Pours a hazy golden yellow with a light head that quickly dissipates. Very still with subtle carbonation. A quiet beer from the looks of it. It smells immediately of sour compost and moldy hay, followed by tart peach and cherry. Finishes with earthiness and notes of sage. Very complex aroma, layered and changing. The taste starts fruity with a super dry middle followed by an incredible sour grapefruit finish. The dryness lasts and lasts. Cherry body and funky earthiness all around with some sweetness that creeps into all the crevasses in your mouth. Light to medium bodied with effervescent carbonation that is awesome for this style. It's dry, dry, dry and leaves you almost thirsty for more, but still incredibly quenched. A delicious beer that could be put back time and time again.

This beer is only on tap at the back bar at Monk's Cafe. I had mine sitting at the front bar. The beer poured a clear golden color with no head to speak of. The aroma of this beer was a very destinctive sourness, earthy. The taste of this beer is very sour as expected but not overpowering, actually well balanced I thought. Well balanced with a sweetness that appears very fresh, lemony. The earthy funk that you would expect from a Cantillon beer is in here and very well received. The beer has a light feeling and a dry finish.

Shared at Monk's with BeerThursday. Review from notes. 2008 Vintage, served in a gueuze glass.

A: Pours a very hazy golden yellow color with a small white head on top that leaves a small cap on top. Sporadic lacing down the sides.

S: Very subdued, but in a good way. Not in your face tart, but certainly there. Some nice citrus fruits, lemon, a little apricot, a hint of peach. Underneath a faint hay/funk.

T: Again, not in your face sour, but very even making it extremely drinkable and smooth. Similar fruit notes to the aroma with some lemon zest, apricot, and pear. Slight funk in the middle as well and a bit of oak coming through.

M: Medium bodied with even carbonation. Very smooth and easy drinking, not overly sour/tart, but seems just about right for this beer.

O: Another great gueuze from Cantillon. Was very happy to have shared this bottle with Jay.

A - thin and fluffy white foam about half an inch in height which settles to film and ring. the beer is cloudy, and on the darker side of gold colored.

S - puckeringly sour from the nose alone. balanced by woody oak and a slightly musty (but pleasant) basement smell. also notes of cheese and fruits (green apples and sour lemon zest).

T - bright and almost tearing sour and lactic acid which carries through the end of each sip. tastes of sour green apples and white grapes which turns into some slightly funky mustiness and a subtly sweet oaky finish. just lovely in all its simple complexities.

M - light body, moderate carbonation, prickly and finishes dry from the sour. just about par for the style.

D - loved it, probably my favorite Gueuze to date. incredibly balanced but sour enough to cure the cravings. paired this with some mussels and frites, i was in heaven.

The Monk's Cafe Cuvee version of Cantillon Gueuze pours a mainly clear, glowing orange-gold body beneath a short head of bright white foam that drops quickly to a creamy collar. The nose offers the expected Brettanomyces character with notes of earth, leather, horses, damp straw, and light mustiness. But it's also fruity (tart apple, apricot, lemon), a touch grainy, mildly perfumey, and delicately spicy. It's softer and rounder than most examples, and that carries over into the flavor. It's not quite as razor sharp and prickling with tartness, and the barnyard characteristics are held in check. Really well done! Remarkably drinkable! Superbly refreshing! An excellent introductory gueuze.

Poured from a 750 ml corked and capped bottle into a Darkness sniffer. Shared with schen9303.

A: Standard pour yields a single layer of coarse white bubbles atop a cloudy grapefruit beer that dissipates quickly. Lacing is spotty and with moderate cling.

S: Nose is subtle. Funky Brett, cobwebs and slight band aid. Subtle lemon and mango tartness and oakiness. Also a little bit of citrus. Not the most aromatic.

T: Lemon tartness and Brett funk. Soft acidity throughout with some citrus twang in the middle. Brett builds up towards the back with an oaky, dirty funk. Gets dry as it lingers in the mouth. Finish is citrus and lemon acidity and aftertaste is slightly tart and dry.

M: Light to medium bodied with low to moderate carbonation. Oily, silky and smooth in the mouth with a slight prickly bubble going down. Just a bit of dryness at the end and finish is prickly with a clean aftertaste.

D: This one reminds me a little bit of an aged Cantillon Classic Gueze but with softer acidity and therefore a higher drinkability. Very subtle and moderately complex overall. A solid offering from Cantillon and one worth seeking out. 750ml wasn't nearly enough.

vintage 2008.

pours a beautiful bright golden yellow with subtle hints of orange. color is amazing, a total 5 but the lack of head knocks this to a 4.

heavy oak, old musty dank basement,

flavor is also oak heavy. very dominant. some light lemon citrus hidden beneath. very musty and old tasting.

carbonation i very low. does not really take away from it though.

overall not bad but not nearly on the same level as classic gueuze. however glad this is indeed different. i dig the old musty flavor. however for the trouble this is to land, stick to classic.

Pours clear golden with a nice lasting white head.

