Enjoyed on draft at Zwanze 2014. Holy Grale.

A: Cloudy yellow. One finger fine-bubble, egg shell head. The head settles to a rim.

S: Tart fruit and sour Belgium spores. Neutral oak. Notes of peaches, dried apricots, bergamot blooms, honey suckles, and dusty grain.

T: The flavors are subtle and well balanced. Sour yeast is very noticeable, then waves of neutral oak and fruit notes get capped off with a mild funk finish. The notes: peaches, apricots, tangerine flesh, citrus zest, and oak. This is a moderate on the tartness level.

M: High carbonation, very (x2) smooth, light body.

O: It is no surprise to me why this is the consensus favorite from Temple of Sours. The flavors are very subtle, but perfectly balanced. Perfection is unattainable - IMO - but this ale gets very close. The fruit/sour/funk aspects meld so nicely, it is hard not to give this a perfect score. This is my favorite Cantillon.

A: Pours a cloudy apricot color with some nice honey - starts off with a giant, off-white head, fades to a few wisps of a cap, leaves a little lacing

S: Overwhelming majesty - do I even need to say more? - potent sourness with tart and juicy, ripe apricot - beautiful acidity with some hints of lactic sour - excellent level of tart - simply perfect level of apricot - juicy and fresh, without going over the top - oak - some other light fruits, with hints of apple and peach

T: So good, I don't know where to start - fantastic levels of sour, a nice blend of sharp acidity and some lightly musty lactic flavors - nice levels of tart - excellent levels of apricot, somehow tastes fresh (maybe even a little under-ripe) despite being aged - sour base blends very well with the apricot and the oak - some hints of white wine - light apples and peaches, with a hint of citrus and lemon

M: Medium body, nicely carbonated, not as puckering or dry as some other offers from Cantillon, but still great

O: Hype. Please stop living up to it.

Well, this is excellent. Cantillon does not make beer. They make magic. Consistently. Find and drink.

Appearance: Murky and hazy peach-tinged apricot. Head is white and fluffy. Starts with a massive pillowy head that drops to a few wisps of a cap with a small collar.

Smell: Super oaky. Loaded with deep fruity character. Apricot and pear add a mealy fruit to the operation. Tart with a deep citric bite and a ton of lactic sourness as well. A touch floral with a ton of fresh peach. Juicy. Oak and more oak. Earthy with a solid musty element. Layered with some barnyard and straw and grass. Pale bready malt with a touch of a cracker snap. A touch of sweetness thrown in the back. Powdery yeast. Some tart apple and white wine.

Taste: A ton of apricot. Mealy in good measure. Loaded with a ton of citric acid - lemon and even more lime zest. A touch of pear. Tons of juicy white peach. Some white wine as well. Malts are slightly bready with a touch of cracker and some read crust. Deeply oaked with a slight tannic quality. So much oak. Green tree branches. Some solid earthy elements coupled with the typical straw and grass. Solidly funky with a ton of barnyard. Musty and damp. Deep cellar and freshly turned earth. Warming pushes the apricot up and it works well with the deep lactic and citric push.

Mouthfeel: Bracingly dry on the finish. Sips a bit cleaner but has a solid astringency. Body pushes medium, but comes on the light side of it. Moderate carbonation as well. Oak smooths everything out.

Overall: Practice monomania.

Matches the hype. A ton of oak with enough fruit and tart edges to balance it all out. Complex and tasty to the point of absurdity.
