Poured from the bottle into a goblet. Immediately upon cracking the seal, the familiar scent of candied sugar and belgian yeast started to permeate the kitchen. Smell intensifies in the glass and dark fruit begins to come through, where this dark, honey brown beer pours a 1-finger, tan head. The head becomes a brilliant patchwork of bubbles of different sizes, with large pockets of bubbles forming where carbonation streams upwards. Head stays intact all the way down the glas and leaves behind a small bond of lacing on the bottom. Candied caramel and sugar upfront. The body is a delicious blend of candied plums, caramel and musty belgian yeast. A bit of light earthy hops as the beer passes over the back of the tongue, but still candied brown sugar is the dominant flavor. Rum, plum, and dark brown sugar finish. The body is medium bodied yet fairly soft and creamy. It suites the beer very well.

I feel like this beer must be the benchmark for all american beer companies seeking to brew a traditional belgian dubbel. Everything about this beer is practically spot on from the beautiful honey brown color and robust head to the complex flavor and delicate mouthfeel. I would definitely buy this again.
