750 ml bottle poured into a Darkness snifter, sharred with scoand. Beer review number 300.

Batch: 7 (2011)

A- Pours a one finger light pink foamy head that dissipates slowly, really attractive pink lacing on the sides, dark blood red color, slight purple color, hard to see through it.
S- Really nice aroma, musky, slight barnyard aroma, cobwebs, nice fruity notes, berries, fresh blueberries, funky earthy manure? Really complex.
T- Really nice taste, really complex, nice acidity, sour lemon, vinegar, nice barnyard funk, absolutely delicious, fresh blueberries come out, nice tartness.
M-Medium/light mouth feel, dry fish, acidic, puckering, sour.
O- Ok I will have to admit I put this beer on a pedestal, and in the end it did not let me down, just amazing, when it warms up a bit, the blueberries come out beautifully, just an amazing beer.

750 ml capped and corked bottle. 2011 Edition poured into several glasses. Huge thanks go to Stakem for generously sharing this rarity. This is bottle review # 1,000 for me.

Pours a beautiful cranberry rose color, with a ½ finger of rich pink (maybe even a bit purplish) head. This retains with a creamy and frothy look, soaping the sides of the glass with thick swathes of heavy lace. Awesome look to this! Fresh raspberries are right up front of the aroma with a tart blast of flavor. Funk and acidic tones shore up the middle of this, while I’m getting some doughy sugars sprinkled throughout as well. The fruity tartness of this picks up in the back of the nose, leaving a favorable final impression. This has a nice compact feel in the nostrils but seems like it could have been a little more robust smelling.

The taste is similar, with a bright and flavorful berry tartness that is emboldened by the acidity and funk. Some very light feeling sugars spread out and mostly hang with that berry flavor. Earth and woody notes are really sticking out to me in this. There is a real nice dry crispness here that gives this a lovely parching feel. Like most Cantillions, this is sour but the overall balance is so well done, that it comes off more as an intense yet refreshing tartness. Really nicely done. The mouthfeel is medium bodied; with a lively and effervescent feel that pops that fruitiness, while there is just of bit of a chewiness underneath which mostly holds that acidity and funky character. The feel here perfectly complements these flavors.

This was good. Not mind blowing but pretty darn good. While this was certainly well crafted, it just lacked that wow factor to it that would have really put this over the top for me. It seems that rarity of this elevates it a bit. Thanks for the opportunity at trying this though Adam. It was most appreciated.

2007 Vintage (batch 3) - 75cl bottles. Gold foil.

Shared with some fellow BAers at our December Big Boy Bottle Tasting.

A: Super dark reddish purple color. The purplish head was really nice looking but it quickly dissipates. Little floaties maybe seeds, are visible when held up to light.

S: Fruit right up front. This beer had an incredible balance between tartness and some funk. Both were quite intense.

T: Intense tartness right up front. The blueberry fruit very subtly but goes so well with the tart sour taste. Perfectly balanced.

M: amazing. A touch dry in the finish. Fantastic carbonation

O: One of the best beers I have ever had. Simply amazing. Cantillon truly makes phenomenal beers

Batch 7 375ml poured into my Chimay chalice.

Pours reddish purple with a finger of pink head with lacing down the glass.

Aroma is straight fruit tartness. Lots of unripe blueberry and cherry scents with some oak and typical Cantillon funkiness.

Starts out with a little tart cherry flavor. Deep funk, straw and lots of sour acidity coat the tongue and it finishes with a tart blueberry flavor. Almost like eating a not quite ripe blueberry straight from the bush.

Smooth mouthfeel with high prickly carbonation.

An excellent beer. It is supremely sour with lots of tart fruit characters. Immensely enjoyable, but not the best beer (and maybe not the best Cantillon) I've ever had.

Bottle into a tumbler

A Blueberry with a hind of head. Rather bubbly. Red hue down the bottom. Some sediment floating around (blueberry bits!). Little lacing. Nice purple/white head. Almost looks like blackberry.

S Blueberry and sour. On the sweet side though. Very nice. There’s the typical Cantillon funk as well. I must say, the sound of the bubble popping is very nice to listen to!

• T Blueberry (obviously). Tart/sour. Not much else there though. There’s the typical Cantilon funk taste, though I noticed that it was not as sour as their other beers…but it did become a little bit more sour as it opened up. But never near the intensity I expected. A little too one-dimensional I think, but still good.

M Medium carb. Very good. Aftertaste of blueberry builds.

O An excellent beer. But maybe the hype is a little too much? Don’t get me wrong, this is an excellent example of a sour beer, but I just don’t think it is in the top 10 beers in the world. A great beer, but it didn't blow me away. I would rate other Cantillons higher than this one. Also note that there was some sediment at the end, which was a good surprise, you could definitely see the tiny remnants of the blueberries that went into this beer.
