Love you Allagash!

Bottle stamped 2711 18:27

Poured into a St. Bernardus chalice with a small head and moderate lacing. Nice looking hazy golden body with enough activity after the pour. Smell of faint phenols, yeast grape peel, touch of alcohol. As it warms, and toward the end I'm getting a faint pleasant leathery aroma. The taste follows through with the smell profile with a very present-yet-subdued Belgian yeast flavor.

Well layered, complex and delicious. Lots going on in the beer but not too much that I think any person won't appreciate it. If you see this beer on the shelf, do yourself and buy the whole four pack, don't add it to a mixed pack.

A: Pours a cloudy straw yellow in color with heavy amounts of active visible carbonation quickly streaming from the bottom of the glass with some golden yellow + lemon yellow highlights. The beer has a two finger tall dense foamy white head that reduces to a thick film covering the entire surface of the beer with a thick ring at the edges of the glass. Significant amounts of lacing are observed.

S: Moderate aromas of spices (clove + pepper) and Belgian yeast with a lighter aroma of sweet light fruits/stone fruits including peach, apricot, and pear. Hints of banana.

T: Upfront there is a light flavor of slightly grainy malts with moderate flavors of light + stone fruit sweetness with peach, apricot, and pear all present. Light to moderate flavors of banana and moderate flavors of clove + black pepper spices from the yeast as well as the distinctive Belgian yeast flavors (which my wife describes as childhood paste). Minimal amounts of bitterness in the finish which fades quickly.

M: Just shy of medium bodied with moderate amounts of carbonation. Slightly creamy upfront with light to moderate amounts of dryness in the finish.

O: This is a very nice example of a Tripel and is a very easy to drink beer though I would recommend slowly sipping on it as it can easily sneak up on you (with the alcohol being very well hidden). Definitely a recommended beer for the style.

Poured from batch #203.

Appearance: Deep yellow almost honey colored with slight amber hues. Nice two to three finger choppy cream colored head that held on and left a nice lace on the glass throughout the drink.

Smell: Yeasty with apricots, hints of cherries, earthy tones, hints of citrus. All and all very complex in the nose.

Taste: Quick hit of sweetness upfront, followed by a complex mix of fruit, heavy apricot and strange plum like flavors. Followed up quickly by yeasty earth tones and just the slightest hop kick. Clean finish, lingering just long enough to make you want another taste. Slight alcohol warming in the finish.

Mouthfeel: Light to medium carbonation, easy drinking especially for a tripel. Smooth and enjoyable.

Overall: One of the best tripels I've ever tried. Really look forward to trying future batches of this one to see if and how it changes.
