Hazy amber with a medium head, ok retention, ok lacing. Funky (manure), musty and slightly acidic aroma. Clean and mildly tart taste; wine notes come through (grape peel) and dry white wine tannins linger.

Mouthfeel is good as with all Cantillon, light and dry. One of my favorite 'loons.

i had the esteemed pleasure of having this on tap and in a bottle just one day apart, which is not only a rare treat, but something to almost feel guilty about, beer this sought after and all, but i am thankful and will remain that way. this beer, for carrying so much hype, isnt as distinct as i expected it to be, and in fact is an awful lot like the classic gueuze itself. i think the grapes are a little more vibrant in the on tap version, but the properties of both are quite similar honestly. the bottle pours hazy golden, still looking, but with a short white head. as per cantillon usual, there is as much funk as there is sour here, tons of musty oak in the nose, and i get the lambic part of it long before i get any fruit. the fruit is a little more dramatic in the flavor than the nose, and has a sweetness to it. more of a riesling thing to me than a muscat one, although i dont drink a ton of white wine, i get that vibe from it. the oak is nice on it, really robust and mellowing, and the sourness too is tempered by it. tart for sure, especially in the finish, mouth watering like crazy, but the fruit doesnt add as much to it as either of the berry beers they do, and certainly not as interesting as the elderflower mamouche i had earlier in the week. its hard when comparing so many world class sour beers, but for me, the fruit is lost a little in this one, not as radiant and memorable as others they make. i love the complexity and the ancient feel to this, how truly high quality it is is certainly obvious, but im not sure the grapes make it any more special than the lambic is in isolation. nice dry but mouth watering finish, good acidity, and maybe a touch undercarbed. overall outstanding beer, but not my favorite cantillon brew by any measure.

Pours a hazy golden straw body with surprisingly less effervescence than other Cantillons. Lacing is thicker and retains very well. This is a very pretty, light-coloured sour compared to the others I've had.

Compared to Cuvée St-Gilloise, this has a lot more of the classic musty Brasserie funk that I get in the Classic.. although not as full-bore as the Classic is. I love it, some people hate it but its such an unique smell that I've come to enjoy very much. The nice thing about this is that there are this crisp, tart grape notes that smells so incredibly refreshing. Smells somewhat sour, mostly vinegar.

This isn't the most sour Cantillon out there, but it is probably the most refreshing one I've had. It's sour, but also has a very nice tartness to it, which I imagine are from the grapes. A bit of lemon acidity, white grape tartness all complementing the horse blanket funk of the base lambic. Its a very clean beer with a lot of different, yet complementary flavours.

Lighter body, very well-carbonated, easy to drink with a dry, tart grape-y finish. Gets some more acidity as the beer warms up.

An enjoyable one to drink. I came into this one not expecting too much out of this Cantillon, but this one definitely exceeded expectations. So clean, crisp, sour, funky and fruity all in once. I highly recommend this one!

Pours a spritzy orange with a nice rocky head that really didnt leave much lace at all,whoa the funk like sitting in a barn with this bad boy I also picked up some oak and vanilla but the funk was hard core,My mouth is still puckering from this stuff full tilt sour and musty like intensly concentrated lemon pith and a wet basement.Not my cup of tea this will be my last foray into Cantillon brews this one is most intense in my opinion.

On tap at Maduro. $4 for about ounces served in a white wine glass.

Appearance: Carbonationless bright gold. No head. Mildly cloudy.

Aroma: Malt vinegar, relatively subdued farmyard characteristics, lemongrass, must, and light hints of citrus.

Taste: Pleasant citric and vinegar notes. Light grape skin flavors. Lemon vinegar (is there such a thing?).

Mouthfeel: Sharp and acidic. Completely flat (is it supposed to be this way?), much more like wine than beer. Perhaps that is the goal...tart and sour but not to the extent o geuze or most craft lambics. The sourness is softer. Not bad and very dry.

Drinkability: Surprisingly, I'm not that excited about this. It's a little light on the funk for a funky/sour beer, and light on the sugar and flavor for a vinegary/tart beer. It's very subtle. I suppose if I wanted to I could session this but it's not quite my thing.

Update: April 2008...after a little more than a month in the barrel this beer has developed a subtle carbonation improves drinkability and in some ways appearance. The acidity seems softened by it.

A: Hazy yellow with golden orange hues. A very small white head that settles quickly into a ring of lacings.

S: Fruity aromas with a subtle grape character. Slightly funky with notes of barnyard, mud, horse blanket and hay. Some vinegar and notes of tart peaches.

T: Quite sour. Notes of grapes and grape skins. Light sweetness, gentle wheat character. A minimal grassy bitterness in the mouth. Very sour in the middle. Pleasant barrel aged character blended with fruit pits. Funky notes of wet hay and mud. Plenty of grass and yeast. The finish is tart with notes of fruit and chestnuts.