Aroma is like a great gueuze - funky and tart with a little sweet malt - as well as some great citrusy hops.

Flavor has a great restrained tartness level with an interesting hop bitterness. Citrusy and funky.

Fairly acidic with medium body. Somewhat lively on the mouthfeel, but not one of the best palates I've encountered.

An excellent gueuze overall. They should hop up more of these lambics.

What a dream Monk's is...real gueuze on tap as if I am transported back in time and I am Belgian peasant, without the buboes and lice...

Lambics don't look like much, clear light amber, as this was in its unassuming flaring flute-beer glass. Oh, that heavenly brett-infused aroma...horse blanket, barnyard, citrus, apples, sourness but not really vinegar. I am a Medieval tenant farmer supping the nectar of the fields..lemony-crisp, bone-dry, tangy and astoundingly refereshing. I am ready to move to Philly. Few beer experiences are this good.

High clarity orange, larger bubbles, thin ring at its edges.

Fresh aroma, green herbal hops blend nicely with the signature Cantillon lemony and hay notes.

Dry hops are very noticeable, leafy green bitterness linger in the aftertaste. Puckering tartness with some uniquely buttery vanilla oakiness. Not far off from Iris, which we had just prior to this.

Soft supple feel, as drinkable as classic Gueuze, slighty different than Iris but in the same vein.

lightly hazed golden yellow color and a small puff of light head that seemed to come out of no where and settle down with medium lacing.

Aroma was so sour it tickled the nose hairs. deep horse funk, vinegar, sour fruits and a touch of lacto. really nice put together. As i take the first sip the ripe sour and rich apple vinegar dominate everything and leave no room for error subtle is not a word here as it shreds the palate. warming lets you find apricot and other light fruits buried in there and the age really starts to show as it really is just sublimely drinakble.

s: lots of sour bacterial funk, completely fermented malts add no sweetness - only a dusty grain aroma, oak, old hay, dry herbs, nice

m: light bodied, delicate carbonation

t: fully fermented wheat and pale malt body permeated with a bacterial funk that creates a puckering vitamin-c sour, a brief flash of papery hops, dried herbs and hay, sour green apple, grapefruit rind, drying oak and sour in the finish

d: very easy, the funk is strong but not to ridiculous levels, and makes for a sharp, dry finish that keeps drinkability high

The beer resides in the glass a hazy straw color, a small white head resting atop.

Intense oak and funk, this is particularly musty and complex. Less lemony than fresh Cantillon Classic Gueuze, the oak really shines here. The dry hops have largely dropped out, but the underlying gueuze smells fantastic.

The palate has an awesome balance of oak, funk, drying tannins and soft lactic sourness. Hops are barely perceptible at this point, but the beer is excellent all the same. This is an unusually good batch of gueuze.

Picked this up at Monk's Cafe, opened it tonight at home and split it two ways. Poured into a tumbler to allow the full flavor of the beer to develop. According to Dyan, this is a blend of barrels hand selected by Tom Peters and Tomme Arthur, dry hopped and bottled, much to the chagrin of Jean Van Roy, which is why the traditional Cantillon font does not appear on this bottle.

The color is a crystal clear amber that when it is fully poured is orange-hued. Carbonation is extremely light, as the body is fairly still. Very pretty looking.

The aroma brings out some evidence of the dry hopping with some light floral notes. These are accompanied by an earthy and dry funkiness. Almost no sourness, though the citrus notes from the lactobacillus is still present in the form of lemon zest and some orangey notes. The flavor is again not as sour as most Cantillons that I have enjoyed, though the citrusy funk and is really interesting. Slightly briny, in a nod to the geuze flavors of Girardin and 3F, this is a bit brighter than other Cantillon lambics that I have tried.

Low carbonation, though it IS carbonated, this is a solid beer, but not my favorite geuze. While enjoyable, I would choose Girardin over this based both on price point and flavor. Well balanced, I wish there was more sourness, though the dry finish is certainly a winning component of this brew.

Poured from a bottle into a Cantillon glass. I had this at Monk's.

Appearance: Pours a cloudy orangish straw color with a layer of white head that went away completely.

Smell: Sour and light. Some citrus and mostly vinegar. Mild funk with an herbal component as well.

Taste: Not as much funk as I expected, but super sour. Tart and acidic like citrus. Some herbal notes and a bit of a hop bitterness. The finish is sour.

Mouthfeel: Medium body with mild carbonation and a dry finish.

Overall: I really enjoyed this. It was quite refreshing and crisp. Not as funky as I would have expected, but that didn't take away from my experience.

Beer is a cloudy golden with decent head and a good amount of carbonation. Aroma is lactic sour with lemon, sour apple and plenty of funk. The taste is intensely sour with plenty of musty character. Lots of funk, lemon, sour apple, vinegar. This is a very intense brew for a person like me who is just getting into sours, but also seems quite balanced. The body is medium with plenty of carbonation. This is a very sharply refreshing beer that is very drinkable.

