The ominous Three-Eyed Raven inspired us to brew a Dark Saison ale, a hybrid style open to brewer’s imagination. In the end it is neither a pure saison nor your typical dark beer, but instead a delectable blend that both deceives and thrills the senses.

Three-Eyed Raven makes for perfect season premiere pairing.

Poured into a pint glass.

Appearance: Very dark brown, almost pitch black. Super thick and sticky tan head.

Smell: Not very strong, some malt and yeast.

Taste: Deceiving from the look. Sweet from a fruit with some grassiness. A hint of malt and cocoa, but not a lot. Yeast at the end.

Mouthfeel: Smooth and drinkable.

Overall: A interesting "dark saison". Looks like a porter or stout, but taste more like a saison. Very good nonetheless.

Bottled 5/16/15; drank 5/19/21 @ the Yarchives.

Opaque red/orange rust appearance.

An even pour yielded a big khaki head; a thick curtain of lace.

Rye spice, cabernet sauvignon & faint clove notes in the nose.

Medium mouthfeel.

Rye spice, cabernet sauvignon, mild clove & faint black pepper flavors.

Even after 6 years, this was spritely & interesting. I'd have another!

Look: Pitch black with one finger of head. Retention of about a minute.

Smell: Milk chocolate and strawberries.

Taste: Chocolate and berries. Very little bitterness. Mildly dry finish.

Mouthfeel: Slightly thin, with good carbonation.

Overall: A strong, sweet beer but little connection to saisons.

Poured from a cork'n'cage bomber into a Dogfish head tulip

L: Nearly clear dark, dark chocolate brown pour. Thick foamy white head... crazy retention and great lacing.

S: Dark fruit... yeast, sweetness, and spice.

T/F: An odd mix of flavors that work really well together. Toasted grains... Belgian yeast/phenols, dark fruit with fig, plum, and raisin... brown sugar, herbal hops... earthy, spicy, and a bit of toffee. Not quite a saison and not quite a dark beer, but drawing from both. Hopping for balance... zesty carbonation. Medium to light bodied.

O: An outstanding and complex beer. Really enjoyed this and a year or two in the cellar did it no disservice. Great brew!

May 10th, 2015 - True to theme, we enjoyed this beer on the eve of a new episode of Game of Thrones, satisfying our Millennial old gods and having a meaty drink to go with the weighty plot lines. The scent reminds me a lot of a Belgian Strong Ale, with its rich veins of dark fruits, anise, plum, fig and a nice topping of grain. The mouthfeel is foamy, and the flavor is semi-sweet, with a touch of fennel and some Coca-cola. It's a nice balance, like something I might pull from an apothecary or a Maester?

i was lucky to have a bottle of this shared with my by my brothers wifes father, saved for the holidays, an honor indeed to share this with family! a really nice dark saison, with a really developed belgian yeast character full of winter mulling type spice nuance, anise and allspice and a little brown sugar. there is gorgeous complexity here, lots of specialty type belgian malts, that rich abbey complexion, semisweet, but also with a roasted element and a bread crust warmth and heartiness. subtle licorice and tobacco notes, raisin and dried fruits, port wine, clove, rich body, belgian carbonation explosiveness, a long layered finish with balance. this really is like the essence of late fall, its hearty and comforting, rustic but refined as well, something i have come to expect from ommegang, and probably the best of these game of thrones beers i have had so far. this is almost timeless immediately, something that would be a fine addition to their year round lineup. i think the abv is right on too, it could be 10% abv, but it would lose some of the drinkability. this is really dialed in beer, perfect this time of year, and a joy to share with folks i dont get to see nearly enough of!
