Notes/Commercial Description:
Our Oud Bruin is firmly in the East Flanders tradition. We used American 2-row barley and German melanoidin malt (for red color) as well as maize (to lighten the body). The wort was simmered in the kettle for 24 hours and then hopped lightly with English Kent Goldings for balance.

We fermented with a Flemish blend of yeast and bacteria cultures, including lactobacillus, pediococcus, and brettanomyces. It took six months at cellar temperature for the culture to achieve the style’s characteristic quenching sourness. Finally, we bottle-conditioned the beer according to the “methode champenoise,” so it, too, can be laid down, to be brought out when it can be truly enjoyed.

Amazing ! Dark in color, a deep copper with reddish hues. Clear, yet thick. No haze, no floaties, just deep rich color. A decent foam head that fades a little quickly, but leaves a trace of lacing. The malt aroma is great, sweet, with very mild hops aroma. Flavor is rich and malty, some darker grain, good hop balance - more would destroy this beer. Almost has a creamy element to it. Mouthfeel is smooth with good texture. No bite, carbonation is perfect. I love this beer ! This brewery never fails to impress. The beer has a good alc content without any of the "winey" off flavors, twang or sourness. I could drink this all night -might regret it later with the 6% and 22oz bottles, but damn it is good !

Purchased from Poplar Wine & Spirits in Casper for US$10.50.

Pours from 32oz waxed and sealed swing top bottle (bottled Apr 22 3007) a cloudy deep amber-brown with a smallish head of foam but it sticks around for the entire session and it has some lacing.

The smell is big on the yeast! I'm also getting some sourness and some fruit but the yeast smell is strong and oh.... the sour notes are taking center stage now and I can't wait to take a sip.


The taste is really fruity up front. There's a definite sour flavour that dominates the intial taste but that is offset by some good malty caramel sweetness and it has a lot of earthy tones in the background that become more noticeable as I take further sips. It's an unusual mixture of flavours but I find that it works for *my* taste buds and I find myself taking more and more sips. Pretty drinkable in my book.

Further sips in and the sourness is still there but the malt presence balances out the brew nicely. I think Grand Teton has done a nice job within the style. I'm glad I bought 2 botttles for myself and 1 for a trade to another fan of the Grand Teton's Cellar Reserve series. This one is, imho, another well crafted brew. Thanks Grand Teton!

Beer review from BA Mag Aug 2007.

Grand Teton Brewing went for authenticity and fermented this beer with both yeast and bacteria cultures for six months at cellar temperature.

Pours a bright tawny-colored brew with heavy tinges of red. The clarity is fine and a thin lace has no problem remaining for the duration. Mildly tart aroma with cellar funk and earthy, medicinal and grassy aromas. Creamy medium body with just enough crispness from the carbonation. The malt character unfolds with layers of complexities as it warms. The tartness is very delicate, mostly dissipating toward the end. Malty, with bready overtones. Woody hop flavors help to balance, while faint suggestions of cherry juice, musty yeast and a ghostlike lemon peel arise. Finishes quite dry and refreshing.

We really dig how the tartness is mellow and not in-your-face like other Oud Bruins we've tried. This beer is proof that some American brewers can brew just as well as their Belgian counterparts. A plate of beer-braised spareribs would do the trick for a pairing.

1L bottle with waxed swing top, dated 4/11/2007. Pours a ruby red-brown with a very little head that quickly disappears.

The aroma is tart/sour fruits and oak with some smoky charcoal and leather.

The flavor is very washed out and watery. There is some cola and sweet and tart fruits, with a slight washed out bitterness at the end. The mouthfeel is pretty thick and slightly syrupy which is weird considering how watery it tastes. There is almost no carbonation.

Overall, it's a very washed out and watery flemish. Even if the flavors were bolder, I think they would not compare well to other sour beers. definitely not worth the $12. It's not offensive, there's just not much there.

On tap extreme pizza poured into stemmed glass.
Looks hazy,medium-dark brown close to a amber yet more tones walnut..smell is subdued malt and some fruity essence such as strawberry, raspberry and lil chocolate in there too..taste is much more complex than the smell. Taste is funky, and definate complex malt profile, medium sour notes, light, refreshing..some carmel and chocolate undertoneszzvery low hop character, yet slight presence. Funky, yet not too spicy..pair great with pizza, brie in puff- pastry, and this beer shall compliment dishes that are bready (pizza, pasta).. This beer needs a heavier or chewy-er food to compliment it's lightness and juicy/funky character..muscles with this beer in the stock..butter, cheese, or bread with this one should do..

A sour brown ale that is neither sour nor brown... oh boy.

Pours an auburn-orange color, fairly hazy with a stray bubble or two rising upwards. A finger of tan foam rapidly fades to a thin laceless skim on the surface. Soon after there's no foam at all.

Smell is vague, nothing really stands out, there are some vaguely Belgian spice esters that would be more appropriate in a Dubbel or similar BSDA trappist style. Nutmeg or pumpkin pie spice seems to be out of place. Not offensive,though it just "ain't right".

