750ml corked & capped bottle poured into a tulip.

Pours an amber golden color. Small ring of whitw foam, no lacingat all. Nose is floral and a bit like green peppers, very nice.

Taste is earthy and floral with some light green pepper. Mouthfeel is light and crisp, not too sour but lightly tart and very rich. Overall quite tasty and refreshing.

Pours out a very light yellow with unexpected amount of haze, like a lighter hefeweizen almost. The small ring of white head is virgin white as they say. Aroma is sour, lemon, flowers, pepper.

Wow, the pepper. This was the spiciest pepper meets rye like quality I've ever had in a beer. And there's no rye in here, but it was mentioned to give an approximation of the taste and mouthfeel, it is like someone just dumped a bunch of pepper and rye into a lambic, which I assume is the taste I get from these elderflowers. Carbonation was ample, maybe amplifying the pepper like fatigue this induced on my palate during our first sour beer we had on Sunday morning at Triple Rock. Really, if I tried this blind, I would have guessed someone did a hot pepper wild ale.

Yeah, the beer was sour, floral and all that, but I thought the pepper was a distraction. Ultimately, this one kind of fits the bill that the more rare Cantillons aren't worth pursuing. I have a bottle, so I'll get to try it again, but for now, this is one of the more disappointing Cantillons I've had, even if it is a decent beer, it doesn't compare to their more accessible beers like the kriek or classic gueuze. A pretty dry beer all around as well.

A - Dark hazy golden color with small white head that quickly dissipated

S - Tart lemon, white vinegar, slight lactic acid with elder flower presence. Slight blue cheese funk.

T - Tart lemon and lactic acid with light elderflower presence in the back with slight blue cheese funk on the backend.

M - Light carbonation with a dry and slightly funk that lingers in the finish

O - Nice muted version of gueuze with light floral and funk presence. Really liked this and could sit and drink for awhile. Reminded me of classic but a bit softer with the elderflower presence

750ml, 2013 edition, in a capped and corked Burgundian bottle, as ever was for the Cantillon offerings available here in Alberta. This one appears to have the most limited distribution of any of its ilk to date, glad I got a chance to grab one of 'em! Not sure what the name translates to - 'ma mouche' means 'my fly' (as in the insect), but I dunno.

This beer pours a hazy, medium golden straw hue, with two fingers of loosely foamy, and mostly bubbly off-white head, which leaves little beyond a few wayward specks of soap sud lace around the glass as it evenly subsides.

It smells, well, it smells pretty much like nothing I have yet encountered - musty, piquant, peppery, and vegetal florals, moderately sour generic orchard fruit, gritty pale malt, further spicy wheat malt, tart Polskie Ogórki juice, and some mildly funky, heady farm-bred yeast - shah. The taste is more disembodied fruity sourness and tartness right up front, but that perfumed, musty, and still peppery flower character comes racing over like a helicopter parent when they sense gluten, with some decent dry bready pale and wheat graininess holding down the fort, a slight lactic acridity adding its two cents worth to the fray, and some rather understated funky, earthy, and dusty yeast muddling about.

The carbonation is pleasant in its reserved frothy quality, the body just on the light side of medium weight, and more or less smooth, once one becomes acclimatized to the tartness, and cognitive dissonance kicks in - and, then, presto, there's even a twinge of airy creaminess. It finishes dry, fruity, floral, and still peppery, in a vegetal sense.

Well, I gotta give this one credit for providing flavours that were, on the whole, new to me, and agreeable enough, at that - the peppery florals go a long way in ameliorating the harsh acidity still present (it is Cantillon, after all), and the funk keeps mostly to itself. Good, and interesting overall, but I can't quite say that the stiff shelf tag (even for these guys) would be really worth having another go, even if presented the opportunity.

Bomber at Beerbistro shared with Ken. Cloudy yellow with orange tinge, and alcey. Funky aroma, but pleasant not barnyard, with some herbs. Lambic, some sourness that is hidden behind herbal and definate elderberries. The palate feels a delayed harshness. A break of water helped to get through it, and I imagine food would certainly.

