Poured into a tulip this beer is very carbonated, two thirds of the glass is foam, like a Belgian. Head is also very long lasting, it will be a while before I can pour a full glass, oops! The beer itself is an opaque copper, seriously this thing glows at the edges, the only place the light can fully penetrate. And the sediment is not disturbed, there is still a thick layer on the bottom. Unfiltered is right! Head is light tan and creamy. Ilove what hops does for head retention, this thing just doesn't want to subside.
Aroma is heavenly. Absolutely simcoe, could pick this out of a lineup any day. Juicy grapefruit, orange and lemon with Peach and some fragrant light pine notes. Detect some vegetal, like whole cone hops.
Five minutes and a small top up in, and there is still a thick head, but it is sinking. I can't wait any longer, I've gotta tear into this beast.
Head is very fluffy on the lips. A good blast of citrus. More grapefruit and peach. A short, strong dark caramel maltyness follows but is quickly overpowered by a blast of spicy bitterness that lasts, slowly fading and letting the yeasty caramel back in to round things out. Finishes a little heavy on the sweet side, but not too much.
Full bodied, tongue grabbing bitterness and coating sweetness, this beer would hold up to the heaviest of foods, while still cutting through fats with the sharp bitterness.
Although it has plenty of bitterness to hide the alcohol, it's sweetness has a decidedly negative effect on drinkbility. I am very much enjoying this 750ml bottle, but any more than this and my palate will be sugar-blown. I was expecting something a bit lighter in color, I think the heavy caramel is what will get to me first.
Overall a very solid beer, better than most DIPAs but short of an SDPA. Glad I found this although I may slightly prefer the flavor of the regular double simcoe, I like the extra yeast and complexity of this unfiltered offering.

Had this filed under the normal Double Simcoe for years, oops.

Poured from corked 750ml which had some serious champagne cork action and probably the most yeast/sediment I've ever seen. Translucent reddish orange with amber edges, billowing cream colored head which fades after many minutes to a one finger meringue-like cap and leaves thick clumps of lace. Smell: pine, pineapple, pink grapefruit, earthiness, fairly raw but not that explosive, big caramel in the back. Taste: pink grapefruit, tangerine, candied citrus rind, earthy pine, medicinal biterness and alcohol at the end of the sip, prevalent caramel sweetness. Mouthfeel: creamy, thick and syrupy, almost chewy. Drinkability, he says with most of a 750 left to go, is good even though it is slightly sweet and slightly rough at the end of the sip. Fantastic looking, at least in the corked bottles, and tasty DIPA. Not my favorite of the style, but it's quite good, impressive use of the simcoe (R).

Reviewed from tasting notes. L: Pours hazy reddish amber under a 2” off-white amber tinted foam collar that produces thick, complex lacing. S: Citrus, grapefruit and pine aromas. T: Tandem attack with rich malt and assertive hops, citrus, grapefruit and pine interweave with caramel, malt and light fruits. F: smooth, rich, creamy full body, medium to medium low carbonation. O: Big, assertive but well done.

A dark and hazy amber bodied brew settles into my goblet. Head is a rocky fluffy biscuit colored tan with excellent retention and scattered lace. ops on the nose are very resin based with some back ground pine and a hint of citrus rind. With first sip the hops are very prickly and have amazing grassy qualities to the flavors. One of the flavors that reach out is the dandelion stem, this is the dominant attribute that really hangs on the tongue. As you drink you get some citrus tones that develop mid palate. While all this is going on you actually get a creamy dry mouthfeel that is very nice. Drinkability is very nice but demands to be savored.

Been wanting to try this one for a very long time. Unfortunately, I feel like the regular version is the one I prefer more so. This one seems muddled; a result of the unfiltered edge of it. The earthy tones that are prevalent in the regular version are definitely here as well. Though they seem more weighed down and not as boisterous and interesting.

Nice to be able to try, but not really as interesting as I was hoping for.
