This poured out as a clear golden color with basically no head or lacing at all. It looks much like a white wine to me. The smell of the beer is funky and tart. The taste of the beer isn't overly acidic which is nice but it does give off plenty of sour and tart flavors. The mouthfeel is thin, again feeling much like a wine. Overall this beer is something that isn't for everyone. I can only handle so much of these types of beers. If you enjoy the style, you'll enjoy this for sure.

750ml bottle, capped and corked, brewed in 2007, and bottled January 2011. My second crack at finishing off all of the BA styles, since the Iris inexplicably went all Yankee Wild earlier this year.

This beer pours a hazy, medium golden amber hue, with but a few crackling bubbles that result in absolutely no head, nor any lace, which is kind of disconcertingly non-beerish, I gotta say.

It smells of tart white wine grapes, sour apple, mild wheat grain, some tame horsey funk, and earthy hops. The taste starts with the same fermenting white wine must astringency, but is quickly overtaken by a musty, dusty, and softly funky fruitiness, more pithy than tart, a slight dry oaken woodiness, white pepper, mild sodden cereal notes, and some lactic yeastiness.

The carbonation is practically non-existent, just a very subtle burbling way, way down there, the body a quivering medium weight, with a lightly cloying, hollow character that precludes any crazy thoughts of smoothness. It finishes with a muddled wheaty, fruity, yeasty, and funky blend, all of it still making me sort of eager to scrape my tongue.

Bruocsella's resemblance to (surprisingly) low acid white wines and still cider is remarkable. Weird barnyard and yeast flavours are fine, but this experience tells me that I need that distracting, palate-cleaving tang from the fruit acids, which just seems missing here. Kind of strangely bland without it, which is a relative thing, I'm sure - weak sisters, runts and all that.

Edit: it appears that the Iris has been restored to its former style. The machinations of the BA-verse confound me yet.

App- It was a semi translucent golden orange with a look similar to cooking oil but just a tad thicker and darker. There was 0 head and 0 cling or lace to this beer. Intentionally uncarbonated makes sense being aged in a cask.

Smell- Starts out very white wine like with a little bit of damp pressed tannins and moves over to that little bit of oaky wood flavors. A little bit of citrus zest comes through on a big whiff with a little bit of earthy, damp qualities.

Taste- This was my first unblended lambic I can see why this was a hard to find. A very good introduction beer for wine drinkers. This started out very smooth with a good tannin flavor and a little dampness mixed with apple, pear and green fruit flavors. A little bit in the middle comes the oak notes with a good woody earthy flavors. I missed most of the tart flavors on this one, more subdued

Mouth- A bit of a thinner medium bodied to this one without a prickly carbonation leaving this one to be a bit dryer in areas. A low/medium carbonation that was smooth and left some oak and green apple flavors.

Drink- I don’t have much to compare this too, because this was a different animal. It was supposed to be uncarbed and yet still be more mellow from the cask. I like the profile but needed more pop for me to come back to this flavor profile vs a standard gueuze or lambic

Reviewed from notes.

So, it should be stated early on that this is intentionally uncarbonated...  

Yellowish orange color with thin legs... 
Lots of oak and funk in the nose-- deep oaky earthy notes with some light fruity notes like apricot and pear. 
Nice sour bite with gigantic acidity on the finish. Dry and acidic white grape notes come through on the aftertaste. 

Thin oily feel. Slightly slick. 

Overall, this is the best unblended gueuze I've had.  Glad to have another bottle to review after my last review got deleted!
Very nice beer-- although it drinks like a nice white wine.

750ml bottle into a tulip glass

2009 vintage on cork

Bottled August 28th 2009

A- Pours a nice golden yellow orange with no head at all just some big bubbles clinging to the side of the glass. No lacing, and small alcohol legs on the side. Hopefully it's carbonated.

S- Tons of funk and strong barnyard that immediately makes your mouth salivate in preparation for the sourness. Has a really strong almost off putting grassy earthy nose to it with hints of green apple. Musty old oak and dust.

T- Flat up front. But flavor wise funk up front with fruit flavors of apple and vinous grapes. Behind that is a strong earthy punch of faded grassy hops and mushroom like dirt. Definitely some musty oak in there as well. The more I drink it and it warms the more it tastes like bile. Not good.

M- Medium to lighter body with no carbonation and a decently sour finish.

Overall this beer would be a lot better with carbonation. Hard to drink.

Bottle at the Beer Bistro, 375ml into a tulip. 2006 vintage as per the bottle, brewed November 2005, bottled Oct 17, 2008 - best before December 2028.

Poured a light gold, some bubbles fall to almost nothing but a thin ring of head. Lightly hazy body body, with no lace or retention. Nose has some wheat, sour green apples, Cantillon funk-iness and some barnyard. Hints of oak. Taste was tart, tart, tart initially. More green apple, wheat and funky notes again. Tartness subdues as the glass warms. Flat body (expected for the style), slick, medium full and a lemony tartness that puckers. Maybe a touch of hop bitterness at the end. Easier to drink as it warms, a nice introduction for unblended lambics to me. I'd love to try more.
