vintage. Aroma-wow, lots of funk, citrus, bleu cheese, pepper. A lot going on here. Poured a hazy straw color with no head, minimal carbonation. Taste-again, wow. Sour, tart, funky, mild citrus sweetness. As it warms flavors of spice and white pepper peek through. Finish stayed with me for hours. Lucky to try this. Simply amazing.

Appearance: Pours a pale, extremely clear straw color, with 2.5" of eggshell white head. Retention is excellent, lacing is okay.

Smell: Smells of white grapes, green apples and pears, with horseblanket, grassiness, and brett funk following. Mostly tart, but maybe a touch sour. Lots of complexity and layers.

Taste: Ditto smell. Nice white grape and pear flavors initially. Funk, hay and tartness follow. Perhaps a bit more sourness on the palate than on the nose, but still not overly sour.

Appearance: Light bodied, high carbonation, very sprizty on the palate. Finish is drying and very refreshing. Overall, a very solid gueuze. Complex, not overly sour (not necessarily a good or a bad thing for me), and nice hop character.

pours a light gold color with a big white head. the nose is sour with aromas of wood in there. the taste is very earthy, oaky, mellow sourness, some lemons. medium body, dry dry beer.

Another near flawless offering from one of the best Lambic Brewers in the world. Pours a beautiful golden hue with a lily white 2 finger head. Great funk and earthiness complimented by a hint of bitterness from the dry hopping. Great lambic and the standard of the style.

2010 bottling

A: bright orange and gold color with a fluffy champagne like head that has a layer which lingers at the top that is about a quarter inch thick. It is cloudy and looks quite a bit like a DIPA

S: Very nice tart lemon smell along with hints of melon and apricot. the hoppiness is floral and earthy. notes of vanilla and wood

T: A bit of a cheesy flavor back by some tart lemon and melon flavors. oak and funky become more prominent in the background a bit more acidity comes through as it warms.

M: Crisp refreshing feel. not to heavily acidic and no harsh vinegar notes

D: very quaffable and the fruity aspects make it very easy to casually sip throughout the day

Cracked this open to celebrate the overturning of Prop 8, to the tune of We Are the Champions with some friends.

A: Yellow/orange with a white ring of head.

S: Nose has a lot of Belgian funk, tropical fruit and lemon, maybe a touch of orange.

T: Lemon, funk, orange, tropical fruit and raspberry.

O: One of the better sours I've had. I payed something like $45 for a 2011 in 2013.

Finally conquered one of the elusive Cantillons

A-Hazy orange color with a pearly white head with great lacing.

S- Smells of citrus fruits, mainly grapefruit, and dryness. Smells awesome as all Cantillons have that unique aroma to them.

T-Holy shit what a great flavor. Just like the nose, lots of grapefruit and drys out quickly. Literally no residual flavor on this one, has to be the cleanest finish ive ever had on a beer, which is wild considering its a lambik.

M- Great mouthfeel, light on the palate with a decent carbonation. Finish is incredible, nothing compares to it.

O- Once again Cantillon has managed to make my jaw fall to the floor.
