LOOK: Hazed amber, great head retention

SMELL: Peppery, estery, dragonfruit, creamy, yeast, dried grass, herbal

TASTE: Intensely crisp, spicy, alcohol, slightly buttery, earthy, herbal, nutty yeast, grassy, ripe exotic fruit, parsley, shortbread, faint medicinal; slick, drying finish

So very raw—not lacking in maturity, but more just raw, and it works. It’s not as traditional, more of a modern version here. The aggressive esters do take a toll on this one being drinkable, so you’re better off sharing the bottle between a few people. A lot more fun for tastings and food pairings than on its own.

Happy to see this at the store the other day.

A: Pours a hazy dark orange color, rather dark for a saison, with a large, billowy, white head on top. Pretty good retention, last for most of the time it took to drink my glass. Lacing forms briefly when the beer hits the sides, but is gone rather quickly.

S: A good amount going on here, some pepper, clove, and banana, but there is a really strong floral/citrus hop presence as well. A little bit of bready malt.

T: Some more banana and a little white pepper, there is a little bit of hay/straw. The floral component in the aroma, not very present in the flavor profile. Some biscuit/bready malt comes through as well.

M: Medium bodied with medium carbonation. Slight warming from the abv, but not hot when drinking it.

O: A pretty good saison. Happy to see Dominion branching out, and look forward to what they come out with next.

Bottle: Poured a dirty light amber color ale with a large foamy head with good retention and some pretty good lacing. Aroma of rustic malt ester and some solid Belgian floral malt is quite interesting. Taste is a good mix between some rustic ester with some floral Belgian malt and a light spicy yeast finish. Body is quite full with good carbonation and no apparent alcohol. Nicely brewed and something I quite enjoyed.

Bomber type bottle.

Pour is orange amber with a hard, frothy head. Very effevescent. It dissipated rather quickly. Nose of apples, barnyard and yeast. Over-ripe apples.

Carbonic feel on entry, spritzy, full maltiness. Flavors of fresh cut apples, hint of cinammon, complex yeast flavors. More of french farmhouse style. A mix of Bier de Garde and Saison. I love the look, feel and flavor of this beer. Goes in it's own direction at times, but firmly following the style still.

Very well done. I'd like more americna breweries to take up the nuance of this style which Dominion has done with the rocky, hard carbonation and yeast which provides a bit of complexity.
