Each year the promise of spring was confirmed as the first keg of Schell's Bock rolled onto waiting delivery wagons. And since 1860, Schell's Bock has continued in the true German tradition. Completely reformulated for 2009, Schell's Bock has replaced Caramel Bock as our late winter seasonal. Brewed with a harmonious blend of 10 different types of malt and noble hops, Schell's Bock is fermented slowly, and then lagered for an extended period of time to ensure a smooth finish. Perfect for passing even the coldest winter day.

This dark amber colored beer sports a robust malt character.

Schell's Bock is a delicious interpretation of the style focused on toasted malts, caramelized sugar and general caramel flavor, and a strong incorporation of toasted nut flavor. The blend of these elements creates a rich bock with plenty of depth, which generally satisfies any desire for a brew on the darker end of the color or taste spectrum.

Pours a tall (>3cm), medium-tan colored head made up of small and medium bubbles. Resultant look is frothy and something like pancake batter. Declines over about two minutes to a ring around the glass with some islands of foam, leaving no lacing on sides of glass. Body is a dark ruby color out of light, brighter and clean-looking ruby when in the sun. Transparent, with minimal carbonation percolating through.

Aroma features rich caramel-type malts with mild diacetyl notes and another variety that imparts a noticeable nuttiness to the mix. Raisin and dried fig scents noticeable. Sweet, rich, and deep, somewhat like a hearty, baked nut cookie with plenty of caramelized sugars.

Taste opens with caramelized sugar and toasted malt sweetness, gradually blending into mellow caramel and toasted nut flavors. Very low hop presence, just a touch of mild spiciness is notable during mid-palate. Caramel, toasted malt, and nut flavors continue in rich, deep intensity past mid-palate, a slow coalescence of them into an interesting "bit o' honey" candy taste in the latter half, particularly notable during the fade out and close. I find this rather enjoyable. Aftertaste is rich, of toasted nuts and caramelized sugars.

Beer is medium to medium-heavy bodied with slightly below medium-level carbonation. Resultant mouthfeel is clean and somewhat crisp, generally smooth flowing. The lower carbonation actually fits this beer, as it is something to roll around on the palate and not drink quickly.

Sampling right now on 7/7/14. Bottle chilled down to 36 degrees F in my beer cooler and poured in to a tulip glass.

Pours a deep amber in color with a good finger of a off-white head that settles back down to just along the sides of the glass. Some spotty lacing is seen. The aroma is of sweet malts and caramel for the most part. The taste has even more going on with the sweet & caramel malts coming together nicely with a hint of spice. Goes down very easy with no bitter or harsh aftertaste at all. Perfect carbonation. A great brew!

Pours a HUGE, dense and soapy, tan-hued head that has impressive persistence and laces readily. Sweet malt aroma with a slightly spicy hoppiness. Crystal clear burnt umber. Sweet malt, toasted malt, warming booze, and a faint hoppiness in the background. Moves into a low-medium hoppiness, gets a little spicy, even. Then the finish is toasted malt and faint biscuit.

This is pretty nice, it's very toasted-malt-forward, and I like that. Slight hop spice, and not too sweet. And, of course, it has that velvety smooth German lager mouthfeel.