Shared at a tasting. 3oz. pour into a snifter. Reviewed from notes. Bottle is Zwanze 2009.

A: Pours a .5 finger white head that dissipates quickly. Beer is a cloudy yellow. Lacing is spotty but with decent stick.

S: Nose is very weird here. Notes of a bunch of different spices, chili peppers, and black pepper. Normal brett and funk is conspicuosly missing. Not bad by any means but really not the norm.

T: Opens tart. Lemon, brett, and mustiness. Middle just becomes stranger and stranger. A slight bit of heat comes along with chili peppers and black pepper in the background. Thankfully, sourness intensifies a bit to cover the otherwise awkward flavors. Finishes rather clean with a subtle peppery aftertaste.

M: Medium bodied with light carbonation. Smooth in the mouth but the flavors this one carries makes it a little abrasive in parts. Finish is clean with an aftertaste that lingers just a bit.

D: Not one of my favorite offerings from Cantillon but they can't all be winners. Flavor is a bit weird and the spiciness just doesn't work with the sour flavor this beer has. Not bad by any means and I'd love to try it again in the future... I'm just not as eager to revisit it as I would some other lambics.

pours a very hazy vibrant golden yellow. very impressive head that just sits there all puffy and what not.

smells like a flower, what else? hints of pear and apple with a slight sour lemon. a deep funk beneath.

very bitter with a fresh flower flavor. almost tastes like biting into the stem of a flower. a hint of funk and lemon through out. a nice light oak flavor through out. the oak seems to compliment the elder flower. elder flower really comes out in the finish and linegrs.

nice and dry with a light body and moderate carbonation.

interesting although at the same time the elder flower really comes off strong.

Ah, I love it when a once-rare beer is re-released under an alias and I get a chance to tick it after missing out. Zwanze '09...now called Mamouche...COUNT...THE...TIIIICK. 750ml bottle thanks to Nick3.

Pours hazy golden with a one-finger white head that leaves thick foam on the beer.

Very floral and spicy aroma, with less typical Cantillon funk than I expected.

Slightly sweet (believe it or not) pale malt with elderflowers (haha like I know what those taste like), lemony and funky with some interesting spices.

Medium-bodied with average carbonation and average acidity.

Good stuff. Unique for sure, and very drinkable.

750 mL bottle poured into a snifter. 2011 bottle.

Appearance - Pale hazy orange body. Nice big white head. Lasts forever as a pillow of foam.

Smell - Hmm. Green peppers. Grassy. Grainy. Lemony acids.

Taste - Green peppers again. Kinda malty. Sour. Grassy green sourness.

Mouthfeel - Well carbonated. Seems heavier than other Cantillons.

Overall - Still no idea what an Elderflower should taste or smell like, but this smells and tastes like green peppers.

Enjoyed this one while pre-gaming going out jazz club hopping in New Orleans at Avenue Pub! Served from tap into a wine glass. Poured a hazy golden yellow with a half finger white head that subsided to a minimal amount quickly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, earth, bell pepper, sour, and funk. The flavor was of sweet malt, earth, bell pepper, floral, sour, and funk. It had a light feel on the palate with high carbonation. Overall this was a good brew. When I had this out of the bottle back at Zwanze Day 2011 I experienced a bell pepper flavor and I thought that it might have been a figment of my imagination. Now that I’ve got to have it on tap as well and still pick up on the bell pepper it appears to be pretty solid evidence. There is nothing wrong with this fact at all though as it actually seemed to fit in quite nicely with the brew and add a nice earthiness to it. A well done brew that I can’t wait to see how it ages in the bottles I have laid down in the cellar.

Thanks to freud for the 750ml bottle. Opened and shared at BCTC VIP camping 2011.

