I've been drinking a lot of different hefeweizens lately, and in a way I'm starting to get a little burnt out on the style. At some points all the hefes I was having were starting to taste the same (bananas, cloves, yeast, etc.). Ayinger's Brau Weisse stood out in a few ways though, and it is one of the top examples of the style in my opinion.

This weissbier poured a cloudy yellow/gold color with a decent foamy head that lasted for a little over a minute. The smell wasn't too outstanding, but it was mostly fruity with some ripe banana, canned fruit, and light spice scents. This brew felt smooth on the palette, which was typical of the style. The flavors in the beer were very well done as there was a very nice fruity presence all throughout it. Bananas were present along with cloves and other spice-like notes. The wheat flavors add a bit of a rawness to it that really balances out the sweetness (along with the slight dryness in the finish). The aftertaste has some lingering fruitiness and spices, with no alcoholic warmth to finish it out.

It seems like many BAs have said that they have trouble reviewing beers like standard American lagers because they all end up tasting very similar. I felt I was starting to get that way with hefeweizens, but this one was actually somewhat noteworthy and is definitely worth a shot if you see it in a store. (1,366 characters)

Pale yellow to white, almost Hoegaarden wit colored. Ayinger's hefe glass is cool because it's thin near the bottom and swirled glass makes it so easy to hold. Eggshell colored head that dissipates into almost trace lacing. Big banana nose with some other yeasty traditional smells typical of a hefeweizen of this caliber. Silky smooth on the tongue, some banana esters, and finishes crisp; tempting another sip. A royal hefeweizen that demands attention amongst the competition. Downright righteous. (500 characters)

The beer smells lemony and sweet. There's definitely some of the traditional bubblegum sugar, and a even little pear. It has a hazy honey color with a pretty, fluffy white head, which fell pretty fast. I swear, I washed this glass really well this time. Oh well.

The tast comes crisp, citric and acidic. It's very creamy with high carbonation, and leaves a nice bready dryness in the finish. The beer is very light on the tongue and no flavor dominates over the other. there's a little clove or some other dark flavor in the taste that adds a bit of spice and complexity, but my overall impression of this beer is light and refreshing beer with a mild taste.

This is one of my favorites with a salad or a light omelette because the lemony acidity and tight wheat flavor relax the palette and can handle the subtlety of fresh greens and the sourness of a vinegar dressing, as well as cutting through eggs and cheese in an omelette. One of my favorite hefes overall. (970 characters)

This is the kind of brew that makes me love summer. Hazy straw color with a creamy head of tight white foam. Aroma is a bit muted, lemons and a bit of musty yeast sneak through. Flavor screams summer. Lemony and zesty with a spicy kick. Prickly carbonation improves an otherwise thin mouthfeel. (294 characters)

The head is biggish, noisy, white, bubbly, foamy. The beer is a clear, pale gold with big, fast bubbles. Last pour is hazy. Mmmm... nice, spicy, buttery nose. Apples too. The beer starts fruity, tangy, peppery, turning thick, buttery, fruity. Some nice milk fades in with temperature. The finish features apples and more butter. Apples throughout turn more banana-like as the beer warms. This is just a very good, fresh, tasty, fruity, buttery, spicy beer. (456 characters)

Pours a slightly hazy golden yellow, topped with a three finger pillowy white head, leaves rings of lace.
Clove filled aroma, wheat/grassy note, lemon.
Clove, some banana, hayfield taste. Lemon Slightly bitter and nicely tart.
Medium bodied and dry. Well worth the price. (274 characters)

A good sized beige head sat atop this cloudy gold offering I had at the Winking Lizard. Clove, lemon and a slight bit of banana hit the nose before I drank. Spicey with a small fruit underlining the beverage. Small amounts of yeast and wheat came through at the end. Enjoyable, refreshing, and well made. I'll defintely have it again. (334 characters)

Poured from the bottle, this beer grew a sizeable head but didn't retain the crown atop of the cloudy gold body. The aroma seemed to be dominated by clove, banana, lemon, and wisps of wheat. The flavors were lightly spiced banana with some grassy and yeasty notes. It's a pleasant and refreshing brew. (301 characters)

I've never had an authentic Hefe-Weizen before, so I'm amped up about trying this one. Oddly enough...this is a pint...plus one ounce? whaaaa?

