A - Pours a hazy honey amber colour with frothy white head that dissipates fairly quickly

S - Aged cheese, lemon tart, apple, almost vinegar like

T - Lots of lemon tartness up front, earthy grassiness, light floral hops. Slightly sour but not over the top with a slightly dry finish. Amazing for a beer.

M - Lightly bodied with medium carbonation

O - Very enjoyable geuze that goes down very well.

750ml bottle from the 2012 vintage, generously shared by thedarkestlord at our crazy bottleshare last night, 10/5/2013. This came after drinking Vigneronne and Saint Lamvinus.

Pours a hazy, golden-amber body with an effervescent 1cm white head with excellent retention. Looks like a Cantillon lambic to me.

It smells so musty, its ridiculous. Like an old attic.. kind of like Brasserie Cantillon's attic! It smells quite a bit different than the Classic.. but has more of the pears and an earthy, floral smell which I imagine is from the dry hopping. Pretty intense aroma without much indication of vinegar or lactate.

This was way more sour than the Vigneronne and Saint Lamvinus, up there with Blabaer and Fou' Foune. It tastes so much different than the Classic. Its cleaner, more crisp while bringing a mustier quality with more of pears and oak. There is a nice tartness on top of the vinegary sourness. I don't get much of the florals here that I did in the nose; really I can't tell that its been dry-hopped. Still, I really appreciate the difference in this Cantillon from some of the other ones I've had.

Such a crisp, dry, refreshing beer. Its not as crisp like Vigneronne was, but it is crisp in the sense that the lambic flavours just pop out more. Very enjoyable, really refreshing. Rather sour, very clean and enjoyable.

Clean, crisp and musty. Highly recommend to any sour head. This is a really good lambic and a nice change-up from many of the other Cantillons out there that have the classic brewery funk all over them.

Re-review (18 months): Had this one again, from the same November 2012 vintage. Poured into a Cantillon stemmed glass today, 4/1/2014. So a year and a half of age. Basically, I found this to be significantly better than at 11 months of age. The floral aspects have faded and there is a much more lemon zesty, white vinous quality to the beer. I could be fooled into thinking this had some white grapes, especially accompanied by the oak and mustiness. Clear Cantillon barnyard horseblanket funk that's developed a good bit in the past few months. Really good stuff, especially as the vinous qualities seem to have developed in this beer somehow.

Gueuze-a-palooza 10/8/11; poured into an E&J Cask & Cream glass

A) Quite clear with a reasonably bright hue. One finger head fizzles to a slight layer. Pretty color and nice clarity.

S) Pleasantly restrained aroma with enjoyable subtleties. Very clean for a gueuze. Soft tones of oak sit atop. Apple and pear mix with citric hop notes. Hints of grass and a floral suggestion. Faint earthy undertones round it out. Musty without being particularly funky.

T) Tastes tangy and tart with crisp apple notes. Quite fruity. A good swirl or two draws forth funky tones of musty oak, antiques stores and cheese. Dry with a tart, sour twinge throughout.

M) Dry, light and crisp feel. Carbonation is higher than I prefer but it adds some crackle that manages not to trump the flavors.

D) Perhaps not the most proper take on the style, it is very tasty and does subtlety full justice.

Pours a hazy light amber with a foamy, shortlived head. Lots of lace trails drape the glass on the way down. Acidity, restrained funk and cheesy hops fill the nose. Acidity lingers in the nostrils for a good while. The taste is huge sourness, but not quite as puckering as the Cantillon Geueze. Lemon, barnyard funk, gym socks, some vinegar and some tea(?) notes mingle together. Hugely complex and enigmatic. The mouthfeel is briskly carbonated, almost like a champagne. Finishes sour and earthy with a lingering citric edge.

This is an excellent lambic, apparently straight 2 year. The differences between a standard gueueze are apparent - a bit less funk depth and south intensity - but still stupidly quaffable and complex. Another must try from Cantillon.
