5 words to describe it: Chamomile, Pepper, Pears, Honey, Crisp
Paired it with: Fried pickles, and also pickled green beans, jalapenos, and spears. To be honest, I gave myself a vinegar burn on the roof of my mouth from eating so many pickles and drinking such a boozy beer. SORRY, me.
Should have paired it with: It went well with fried pickles because it cut the heaviness; would also be good with a spicy curry or a strong cheese plate (as an appetizer as opposed to as a dessert)
Drink it if you like: Belgian Blondes and you want a more exciting life; grassy IPAs and you want something more polite; Sauvignon Blanc

Growler filled at DeCicco's Brewster, NY during their Allagash event .
Pours near clear, dull yellowy amber, under a lasting fluffy off white head. Leaves more then ample spots and strands of lacing and a tiny bubble film.
Pepper, yeast and ripe fruits on the nose.
Tasty tripel thats on the hoppy side. Nice amounts of more ripe fruits, moderate pepper, lime and Belgian yeast notes all the way through. Dry finish. Real nice Americanized version of the style.
Happy to get to try this on draft.

A: pours a clear golden yellow with a finger of white head that fades into a thin layer with a little lacing.
S: Belgian spices and candy sugar up front followed by spicy, lemony, and herbal hop aromas.
T: spices here as well followed by sweet breads. The hops kick in with grassy, herbal, peppery flavors. The finish is slightly bitter.
M: medium-light body with lowish carbonation, this beer doesn't have too thick of a body but is a bit watery.
O: a pretty decent hoppy tripel overall. It's main flaw is being under-attenuated, but otherwise is good.
