Poured from 12oz bottle into a tulip.
Appearance: rich golden-yellow hue with a fair cloudiness to the body and plenty of apparent effervescence. Head is two fingers of creamy light-ivory foam. A pretty good looking package, I'd say.
Smell: fruity with touches of pear and apple and actually a fair portion of hefeweizen-like banana and clove. There's a chalkiness which I like, although there is also a little bit of band-aid encroaching on the flavor which doesn't precisely help it. Still, a nice-smelling American take on the tripel.
Taste: the flavor is OK, but it doesn't make the best impression on me. Fruitiness is a little raw and the band-aid is a bit stronger, plus the alcohol burn is a bit on the strong side as well. Some of the flavor profile is OK, and it retains a lightness which is appropriate, but the overall effect is not wonderful.
Mouthfeel: the reason I buy tripels. Merry Monks' Ale manages an extremely well-integrated carbonation which turns its somewhat full, sticky body into a deliciously creamy treat. My favorite part of this beer, hands down.
Drinkability: this beer has a lot going for it, particularly the feel and, to a lesser extent, the aroma; however, its harshness of flavor really does detract from the experience. I wouldn't go out of my way to have this again.

Aroma of fruit and yeast phenolics
Head white, fizzy, gone when the pour finished
Body golden, hazy; sediment in bottle
Flavor of apple, somewhat ciderish, slightly tart, and yeast phenolics; no hops, no alcohol, no diacetyl.
Palate medium, watery, lively carbonation
I think Merry Monks is head and shoulders above Victory Golden Monkey, in general a better flavored brew. It is certainly very drinkable, with the 9.3% abv well hidden so that after quaffing a few you won’t even notice when you’re dragged to your cell. Although the appearance isn’t great (fizzy disappearing head, no lacing), the aroma, flavor, and palate more than make up. I also like the appearance of both the bottled and best by dates – they are blue against the brown bottle and extremely legible, even with a sweating bottle.