M: Medium body with a dry finish. Very nice.

D: A very good beer. Unfortunately, the bottle was cellared for a couple of so the taste of grapes was on the decline, but still very good.

Enjoyed another wonderful Cantillon with kmpitz2 and just ran across my notes. Golden yellow orange pour with not much of a head..just a fizzy big bubbly top to it. Brighty and shining in the glass. Before I even put my nose near the glass I get a blast of big, funky barnyard aromas. This is followed by a nice dose of vinegar, yeast and grains. You can smell this a mile away and it nearly burns the nostrils. Extremely acidic tones with just a hint of grape in the undercurrent. Damn.

First sip brings an upfront sour grainy fruitiness with a hint of lemon and white grape. The vinegar acidity very present along with some mouth puckering sourness...quite dry overall. Funky, horse blanket makes itself known on the way down and lingers slightly. Another intriguing Cantillon that shows the wonders of spontaneous fermentation.

Mouthfeel is light and airy with a good flow of bubbles throughout. Lovely mouth puckering goodness. A 750ml bottle that is very enjoyable when shared with a friend, as the whole bottle may be a bit much. A wonderful taste exeperience overall that shouldn't be missed...thanks to marburg for this one.

Thanks to the Beer Guy at McKean and Charles in Waldoboro for getting this (and then saving it a few weks until I could get up there). This was a 750ml bottle, bottled 30Oct06, and was served in a tulip glass. Nice orange color with a tiny head that dissipates quickly. Very still. It had the aroma of peaches. The taste was sour fruit, and was very acidic. Quite a dry beer, and quite enjoyable. Share it with a friend and pucker up.

This is an astonishing beer. It is truly like nothing I've ever tasted before. I'm very glad I've had it, but to be honest I doubt I'll ever drink it again. It's a very good beer, but it's kind of like seeing the movie American History X... it's a huge accomplishment, it's brilliantly done but you're rather not have to go through that experience again.

The aromas assault you as soon as you open the beer. Horseblanket? Try outhouse or feedlot on a sunny day. Wow!! There is some serious yeasty funk going on here!!

First pour shows a pretty gorgeous coppery orange. There are noticable variations in the colour from the out of control carbonation and the clouds of tiny floaters. Head is rather thin, but forms an excellent sticky lace.

Once poured, the aromas are still dominated by barnyard odors, but now there are some nice toasty oat notes as well as a noticably grapey touch.

The first sip of this beer is a shock. Your teeth stick to your lips and it is as if there is suddenly no spit left in your body. Tart is a true understatement here. Tart and intensly tanic as well. The tartness then begins to fade a bit, and other flavours reveal themselves. Some yeast and funk peek their heads out to say "yes, this really is a lambic after all." There is a nice soft body, a bit heavier than some lambics despite the carbonation. The finish is thinner and is still dominated by the tartness, but now there are strong grape notes and even some tropical fruit.

Incredible flavours, Incredible experience. I honestly didn't think I was going to be able to drink this at first - but it just became more and more interesting to me. This is a seriously challenging beer. But it's worth the effort to experience something as totally different as this is.

Pours a slightly hazy golden straw with half an inch of bubbly white head that fades quickly into some wisps and a medium collar. Aroma is dry oakiness, white wine-like and a good earthiness. Taste is tart grapes, some vanilla and oak. High carbonation and low-medium body. Very tart overall and the grape plays a decent second string.

750 ml bottle, capped and corked, with the top encased in black foil. 2003 vintage according to the stamped date on the cork. Lambic aromas begin spewing forth as soon as it is uncapped, even before the cork is removed. After a run of sampling some less than stellar beers, this one is a pleasant eye opener.
Appearance: Hazy tangerine hued body with a shortlived offwhite head. Enormous carbonation apparent in the goblet. No lacing.
Aroma: Sour and musty notes immediately take you aback. Chicken house yeasty funkiness assaults the senses. Very woodsy, possibly from the partially oxidized cork, but some oak shavings suggest cask aging. Slightly vinous note of white grapes and plenty of acidic vinegary tartness jump about the nostrils. Muted note of floral and grassy hops.
Mouthfeel: Slap your face acidic tartness is dominant. Light bodied, with good carbonation that softens as it warms.
Taste: Superb Lambic complexities abound. Tartly fruity, sour, acidic, vinegar like. Oak wood tones are also assertive. A hint of sour cherries briefly suggests a good Flanders Red, but fade into lemony grapes. Musty, spiderweb encrusted, dank attic mustiness replaces the funky dried chicken droppings of the aroma. The musty yeastiness is present all the way through. Tastes as if someone sneaked into the room and squirted the juice of a fresh lemon into the goblet. Wow! This is a tart and acidic brew. Very wild and earthy. Some oxidation in this one, but it seems to belong.
Drinkability: Bracing and invigorating, supremely complex. A classic Lambic that is a genuine work of the brewer's art. Highly recommended.

