A white beer with wild yeast, sounds like a very interesting experiment. The smell is tart, citrus, wheat and lots of grasses (hay). Taste is sour, but not too much. Lots of hay, wheat and malts. Some nicely hidden citrus. What an interesting experiment, IMO it is slightly underrated.

750 ml bottle at Moeder Fontainas, bottled in 2010, poured into a Cantillon goblet/tulip kinda glass.

A- Pours a cloudy yellow/gold color, nice layer of creamy white head with great retention and lacing.

S- Surprisingly fruity, lots of lemon, apple and pear. Also some dry, musty funk. A bit of wheat sweetness.

T- A bit of wheat sweetness at first, again lots of lemon/apple/pear, finishes with a mild tartness and dry Cantillon must/funk. This is actually a lot more tasty and complex than I expected.

M- Light-bodied, soft, smooth, creamy feel.

O- Fine it's not lambic, but this is a killer beer, it's very, very tasty and complex, probably the best 4% wheat beer I've had.

Shared by Moeder Lambic at the pre-TdG Dark Lord tasting 2013. Legendary is an understatement.

From a 750ml into a snifter

APPEARANCE: Pours a big, fluffy, white head with good retention. Gamboge orange in color, hazy, with medium levels of carbonation. Lots of wisp remains until the end of the glass and leaves lots of nice lacing. Pretty nice.

SMELL: Lemon sourness on the nose, with tart citrus aromas and a slightly acidic quality. A touch of wheat malt in there with some funky notes as well.

TASTE: Milder flavors compared to the nose, with lemon citrus sourness, some funky, musty flavors, floral hop bitterness and a touch of acidity at the swallow. Bold flavors and a persistent aftertaste that's funky, lightly sour, with some floral bitterness and wheat notes lingering on the palate. A light spicy yeast flavor rounds it out nicely.

PALATE: Lighter body and airy on the palate. Creamy enough going down and finishes dry on the palate.

OVERALL: This was pretty nice. A wild witbier is an interesting concept and I think it worked out quite well here. The wheat was there and it worked well with the citrus tartness and lightly funky qualities we'd expect from Cantillon. This was a pleasant surprise and it makes me interested in what Cantillon can do with a wild stout. Let's go Zwanze 2013!

Had reviewed this in the past but the review disappeared along with a few others from Cantillon Zwanze Day 2011??? Enjoyed while attending Cantillon Zwanze Day 2012 at Avenue Pub! Served from bottle into a wine glass. Poured a hazy golden pale yellow-orange with a one finger white head that subsided to a minimal amount slowly. Maintained excellent lacing throughout the glass. The aroma was comprised of sweet malt, spice, earth, floral, tart, sour, pepper, and grass. The flavor was of sweet malt, spice, earth, bell pepper, sour, funk, and floral. It had a light feel on the palate with high carbonation. Overall this was a pretty good brew. There was a nice earthiness to this brew that definitely kept me coming back for more. Just about everything on this brew was spot-on for what you would expect from Cantillon by now. It has the type funk that they are known for, as well as their nice subtle tartness that gives you just the right amount of pucker. A really well done brew with a great touch of complexity along for the ride. A very well done brew that I hope to get more of in the near future.