Taste is similarly ill-defined, and more in line with a Dubbel or BSDA. Not sour, not even tart. Unfortunately 6 months of cellar conditioning has done very little. A vague tangy bitterness and some nutmeg, toasted malt. A little sweet at first then dry and oddly bitter in the aftertaste. Definitely hasn't seen a barrel or even oak chips. This beer was a waste of money and a sad, distant facsimile of an otherwise unique style. Out of my 40 Oud Bruin reviews, this appears to be the third worst (after Bourgone des Flanders and Rivertown Pestilence).

2013 Vintage into a tulip glass:

I am really impressed with the appearance on this beer. A moderately aggressive pour down the middle of the glass produced a three finger fluffy off white head. It has slowly dissipated leaving half a finger of tight bubbles. Carbonation is streaming off the bottom of the glass. Color is a cloudy burnt orange at the edges of the glass becoming a deeper amber in the center. The nose is a little bland with Belgian yeast esters taking over most of the aroma. A slight caramel malty sweetness is detected as well as a mineral earthyness. There is maybe a tiny hint of funk. Taste is much better than the aroma. Up front I get caramel sweetness and a traditional Belgian ale yeast taste. In the middle of the palate I start to get the slightly sour notes. My mouth puckers for a moment, but on the back end it is taken over by an earthy bitterness that is a little overwhelming. Dry finish. I get where other reviewers have been coming from. I would have really liked the earthy bitterness to at the back end to have been replaced by a puckering sourness to complement the caramel sweetness. That said, a highly enjoyable and drinkable ale and perhaps serves as a good "introduction" to sour beers.

1ltr waxed flip-top from the cellar.. the wax is always a bitch on these, but they're worth it. That being said, the cellaring has allowed the little yeasties and bacteria to go to work in a big way... pop the cap on this while it is VERY cold and then allow it to warm up... Alot of my kitchen and myself was sprayed with a high velocity mist of beer.

3 finger head that left very nice lacing atop a hazy amber brew.

Aroma is funky sweet and sour.. reminds me of a sweeter smelling Orval.. spicy.

Flavor begins with a spicy slightly sweet malty blast and trails into some nice bret mid palate and finish is fairly dry with a lingering bret and mild hop flavor. Green apples and a faint oakiness. Light/medium palate with only a touch of carbonation.

Aging this has done wonders for it.. only similar to the original and 10x the complexity.. much much better with some time in the bottle... I have a couple more in the cellar, and am going to try and find the last couple that may be in town.

750ml into a tulip.

A: Pours a mild reddish brown with a large off-white head.

S: Strawberries, toasted grain, lightly bacterial.

T: Red grapes, caramel, light hop bitterness, bready.

M: Medium-bodied with active carbonation.

O: Malty without any acidity really. Grand Teton seems to have some major problems whenever they use souring yeast/bacteria, as the beers I've tried that are advertised as sour never are.

2013 bottled purchased in Jackson, Wyoming in late July. Shared with several friends this past weekend.

A- Swampy brown pour to four glasses with a small white head that lasts for only a few moments. A tiny ring remains just about disappearing over time. Lacing is not a thing with this one.

S- The age can be felt already after one year and it does not really hint anything Oud Bruin to me. Musty dank caramel, old spices, apples and slight yeast bread.

T- Just about mimics the nose with a lot of red, very lightly tart apples opening up more. Apple skins, stale caramel, slightest bit of Belgian yeast spice and bread, biscuit and raisin.

MF- Medium bodied with slick and lightly foamy consistency. Carbonation is low-medium and overall it is lacking texture a bit.

I dunno. It's not an Oud bruin. Tastes like a stale amber. I still absolutely love the label.

1 quart, 1.8 oz. bottle, bottle-conditioned; waxed flip-top bottle. Picture of a large bear on bottle. Attached tag has a description and a bottling date of April 13, 2007. (Tried just over two months later.)

Poured into tulip glass:

Pours deep ruby/mahogany wih a large off-white head that settles to a lasting cover and leaves a large dose of lacing on the glass.

The smell is of berry-like fruitiness wiht a touch of vinegar. Malty sweetness really stands out, followed by a growing, but restrained, sourness.

The taste is of sweet carmelized graininess. Lactic sourness balances out the sweetness with quite a bit of East Kent Golding hops giving it an earthy, bitter undertone. Sweet malt and corn linger through the finish. Alcohol is well-covered.

Light bodied and smooth. Not quite as pungent or sour as expected, and flavors hang on, but not quite as long as I would like.

An interesting one - I was going to say to sip on, and rate drinkability a bit lower, but it vanishes fairly quickly thanks to a nice carbonation level and general smoothness. Still, I don't know if it's a prime example of the style - a certain corn-adjunct characteristic, while maybe lightening it - makes it rather sweet and throws it "off" just a bit. I don't know, but maybe they could have done something else - whatever. It's decent and well-worth trying. I could see it pairing well enough with certain meats and fish.