Appearance: orange/yellow in color, cloudy, minimal head

Smell: sour mix and apple cider

Taste: sour mix, grapes, and green apples

Mouthfeel: very sour with sweetness in the background to mellow the taste some, tart, light body with low carbonation

Drinkability: One of the better Cantillon sours I have had. The initial taste is very mouth puckering. The apple and grape tones mix well with the sourness. I would drink several glasses of this if I knew my body could handle this.

Murky yellow color with very little head. Aroma was sour, similar to vinegar (surprise surprise), and had a bit of astringency similar to grape skins. Tasted like sour, dry, grape skins and a bit of other funk. Light body and very little carbonation. This beer was on tap at the Maduro. I think I like it better than my score indicates, but it is what it is.

The beer pours a slightly hazy golden color with a few bubbles, but no real head. The aroma is very sour with some oak notes mixed in. The flavor is very tart grapes along with some oak. There are some vinegar components. This beer is very similar to white wine. The beer is very dry. Very low carbonation and the beer has a thin-medium mouthfeel. The beer is extremely drinkable.

On tap poured into an 8oz flute at Ebenezer's pub during the 6th annual Belgian Beer fest.

Pours a hazy pale straw color with no head at all. Nose is funky, sweet and a bit fruity. I ordered this thinking it was Saint Lamvinus so I was thrown off at first.

Taste is sweet, funky and quite grapey. It's very tart and puckering. Fairly light mouthfeel but nice sharp carbonation. Quite drinkable for a sour because it doesn't really have that horse blanket taste to it.

Hazy golden yellow and slight orange with a small, near-white head that falls away quickly. This leaves irregular, webbed lacing down the glass. Unspectacular, but appropriate.

This has an explosive, bright, and vibrant aroma. There's lot of earthy funk, lots of tart lemon, big sour notes, along with some mild apple and white grape. Incredible.

The flavor is just as stellar, with the lemon, apple, and grape characters combining incredibly well, backed up and complemented by huge levels of sourness, and earthy, damp basement funk.

Medium bodied with low to moderate carbonation.

Fantastic.

Received this as a birthday present from the wonderful girlfriend!

Appearance- Pours a murky, dark straw color out of the bottle with a minimal sheet of white head across the top of the beer. Dies back almost immediately to nothing, though some evidence of carbonation beading up throughout the body.

Smell- Very funky and vinous. Smells heavily of barnyard and some musty hay. Much more funk action going on than I was expecting, even more noticeable than the grape addition. Furthermore, a bit of sweaty leather and along with this I smell for the first time what I think individuals would identify as "cat piss" in a lambic. Very odd, I don't consider it to be a bad smell but rather indicative of a unique funkiness.

Taste- Lactic tartness up front of the order of green grapes and lemon zest. A healthy amount of noticeable funk and barnyard. Less leather and no discernible "cat piss" in the flavor profile however. More of what I expect of funk. A very interesting flavor overall and though tart, it isn't overly tart for a Cantillon and goes down quite easy. Interesting.

Mouthfeel/Drinkability- Mouthfeel is pretty spot on for the style, being a bit thin and moderately carbonated. Drinkability is also pretty high given that the tartness of the beer is fairly rounded out.

Overall, another very good offering from Cantillon. However, I would say it is not my favorite of their lineup for sure. Worth a shot but I even prefer the Classic amongst others

This beer is a hazy tan with a good bit of carbonation and fluffy head. The beer smells smokey and meaty with a good bit of funk. There is lots of tart lemon, and grapeskin in the finish. A little horsey with dry bitter mineral finish. The beer is light and dances on your tongue.

A cap and a cork...poured into a wine glass. Hazy medium peach color, whitish carbonation sticking to the glass margins. Pungent aroma, winey and grapey with a goat cheese sharpness. Forget the blanket, this is the horse's stall. Jeez, another astringent killer from the Lambic masters, tart beyond description with lots of yeasty earthy mustiness to accompany it, with an early blast of acidity that lingers to the stomach. Dryer than the Gobi. You can still taste the flavor the next morning. If the Muscat grapes are overwhelmed as a separate element -- its understandable to my mind. Gawd, I like having the ability to choose this stuff, even if its like a duel between brew and mouth. Another historical masterpiece from the folks at Cantillon. Drinkable? Well...you have to pick your spots.

Picked this up at Green's on Ponce in Atlanta.