Appearance- This is a cloudy gold with champange like carbonation thats in it for the long haul. The head aint going anywhere, excellent staying power. Wicked carbonation.

Smell- Kinda lemon grass tea, smells of some spices....cloves. I'm liking the smell of this one.

Taste- Like it smells. I'm detecting this odd taste in it and I'm guessing that its the wheat in the beer. I've never had a wheat beer so the wheatey taste...well, it must be wheat. A mild oil residue is left in my mouth after swallowing. A kiss of hops like a peck on the cheek from Mom. This taste is all to well rounded, I just had a toasted wheat sandwich and this is washing it down proper.

Mouthfeel- Heavy carbonation, that eludes to a lemoney, spicey taste that is amplified by the wheat.

Drinkablility- Goddamn delicious. I feel like I'm in Europe right now. The taste of this beer, while not drastically different from anything I've ever had, is definitly something unique. I look foward to more beers of this type.

Ayinger Brau-Weisse did me right. It comes recomended (1,212 characters)

Luminous straw coloured beer lightly cloudy under a hearty, white and meringue-like head of foam. Had good retention. Nice beer to contemplate on a sun drenched afternoon.

The aromas were superb. Fresh citrus fruits (lemons and limes mostly so no need to garnish with them) and a nice harmonized underpinning of wheat malt. A light jab of white pepper to close out the whiff.

The flavours were delicate and quenching being ushered in by a silky medium bodied texture. Mildly tart wheat mingling with tropical fruit and oranges all propped by a lazy acidity. The final was juicy and yeasty. Very refreshing and a very well balanced beer.

Tossed greens sprinkled with chunks of goat cheese, avocado and freshly chopped red peppers come to mind when drinking this. I will seek this out again when I am stateside. (818 characters)

Whoa!
This baby foams out of the bottle- a 1/2 inch "head"!

Sheets of foam cascade down my glass. An orange color and not particularly cloudy for a "mit hefe".

Aroma is orange and cloves. Definitely catches your interest.
Taste doesn't overwhelm as much as the aroma. Still it is a good, tart weiss. The finish is clean and thirst quenching. Strikes me as a good situation beer- floating down a lazy river on a hot day.

I gotta say that I love the colorful caps with the idyllic picnic scenes.

Half-a-liter bottle poured into a Weizen glass. It pours a slightly hazy gold color with three fingers of head. There is just a little lacing left on the glass. The smell is full of banana and cloves, fruity esters and wheat. The taste brings back more of the clove and banana. A fairly fruity taste, with a hint of hops on the finish. The mouthfeel is very thick and heavy for a Weizen. The drinkability is good as well. A solid Hefe! (435 characters)

Really impressive opaque honey yellow color. Dense persistent head. Yeast and fruits in the smell. The taste is also fruity, with lemon, and some hints of bananas. A pleasing sweetness. Wheat and yeasts clearly perceptible The mouthfeel is very enjoyable, the taste of hops is reduced and gives the beer a high drinkability. A very good beer in my opinion. (356 characters)

This brew is a very cloudy orange body, well maintained white foam head on top. Banana scent, the one we love. This has a bit of a tartness to it, kicking after the banana/lemon/clove taste of this style. Nice full mouthfeel. Overall this is a nice hefe, there are better but this one is not bad. (296 characters)

Poured out of a standard Hefeweizen sized 500 ml bottle. Aroma is very faintly banana. Looks decent with a cloudy pale golden body, but the head is a bit too small for the style. The head also dies out very quickly and little to no lace is observed later. Lively carbonation and light mouthfeel. Taste is light on the bananas and clove, and much more leaning towards lemon, orange peel, and pineapple. Very refreshing and crisp, but lacks the creaminess of some other hefeweizen beers I have tried. (498 characters)

Pours a clear bright gold with a fizzy thick white head. OK, it's clear for the initial pour. On subsequent pours it gets progressively hazier. Smells strongly of banana and clove. Some underlying sweet wheat malt and yeast aromas.

Taste has a very pronounced rip banana flavor followed quickly by nips of clove and other spice. Smooth finish but a bit fizzy on the tongue. Slightly bitter peppery finish. Medium bodied and creamy. Light bitterness in the aftertaste. Very smooth and drinkable. A tasty brew that goes down dangerously easily. I'm not an expert of the style but this is the best Hefe-Weizen I've had yet. (623 characters)

Beer came in the classic 16 oz brown bottle. Note that they send the US their returnable bottles which tells me that they do not separate domestic vs. export shipments, so the beer we get is the same one they sell in Germany.

