Bottle from the brewery. Served in my 18th Street tasting snifter.
A - A finger-plus of white foam settles to a solid cap and thick, chunky collar. Hazed golden orange body.
S - Big Mosaic and Simcoe character here; very tropical and berry-heavy, with notes of lemon and pine. Malt is a bit more apparent, and lends a honeyed sweetness that is a bit more intense than Burdock's other IPAs.
T - The taste is a bit of a step back; fairly bitter, with an aspirin-like astringency in the finish. I would have guessed Galaxy hops from the flavor. Mid-palate is fairly heavy on grapefruit and lemon pith, with far less juicy sweetness than the aroma. Solid, but disappointing after the aroma.
M - Juicy, with soft, creamy, but active carbonation. Dry finish, with lingering oily hops on the palate. Perhaps a hint of alcohol.
D - A bit of step back from IPA V, but still among the better hoppy brews available in Toronto. Burdock is quickly threatening Great Lakes as the hophead's choice in the Six. I've had a few bottles and would happily drink this again.

500ml bottle purchased at the bottleshop. Description on the website reads: "Sixth iteration of our IPA series with Vermont Ale Yeast/ Juicy and Tropical as always/ Dry-hopped with Simcoe, Cascade & Mosaic/ Clean finish and smooth mouthfeel as always". Served in a nonic pint.
Pours a slightly hazy light amber pale ale colour. Two inches of really foamy head. Lots of lacing.
Lots of ripe citrus fruit aroma. Lime and grapefruit. Nice hop profile.
Not very bitter. Quite a lot of fruity hop flavours. Not only the citrus from the nose, but also some beautiful ripe apricot, berry, and peach. I'm also getting way too much of that Simcoe onion-iness for my liking.
Smooth and easy-drinking. There's a lingering bitter aftertaste but this isn't a palate-wrecker by any stretch.
Another nice IPA from Burdock. Like V before it, this definitely falls in the "East Coast" camp in terms of the hop profile. Lots of fruity hop aromas and flavours, which are nicely complemented by the restrained malt bill and Vermont yeast strain. I'd like to see them cut out the Simcoe and just go with all full-bore fruity hops to take their experimentation with this style to its logical conclusion.
