2005 vintage bottle pulled out by surprise at our tasting last night. This is officially my very first Cantillon ever and I have to say this is the way to do it.

Now, I thought the A&T that we had the same night before this was funky, but seriously step the fuck out of the way and make way for this beer. Damn brah, this is the funkiest of the funk. Very little presence of the wine form the barrel this beer spent time in. You do get a little of that oak, and slight citric acid notes with a little apple from the malolactic fermentation used to make the wine, but for the most part it possesses every adjective that BAers use to describe these interesting Belgians. Stale/moist cellar, musty dust, gym locker and lots of lemon on the palate. Finishes as dry as your grandma's coochy. Really interesting stuff.

I would have loved to see what this is like fresh and would definitely want to track down a fresher bottle to see the changes this monster has gone through.

750ml corked and caged bottle poured into tulip 2/11/13, bottled Nov, 5, 2009

A slight haze in golden orange body, hard pour give only a noisy, fizzy, cola like film that's gone in seconds leaving no lace

S mellow funk, wet wood, lemon and orange, dried hay, musty grapes, a hint of caramel, and some leafy herbal notes

T more grapes then the nose and just a hint of vinegar, not too far from the nose, just a faint hint of vanilla seems a little out of place but everything works well together

M medium bodied, low carbonation but not flat, very slick on the palate, slightly sour and tart but its quite mellow, funk, citrus and grape linger on the finish

O quite easy to drink, not overly sour, interesting brew to say the least, not my favorite Cantillon but I could easily drink another bottle on my own

I'm glad I finally got around to trying this one, I had a little stash of Cantillon that I forgot about a ways back and I'm just getting to them now. With 4 years on this bottle I'd love to try a fresh bottling for comparisons sake

Appearance: Ugly murky copper, no head.

Nose: At first it's overwhelmingly funky, like rotten grapes. After a you really get into it though the nose opens up and is really interesting. Typical herbal, musty Cantillon funk, lemon peel, sweet vinous notes, a hint of earthy oak.

Taste: Huge tart grape character, like a very acidic white wine. Vibrant lemon and lime, grassy haybale, vanilla oak. Clean and complex.

Mouthfeel: Not much in the way of carbonation, but still plenty drinkable.

Overall: A great one, the muscat grapes add a hint of sweetness and an extra layer of complexity.
