appearance: a warm, ruby pink brown body with a cappuccino foam head the is medium in size at the start and recedes to a thin cover. great lacing on the glass. has pretty good retention throughout. moderate to low carbonation.
aroma: classically malty with plum/fig undertones. typical belgian smell, but a little muted. a slight grassines from the hops. a little alcohol back to it. too muted and not all that complex.
taste: again a little muted. there's some malt in there. i keep thinking of burgundy. not too bitter from the hops. almost a dry sort of oakiness to it. fairly clean. leaves a slight alcohol presence and a slightly bitter finish. i had to work really hard with this beer. it's like there were some fruity and malty flavors in there but they were clouded. i get some red wine. just not punchy.
mouthfeel: good. lively carbonation bite and smooth medium body make this beer relatively fun to drink apart from the taste being a little boring. a little watery, but nonetheless a good mouthfeel.
drinkability: not very heavy at all, seeing as its a dubbel and a hefty 8.5% ABV. the taste is just boring to me, there's not enough complexity and interplay between the malty sweetness and the hop bitterness. it's a decent beer, just not anything thing that i would recommend to anybody to try.
notes: this was a little bit of a disappointment. i got this beer to celebrate the end of the semester with and it just didn't have that belgian flair to it that made my nose and my taste buds go "wow, this has a lot of freakin flavor!" I look forward to trying the hennepin though, since people seem to be more impressed with that beer. I've heard good things about this brewery, I just hope that they're true.

Notes from after the fact. I just plain didn't jive with this beer. The licorice ruined it for me. This beer came off as tasting like root vegetables with potato and turnip. The sweetness of the chocolate malt flavor and the twang of the licorice with vegetable notes just didn't go together. Licorice and anise spice lingered long after. There were other redeeming qualities like a great body and a nice porter-like woodiness that I appreciated, but I couldn't get past the bad parts. And I'm even a fan of licorice an anise, just not in my beer apparently.