Beer poured a very light yellow. May be the lightest hefe I have ever seen. Massive fluffy head. Slightly hazy.

Classic hefe smell of clove. spice and banana. Close your eyes and take a deep whiff, this beer transports me to summer.

Very good tasting representative of style. Clear spice and wheat malt work together to make a tasty tart brew. Spice flavors add a great compliment to the beer. This one would be easy to pair with simple grilled fish, chicken, salads, etc. Not one for overly spicy food as I think that makes this beer turn sour.

Soft mouthfeel and excellent carbonation make this an easy drinking beer. (861 characters)

The beer pours a cloudy pale gold color with a frothy white head. The aroma is good. It is sweet with wheat malts and that fruity yeast scent; a really nice aroma. The taste is good also. It is full of flavor and fruitiness. It refreshes as it goes down and finishes with a dry, but sweet aftertaste. The mouthfeel is decent. This beer poured a yellow color with a nice white head and left no lacing on the glass. Very clear with nice carbonation. This beer represents what I think a hefeweissen should be. Aroma is fairly normal for what you'd expect from a hefe, but a little stronger. The flavor was very smooth and enjoyable. Very wheaty and a bit sweet with a grainy feel. (351 characters)

Pours a cloudy lemon yellow, like sunlight through fog.

Smell is light lemons and bananas and a bit of allspice.

Taste is that of a mild Hefe-Weizen, slightly sweet with the standard bananas and spice taste. This is a summer beer, light and refreshing.

Mouthfeel is light, this is good for a summer beer.

Extremely drinkable basically covers the same slot as an American Budweiser, but this is 100 times better. (424 characters)

Appearance: Deep yellow opaque body on pure white inch thick head.
Aroma: Huge honey, lemon juice, pinot grigio and ester aroma. No hop aroma.
Taste: Cloves under the rich banana flavor. No hop flavor. This needs a little more complexity to back up the intensity.
Mouthfeel: Creamy banana mouthfeel.

Appearance – Light yellow in color with a little cloudiness. The head was big and frothing.

Smell – They sure do have that yeast smell down pat. The aroma of this weizen is authentic and truly awesome. I hope this tastes better than their so-called “dunkel weizen.”

Taste – Yes, much better than the dunkel weizen. It’s kind of light for a hefe – more like a wit bier – but very pleasant. The yeast comes out some at the taste (still, not like in the nose though). There’s lots of summer fruits here as well along with a hint of hop balance.

Mouthfeel – Light and fluffy just as it should be. As I mentioned, I thought it was a little thinner than it should be, but otherwise the mouthfeel was right on.

Drinkability – This went down well. It wasn’t anything stellar, but it was close enough to the style to satisfy. (840 characters)

I love Ayinger beers, but I don't often drink their wheats (for some reason).
Pour: Murky yellow-tan; plenty of foam and bubble action -- fills the wheat glass with good-looks. My bottle pour head subsided after little time.
Aroma: Full of hefe-weiz aroma -- fruity esters and lemon-sour tinge. Background hints of hefe (yeast) smell.
Taste: One of the better, standard German H-W out there (almost enters into my top echelon of the style): full flavor of H-W tastes to match its aroma. Pretty wet mouthfeel works the complex of flavor (wheat & yeast base, banana-clove experience with sweetness and some citrus as well). Nice. (631 characters)

Aroma: a slight off dusty smell detracts from the otherwise succulent banana bubblegum esters
Appearance: Cloudy yellow with a puffy white head the quickly retreated to a film
Flavor: Lemon like wit beer taste. Fairly straightforward taste, a bit muted (I may be getting a cold). Some malt flavors come through in the aftertaste, but no sign of hop (but no sign of cloying either). A little of the bubblegum comes through in the aftertaste as well, but it seems it mostly goes to the nose. Very little of the yeast taste I was hoping for.
Mouthfeel: Very carbonated and bubbly. Medium body and a dry finish.
Overall Impression: Somehow I was hoping for more. It’s a well made beer, just didn’t blow my hair back. (728 characters)
