This is a special version of Saint Lamvinus that was bottled unblended (and uncarbonated) for Akkurat in Stockholm, Sweden (listed on the menu as 2004 Saint Lamvinus Still). Only 200 bottles were made.

Bottle, RBESG 2007 in Glasgow, "pre-tasting". Murky red colour, no head. Intense aroma of farmhouse, fermenting fruits and vinegar. Extremely sour flavour, pure fruit vinegar. Too sour for me.

A huge thanks to Mike for this one. Label and look of the bottle is the same as the blended version. 750ml corked (dated 2004) bottle into Cantillon stemware. Reviewed from notes at a tasting 1/18/14.

No carbonation. Beer is a clear purple-light orange. No lace. This is unblended lambic so the look is as to be expected.

Nose is cheesy with a light lemon tartness. Woody, musty and spritzy at times with an overlying sweetness from the grape. Real funky.

Opens grape skin, oak and wet wood. Lemon zest, hay and cobwebs in the middle. Grape presence is very sour. Peel and skin in the finish. Aftertaste of hay, oak and a slightly cheesy funk. Matches the nose nicely.

Light bodied with almost no carbonation. Slick in the mouth and dry and puckering going down. Messy finish with a filmy aftertaste. Again, to style.

I'm very fortunate to have gotten the opportunity to try this but its not as good as the regular version. If you're after taste more than the tick, this one's not worth chasing.

Bottle thanks to Ryan, 2004 cork.

Pours a ruby reddish color, light carbonation, thin ring around the glass. Nose is very funky, oak, vinous, grape skins, and berries. Flavor is grapes, oak, nice sour & funk notes, lightly acidic. Light body, soft carbonation, dry finish.

An excellent beer that I really enjoyed. The carbonation & body is unique to any other St Lam that I’ve had, and the taste is just as good. That combo put it amongst my favorite of any vintage.

Vintage: 2004 - label reads "STILLA" which means it is the real deal

A: Hazy, light purplish ruby. Thin, off-white head forms around the edge of the glass on a soft pour.

S: Absolutely beautiful nose coming of this beer. Medium ripe grapes, touch of funk, cherry, and dark berries. Slight oak and yeast.

T: Follows the smell, but the taste is very complex and layered. Dry grape skin, earthy funk, and flat floral notes followed by touch of berry fruit sweetness, cherry tartness, and soft oak. Finishes with a subtle acidity that leaves your palate wanting to go back for more. My glass continued to empty too quickly and before we knew it, the bottle was gone!

M: Medium body with still carbonation. The stillness of this beer makes it almost prickly - hard to explain, but this is the only flaw I could find.

O: After a long afternoon/evening of drinking some top-notch beers at Akkurat, this was runner-up for me (Cantillon Cuvée De Florian was perfect). It was a wild card for sure, but the unblended (i.e. stillness) of this beer is so wonderfully executed I could barely find a flaw. Rounded, delicate, and very, very tasty! Would love to get my hands on a bottle of this, but I doubt that will happen considering there was only 200 or so produced.

Pours an opaque grapefruit red with a tight white bubbly head that dissipates immediately. The nose is brialliant, light cantillon funk adding notes of rubber band, the fruits are delightful, red grap skins lightly tart, grapefruit, and citrus. The taste is deep and balanced, citrusy, tart red grapes, light rubbery funk with a touch of acetic acid and some heat in the finish. Medium body, a bit syrupy but soft on the palate, light carbonation and semi dry finish. Finish falls off slightly, no carbonation, well integrated and complex.

Acquired in a joint, over seas trade. Poured a cloudy ruby red color with small sized white head. Aromas of grapes, brett, berries and light wood. Tastes of grape skins, light wood, and sour berries. Vinous. Nice tart and sour finish. Mmmm.

Much thanks to egajdzis & hopdog for sharing this rare bottle. Only 200 of these unblended, uncarbonated bad boys were made and they were lucky to snag one in a trade from Denmark...
Appears a hazy rose red with a small white head that slowly fades into a gentle pink toned collar. Scattered spots of lacing are left around the glass.
Smell is of tart grapes, yeasty, rubbery funk, flowers, earthiness, perfumy, horse blanket...wow!
Taste is of the same aromas in a tart, wild yeast blend.
Mouthfeel is mouth puckering, yeasty, dry, and very wine like.
