Cantillon Zwanze 2009 = Elder flowers. In 2010, Cantillon re-released this beer as Mamouche (same beer), which will be brewed on a regular basis.

Glass: Cantillon stem glass
A delicious lambic, and perhaps one of Cantillon's more underrated beers. Mamouche is an aromatically floral beer with strong sour undertones, with a flavor that reverses this. Not as cripplingly sour as some others from Cantillon and other breweries, but this lets the flavors of the elderberry flowers express themselves a bit, as well as the remnants of the malt and oak. A bit sad that it's one I may only be able to enjoy once in my life given the difficulty in obtaining this.
Pours a 1.5cm tall head of white foam, composed of small-sized bubbles and yielding a frothy appearance. Retention is about average, the foam lasting slightly over one minute in a decline to a thick ring around the perimeter of the glass and a large, thin island of lace atop the body of the beer for the duration of the drink. Lacing is minimal, a few small dots cling to the walls of the glass. Body is a dark, cloudy, golden yellow color, with light bringing out pale yellow hues. Carbonation visible through the nearly opaque body (80-90% opacity), moderate in number, but high in activity.
Aroma is much brighter than normal Cantillon lambic, with strong floral characters added to a potent lemon-apple-cider vinegar tartness, some serious wet hay "funk" and basement mustiness, and a bit of light/bright oak smoothing things out.
Front of palate tastes expressive and bright floral characters, pleasantly mild to moderate lemon-apple tartness, hints of pale malt sweetness, and light oak. Mid-palate experiences pepperiness, oak, bright flowers, moderate intensity tartness with lemon-apple-cider vinegar overtones, faint pale malt sweetness and slight acetone. Back of palate is of intense lemon-apple-cider vinegar tartness with undertones of oak, wet hay and basement mustiness. Aftertaste is of lingering lemon-apple tartness, floral characters, basement mustiness, wet hay "funk," and nuances of pale malt sweetness.
Beer is medium-bodied, with carbonation of medium-light intensity, resulting in a beer that is foamy (2/5) and otherwise smooth (3/5), a very satisfying, full and gently rolling mouthfeel that's perfect for this or any sour beer. Closes surprisingly semi-dry, with light to moderate stickiness clinging to the palate and lips.

You can't go wrong with a 5 year old Cantillon bottle on a beautiful Thursday evening in Chicago. This beer is absolutely stunning to me. So unique. I was a little reticent because a flower didn't sound so great in a beer, but it's amazing. It works perfectly with the funk of the beer. I love the dry finish. Worth seeking out.

You can't go wrong with a 5 year old Cantillon bottle on a beautiful Thursday evening in Chicago. This beer is absolutely stunning to me. So unique. Look: golden yellow with a thin white head
Aroma: elder flowers, apricot, grapefruit maybe.
Flavor: The flavor is fruity sweet like apricot, slightly floral elder flowers, and a complex moderate tartness like lemon and white grapes, soft, thirst quenching easy drinking that goes perfect with spicy food.
Body/Overall: light to medium body, a bit prickly, easy drinking, incredibly thirst quenching

Lambic with elderflowers of a unique elegance.
Immediately elderflowers delicate on the nose.
Aged for a year, drunk on tap.
Brettanomyces well distinguishable but it does not confer a very astringent sour.
One of my favorites of Cantillon for balance, taste (the elderflower is already released on the nose and with delicacy it seems almost just infused in lambic), elegance and ability to accompany food (white fish, delicate risottos, smoked scamorza cheese etc.)
