A - Lighter straw gold.

S - Sweet elderflower cordial with a bittered, fatty blue-cheese hint.

T - Elderflower predominates. Mildly sour with a little floral sweetness. Acrid finish is biting. Medicinal plant fibre.

M - Lightly carbonated with surprisingly thick body.

O - Interesting but not particularly tasty due to some of the weirder elements. Smells amazing though!

A: Deep golden, medium hazy, thing ring of dense foam. Medium carbonation.

S: Very unique, peculiar... peppery flowers, earthy, lactic sourness, perfumey. A little vegetal.. I have to admit this is not particularly appetizing for me. It is nice to smell (like perfume) but nothing compels me to drink it.

T: The base beer is tasty but I can't get past the floral flavor, it just isn't my thing. Cantillon is my favorite brewery but this is just not for me.

M: Very dry but only lightly carbonated for Cantillon.

June 26, 2013 corked and capped 750 ml bottle from Tipples. Pours hazy golden almost tangerine color with a half finger of white fizzy head that quickly recedes. Aroma...well this is interesting. Peaches, vinegar, floral notes, light dry oak and sourness, and yes, dill pickles. Somehow not off-putting though and the sweet peachy smell is nice. Flavor is pickle juice, sour vinegar funk, dry oak, light peaches or apricots. Weird. Light bodied but sweet with prickly high carbonation. Finishes dry. This is unique to say the least.

750ml split after breakfast on a nice and relaxing Sunday morning in Waterbury, VT. Bottle date I believe was June 26, 2013.

Appearance - Hazy peach-orange color with a small white head that retains well as a ring leaving spots of lace, looks great.

Smell - Really nice and unique, lots of floral, herbal, plant/veggie, farmy tones, vinegar, sour fruits. Sourness/funk is pretty low-key for Cantillon, nice strength and presentation here though.

Taste - Doesn't stick out as much as the scent did but still quite nice. Elderflower giving off a nice mix of floral, herbal, pepper, and tea-like flavors. There is a light earthy funkiness that is more akin to a farmhouse ale rather than a lambic, more sour and fruity than the smell (apple and lemon) but still somewhat restrained. Some bread and buttery tones in there as well.

Mouthfeel - Smooth with ample carbonation, good body to it for 5%. Really quite drinkable compared to most Cantillons. Not much complaints here.

Overall - As usual for this brewery, it was solid all around and could be considered a staple example of a lambic, but the elderflowers really do make this one special. It will be interesting to see how this will age, but I am more tempted to drink this fresh while I can.