Appears a hazy, transparent gold with an orange hue. Tiny bubbles slowly rise to the top of the glass. Small, white head slowly fades into a mild cap with tiny streaks of lacing left around the outer rim.
Smell is funky with horseblanket, oak, vanilla, and notes of rubber.
Taste is of the mentioned aromas with tropical notes and an over-ripened pineapple flavor coming through with that funkiness standing-by.
Mouthfeel is medium bodied, funky, rubbery, slightly under carbonated but acceptable. I believe this one will be much better with some age under it's belt.

Gueuze is a relatively new style for me. In my limited experience; this special release at Monk’s Café, serves as a significantly more approachable selection of the intense style.

Appearance: Served a hazy gold yellow color with a small frothy cap and moderate lacing.

Smell: Sour Gueuze smell of tart cherries and sour apple cider vinegar.

Taste: Acidic fruit flavors with a woody earthy character (maybe a hint of leather) and loads of sour but balanced a bit by a touch of sweetness. The intricate flavors of a Gueuze are difficult for me to pull apart as the overwhelming session is the sour. Still, this beer left me breathing room at the end. Without completely destroying my palate like another example in the style did. I even found it to be tasty.

Mouthfeel: The acidity and dryness of a beer like this seems to create the impression of a larger body in the beer. Upon closer inspection the beer is actually quite light but the dryness keeps the mouth busy.

Drinkability: I enjoyed sipping this beer. One is enough for me and session ... never but one went down quite nicely.

This beer came a slightly foggy straw and peach color with no head whatsoever.

Smells of a great sour musky funk that carries an essence of tart cherry and lime. There’s a sweet blueberry base beneath that lends a nice balance of sweetness to the sour.

Tastes of a musky electric sourness that’s nestled up against an inconspicuous whole wheat and dinner roll base along with a tart strawberry. Finishes amazingly well with a well received lifting of the intense sourness from the tongue.

The mouthfeel is medium bodied and very dense with little carbonation.

This one’s a good sipper, especially with it’s gracious finish.

2008 Cork

Pours a glowing golden yellow with a half finger of head that swells with each swirl.

Aroma is dry, nutty, and acidic. A deep earthy funk, very smooth and inviting.

The flavor is extremely earthy with a dry nuttiness. Not hugely acidic compared to some Cantillons, but a nice little front end sourness exists. The flavor here is noticeably different than the regular Cantillon gueuze.

The body is medium and carbonation is low for a gueuze but there is still plenty of it.

Overall the best way I can describe this beer is like a carbonated Grand Cru Brouscella. The flavor profile is very similar to that unblended lambic, it is almost as though they only used old lambic in this gueuze blend. A very interesting beer that I enjoyed but wouldn't choose it over the regular gueuze.

Pours amber color with a big white head and plenty of carbonation. Doesn't leave much on the glass.

Smells funky right right away, must, lemons, wet oak, and green apples. Also a pronounced dry hop are earthy quality.

Tastes less funky than the nose, but a good earthiness, wet oak, and a lot of sour lemons and green apples. Sour, and not quite as balanced as the Classic gueuze. Lacking some peach sweetness.

Plentiful carbonation, crisp, sour, and a dry tannic finish.

Overall, a solid beer from Cantillon but I like the classic gueuze better. We're lucky to have this one in Philly.

A- Bright golden yellow, not much head and retention to talk about here.

S- Hay, wood, slight citrus, earthy and a little horsey

T- Muted tart lemon, slight hopyness, maybe a little apple, belgian yeasts, hay, wood, earth, a little horsey... deliciously complex.

M- Light to medium bodied, active carbonation, crisp and dry, slight pucker

D- Deliciously drinkable, nicely complex without anything overpowering

Pours a cloudy golden yellow color with a small amount of white head, not much lacing.

The scent is of sour citrus, some spice also.

The taste is very tart, there is very noticeable orange and notes of lemon, a little vinegary taste, some grassy notes, and some peppery spice.

Medium body, very smooth, moderate to high carbonation.

This was a pretty decent beer, a new style for me but something I definitely want to experience more of.

Pours a nice yellow with a large white head and some good lacing for the style. Nose brings forward acetic and lactic sourness along with lemons, oak, earth, a bit of funk, and some grass. The taste is a nice mix of funk and sour, although not as flavorful and complex as many Cantillon beers. The mouthfeel is a nice blend of sour and funk, with a great dry finish. Drinks really well and is a nice offering. Glad I was able to try this one out.

The final keg of this beer, served at the end of Philly Beer Week 2013.

Not being a fan of the original Cantillon gueuze, I must say this one is markedly better in almost every aspect. Cloudy golden pour, with a thin layer of white bubbles for a head; minimal retention, random spots of lacing. Nice aroma of earthy funk, citrus tartness, mildly acetic, nice oak profile. Taste was very pleasant, crisp and lemony, barnyard funk, tart with a slight acetic quality making the salivary glands fire up a bit, very little of the uncomfortable wood/cork/cardboard flavor that pervades the original version, though there was a distinct clean oaky character that came through. Light-medium body, dry, moderate carbonation, enjoyable. Aged nicely. Very good overall.