Opened after dark with little ambient light, so visual assessment a little lacking. Great head poured into a mini-pils glass - glorious lacing. The aroma is utterly unique from all the Cantillons I've had over the years - bright, somewhat medicinal in a good way, only a little floral. I'm writing this review from notes as I sniff a sprig of fresh elderflowers as a reminder. Taste is sharp up front - tart & astringent, then an unusual floral/citrusy component. Finish is bone dry and astringent, with a hint of something herbal, though not unpleasant - quite refreshing, actually! Like nothing I've ever tasted, but no previous experience with elderflowers, or elderberries.

An herbalist friend advises that elderflowers are used as a mild skin astringent and to open pores and promote perspiring (diaphoretic) - such a reaction was not attributable by this taster, although it was a rather hot evening! A unique offering - looking forward to Zwaanze Day to try the newest one.

Bunzfest2012: Make it so... Quick review from written notes, served in a mini-tulip glass.

Light haze, golden orange body with copious white foam at first that fades to a thin ring around the edges of the glass.

Bell peppers and fresh cut jalapeno, chlorophyll, citrus rind, sandalwood, dry oak, savory with herbal dried elderflower notes.

Tart citrus lambic notes, green bell pepper zestiness, floral with some peppercorn savory qualities. Effervescent, dry aftertaste, lingering oak and lemon pith. Very unique and potent in smaller doses, one to share, but certainly enjoyable.

2 pours, 2nd time sampling. Fairly cloudy, lasting surface skim, ring of spotty lace.
Spicy aroma, sliced bell peppers, slight floral, musty wood.
Similar flavors, bell pepper, green organics, cracked pepper spiciness, lightly floral, less so in Zwanze 09 vs Mamouche 11. Medium bodied, dry with lingering spice. Unique and tasty.

750 ml capped and corked bottle, bottled on 07 June 2012. Served in a Unibroue tulip, the beer pours golden/orange with about an inch off-white head that didn't stay around for very long. There's a decent amount of lacing. Aroma is nice and tart, the brew smells like tart lemon, herbs/flowers (which I assume is from the elderflowers), oak, and some funk. It tastes like tart citrus, elderflowers (herbal/floral taste), green pepper, funk, oak, and some apricot. Mouthfeel/body is light, it's well carbonated and enjoyable to drink. I thought this was a good brew, I'd like to pick up another bottle at some point. Bottle from Etre Gourmet.

Big thank you to Jeffo for this most awesome treat, very high up on my list of wants. Bottled June 15, 2010. Poured into a Cantillon tumbler.

Appearance. Pours a hazy, rich gold colour with a ton of bubbles rising and 2+ fingers of fluffy white head.

Smell. Bitter floral perfume and fresh savoury herbs, some berries and lemon juice as well as some old wood and that nice Cantillon funk ...which is as close to the classic "horse-blanket" description as any funk I've come across.

Taste. Amazing light floral perfume and some lightly bitter, savoury herbs along the lines of dandelion leaves. There's also some lemon juice, a bit of old wood and maybe a touch of leather, along with a nice light lingering dry funk.

Mouthfeel. Lighter body with full, lively but still somewhat soft carbonation. Pretty much perfect for the style.

Overall. The most interesting beer from this brewery that I've tried so far, wasn't expecting the herby aspect. Thanks again for this treat from across the pond, Jeff!

Bottle: Poured a dirty yellowish color lambic with a large foamy head with good retention and some very good lacing as well. Aroma is absolutely dominated by elder flowers and is somewhat of an acquired taste. Taste is also dominated by elder flowers and provides a floral and somewhat peppery taste to this beer which is well integrated with the tart and oak from the base lambic. Very refreshing overall though a bit too much flowers for my taste.

Pours hazy yellow/gold. Small white head fading and leaving little lacing.

I've never heard of elder flowers before, but the best description I can come up on the aroma is the smell you get when you tear into a fresh green pepper and get that juicy pepper flavor although with a touch of spice maybe more akin to a jalapeno.

This different flavor is even more intense in the flavor. Tons of floral components and a massive green pepper flavor with some more hot spice coming out as it warmed a bit. It's interesting and even though I love peppers, I'd like more complexity. I really don't get many other flavors because they are so far in the background and almost undetectable. None of the typical Cantillon funk and acidity that I usually love is noticeable here.

