In Berliner Weisse we think we’ve found the perfect style for our summer Cellar Reserve. This north German wheat beer is traditionally brewed and released very fresh. It has a light body from the wheat and refreshingly tart acidity that make it a perfect summer thirst-quencher. Its lemony tartness is provided by a secondary fermentation with lactobacillus, the same microorganism that’s responsible for yogurt’s tang. That tartness increases and improves with age, so the people of Berlin are known to buy extra bottles to bury in their gardens for two years or more.

As usual with our Cellar Reserves, we’ve taken a traditional style and added our own twist. In this case we’ve tripled the strength over the traditional beer, which should only increase its aging potential. For the primary fermentation we used a traditional Bavarian hefeweizen yeast that produces soft notes of banana and clove. We followed that with lactobacillus and six months in conditioning to create a complex fruity acidity that compliments the soft sweet malt tones and a unique ale that is both fulfilling and refreshing.

Bottle from Boise Co-op.Tart and slightly sour, hazy golden body with tiniest ring of a head. Aroma is floral, and yeasty like a Belgian ale. More tartness in the finish.

Ahh lactobacillus my good friend. Kombuchea, yogurt, kefir, and now this beer.

Malt then sour then hops. Thin body lingering bubbles on the tongue

12oz bottle (06/30/15 bottled on date) into a pint glass.
Hazy straw colored body with no head.
Aroma is clearly sour.
Taste is lemony yeast and some sour. If I didn't know better, I'd think this was a cider. It's very refreshing, dry, and no hint of the higher alchohol. That could be trouble.

Served From 12 oz Bottle

A — Pours a hazy deep banana yellow hue into the glass, a cream colored head forms but settles and leaves bits of lacing behind, poured this very slowly but it is still super hazy and somewhat unappealing.

S — Lemon, estery, banana, yeast, spice, clove, little to no tartness or acidity here, a bit bizarre.

T — Unfortunately like the nose, this is very wheaty, yeasty, and full of esters, no real tartness or acidity, lacks balance and does not adhere to the style guidelines for this beer.

M — Medium-Full bodied with an acrid lingering finish.

O — OK overall, just not what I would call a Berliner, not the best offering from Grand Teton.

Too hazy, looks like a hefe, not a berliner. Nice 1/2" of white head though. Smell was atrocious, all kinds of belgian hefe clove and banana. Eeee gad.

Taste, way too much alcohol, milt tartness destroyed by spice cabinet. Mouthfeel sucks, not enough wheat to carry all the clove.

Terrible representation of style, and terrible otherwise.

I really can't believe that this beer hasn't received a better report yet for the Berliner Weisse style it presents despite the fact that it is 7.5% ABV...

Poured from a 12 oz into a tall Weizen glass. Bottle date 6/30/15.
L: true to style golden straw. Nearly no head. No lacing.
S: sour. Fermented grass. Astringent, acidly. Empty bottle had a pleasant sweet aroma.
T: Sour patch candy. Slight maltyness as it warms, kind of.
F: sour beer. Some bite to the tongue.
O: I tried to be fair, but I just don't like sour beers at all.