Pours a hazy orange color with a thin and fizzy white head that quickly recedes into a thin ring around the glass. Almost no lacing.

Smells...funky. Huge hits of barnyard funk backed up by tart fruits. It's a bit off-putting at first, but after the second sip I find myself looking forward to it.

Tastes very good. The aroma didn't lead me to believe this beer would make me pucker up as much as it did, but that's certainly the first flavor. After my palate adjusts there are loads of tart fruits that I can't pick out, some funkiness, and underlying hints of grapes that come out after the dry finish.

Mouthfeel is good. It's got a good thickness for the style with active carbonation that brings out the flavors.

Drinkability is good - as long as it's not more than a glass. I'm glad I was sharing this with a few people as I don't know if I'd be able to finish an entire bottle myself. This doesn't mean I don't enjoy it, it's just very powerful.

Overall this is my first foray into Cantillon, and it ensures that I will try more. As long as you know what you're getting into this is well worth a shot.

Pretty interesting stuff, hazy, gold/orange/hay colour, barnyard nose, including hay, horse crap, dust, with a slight hint of grapeskin. Slight sweet tart start, with that classic Cantillon sourness, hints of grapeskins, you can taste the barrel in which it fermenst aswell, very earthy flavour, pretty darn good.

A- This beer has a slight murky deep orange body with a thin ring of white around the rim. There is a very gentle carbonation of one or two bubbles that are visible.
S- The cheese rind brett note is followed by a soft tartness and a nice white grape skin aroma finishes.
T- The light cheese rind flavor has a smooth tartness to follow with a mild white grape tannin note in the finish. There is a nice pucker and a muscat grape note that linger.
M- This beer has a medium-light mouthfeel with a slight slippery texture and no alcohol heat.
D- The bright tartness with the subtle muscat grape flavor and cheese rind work great together. This is easy to drink and crisp and the tartness is smooth enough for another glass.

750ml, capped and corked bottle, the November 2009 vintage - a lambic with wine muscat grapes - sounds good to me, like an obvious "well, we've got a lot of this stuff lying around, let's see what we can do with it". On the label, a star of David sits amongst the raw ingredients in this offering - heads up, He'Brew!

This beer pours a hazy, pale golden yellow colour, with one skinny finger of fizzy dirty white head, which disappears in a mere instant, leaving no remnants, lace or otherwise, anywhere near the glass.

It smells of sour, underripe apples, wheat grain, dusty wood, vinegary, yet still fruity and musky white wine, and a tame barnyard yeast funk. The taste is tart green apple, lemon juice, a softer, more rounded wheat malt, white wine vinegar, weakly funky yeast, faint wood grain, and dead-flower, musty hops.

The carbonation is fairly sedate, just a slight metallic edge, one sort of obfuscated by the inherent acids here, the body on the light side of medium weight, airy, and a bit fruity in its plain smoothness. It finishes dry, tart, and mouth-puckeringly crisp, with just a wee bit of musky white wine esters and 'everything dies' funk.

I'm drawing a reasonably straight parallel to the white wine must that I've got fermenting at the moment - yeasty, sweet and zingy white grape juice, and faint alcohol. The exaggerated tartness is the beer's domain alone. Overall, a nicely drinkable sour lambic, the guest muscat grapes doing well to exhibit their own wares.

Review from notes.

A: Pours a slightly hazy golden color with a small white head that recedes quickly only leaving a very thin ring of white on top. Lacing forms and is gone very quickly from the sides of the glass.

S: Definitely get the muscat grapes, green grapes, some lemon and citrus mixed with a little mustiness. Definitely a tartness as well.

T: Definitely reminds me of white wine with some of the white grape flavors up front. This transitions to a bit more of a tart citrus flavor in the middle with some lemon and a little green apple, very tangy.

M: Medium bodied with medium to high carbonation.

O: Another fantastic beer from Cantillon, I just can't get enough.

750ml bottle, split within a few people...served in various Chalice's

A - pours with a thin layer of loose white film...the beer is progressively more cloudy towards the bottom of the bottle (I sampled through the entire thing) and urine yellow in color.

S - vineous...with some subtle farmyard funk. assertive acidic vinegar and tartness. light fruitiness in the second half: green grapes and pears.

T - sharp acidic and sourness attacks the back ends of the tongue. some tart fruits, lemon and lime. bordering metallic before the grapes really come to life, mellowing everything out with a pleasant sweetness.

M - medium bodied with light carbonation, would like just a bit more as it become a bit of a chore to drink as the glasses went down and it warmed.

D - overall good, but not anywhere near my favorite Cantillons or even any other fruit lambics. the metalallic taste was really only held in check towards the bottom of the bottle as the dregs sourness cut in.