Typical mouthfeel for the style and finishes fairly dry.

As far as unique experiences, this ranks a 5. I've never had a beer that's really been remotely close to this, however if you line up Cantillons and force me to pick one, this would be near the bottom of the list. Not sure what age does to this, but a fairly fresh bottle is mostly pepper and nothing else.

Light golden amber in color with with a big foamy head of white on top. Really cloudy and hazy and this gave it a much fuller look. Definitley going to be a winner here. Ohh, the rich funky nose on this one, I am melting into the chair. very earthy balance too it and soo floral like a meadow, really very nice.wow. Not too heavy, and the tartness and sour is perfectly placed. As I sip I close my eyes and the tartest granny smith apple I have ever had combines with a pear and flower notes. not Lip puckering, perfectly balanced. I am floored. Letting itlsit perhaps a touch of cherries works its way in, still light hops drying the palate and sourness that is not overwhelming but just will not quit. Perfect carbonation and medium body with no hint of alcohol at all.

Overall a great beer and another winner from a brewery that can do no wrong it seems!

Picked this up in France @ Bootleggers.

Pours a nice golden color with a thick head that quickly disappears. Smell is intensely floral with a strong dill (pickle) note. Taste is tart and full-frontal sour with again a slight dill flavor. The oak is kind of lost but does add a slight smoothness to the mouthfeel.

Overall a very interesting brew with intense flavors.

A - Golden, straw colored, a little haze but firm.

N - Super fresh picked berries, vinous, grape tree limbs, very oakey, charcoal; wet hay, mustiness, cellar floor. I just can't get over that such a distinct smell of fresh picked fruit, so fucking nice.

T/M - More of the berry-like suggestions, wood, tart grapes, peach, wild berries. It comes in thin and leaves a nice strawberry and oak in the finish; champagne-like in texture, rolls on the tongue.

D - Definitely my favorite Cantillon so far, would like to put this up against fresh Gambrinus side-to-side, I definitely wouldn't want to age this much, that fresh berry is just so damn good.

Bottled June 15, 2010.

Pretty standard lambic appearance, straw-colored with nice lively carbonation. A gentle pour leaves me with two fingers of foam that slowly settles to a crown.

The aroma is unlike any other lambic I've tried; very floral and peppery, perfumey, somewhat herbal - the elderflowers almost overwhelm Cantillon's signature barnyard funk, but I think it will even out with age. There's a touch of lactic sourness and musty oak, but it's buried.

There's a bit more balance on the palate, elderflowers still lending an unusual peppery and floral character up front, but there's plenty of tannic oak and musty funk to support it. Sourness is fairly reserved at this point, but it's a fresh bottle. I enjoyed this quite a bit, but I think it needs a year or two to come into its own.

1/25/2011: 4 or 5 bottles later and I find myself loving this beer. Very unique and enjoyable.

A-Cloudy yellow orange, nice carbonation and a one finger head

S-Dill pickles, tart with funky notes.

T-Dill, pickles, tartness, funk, wheat and some spice.

M-Medium bodied, nice carbonation, crisp with a dry finish.

O-Not the best Cantillon but one of the more interesting ones.

A treat that Chris brought over from his trip to Belgium. At the Lion's Pride when he just got back from his flight, rolled in and pulled out some surprises, this just happened to be one of them.

Pours a golden color, good amount of haze in it, not much in the way of head or lacing.

Smell is quite unique, made with something called elder flowers, I guess this is their first time making anything with it, certainly has a unique funk/flower aroma bouncing around in my nose, bit of sour and spice, Cantillon might need to do some more with these elder flowers.

Taste is quite sour/tart, caught me off-guard after drinking an '84 gueuze that was more sweet than sour, wonderful sourness in this beer and definitely picking up some of the spice that the flowers contribute, definitely finished dry but left you wanting more.
