Bottled 1/23/2012. Picked the bottle up at the brewery on 6-8-13. Poured in a snifter, the beer is a rose-tinged pink coloring, almost like a dark grapefruit juice, with no head. Huge pop when the cork popped on this one, and tart cherry aromas came out in abundance on the pour. Aromas of subtle cherry sweet and rich on a tart and slightly citrusy backbone. Some funky sour highlights in the nose, also. Flavors are very rich, with an almost floral backbone, that deliver a dark roasted quality at the end of the palate, with woody and earthy tones. In between, there is a rich, dark cherry sweetness that starts in a bold blast that slowly subsides as it washes over the palate. This beer is a bit of a rollercoaster for the taste buds. Tart cherry and slightly acidic characteristics slowly build as you drink. The aftertaste is tangy and tart, with a sweet undertone. Dry, slightly effervescent and sour finish. Very tasty!

Poured from a bottle dated Marc, 6, 2014. The beer pours a hazy light red color or perhaps an amberish red? It has no head whatsoever and is pleasantly carbonated. The nose is perhaps a little bit boozy on the back end. The initial smell is ripe, sweet smelling cherries with some alcohol bite.
The taste is a real shocker, this beer is S.O.U.R. This is easly a 10/10 on my sour scale. Probably the sourest I have ever had. The inital hit is light fruity sour but this quickly fades as a lactic punch of acid comes in immediately after. This acidity lingers on the palate for a long time. The actual cherry flavor is fairly mute. I get a decent cherry hit with even a hint of sweetness right up front, but then the sourness comes in. For a lambic, this is not terribly funky, just really acidic and sour.
I think this beer would be improved if it was a little less boozy, the alc. content is shockingly high and I think it really prevents this beer from becoming extraordinary.
